As early as the late 19th century, the love of this family for great led to the purchase of plots in Grands Crus and Premiers Crus.

Nowadays, proprietor of parcels in 5 of the Grands Crus, including a monopole, the domaine works many plots within the of Petit Chablis, Chablis and Premiers Crus, in full harmony with the environment.

The most prestigious of its wines is the monopole Chablis Grand des Hospices dans Les Clos, which was acquired by the Moreau family in 1904.

Louis Moreau, who has been head of the domaine since 1994, produces wines with a unique style, combining minerality, fineness, elegance and purity. Louis represents the sixth generation of the Moreau family linked to the Chablis des- tiny since 1814. He has been head of the family business since 1994, succeeding to his father Jean-Jacques who had also created the negociant house J.Moreau & Fils en the 70’s. This com- pany was sold years ago and has nothing to do with the Moreau family and vineyard since then.

Louis studied at Fresno State University California, where he obtained a degree in -viti- culture. Afterwards, he worked for various American and French in California, before coming back to take care of the family .

Louis places great emphasis on cultivating the with great respect for the environment. He always seeks for the most natural solution in order to ensure the quality of his and . An important of this work is done to ensure that the can grow properly, struggling by themselves against external pressures. Moreover, the results of such methods are a total control of the .

Louis collaborates closely in the area of nursery research with the most important domains in with a view to improving the quality of his vines. He particularly focuses his research on massal selections of the most robust vine plants in “Vieilles Vignes” of the domain (mainly in Premiers Crus and Grands Crus) in order to make the most of all the .

Tasting Notes: This subtle and fine wine has a very aromatic bouquet. We can notice hints of white , such as acacia and rose petals, along with a dis- creet aroma. It is very round in the mouth, with a hint of acidity that allows it to retain its minerality.

The whole Chablis area is spread on a total superficy of 4.800 hectares (10.560 acres), the Grands Crus appellation represents only a little more than 100 hectares (220 acres) within this area.

The term of «Grand Cru» appeared for the first time in a decree dated 1935, with the first delimitation of 5 Grands Crus. This decree was completed in 1938 with its extension to Bougros and Preuses.

A large part of these were planted afer the First World War.

Facing Chablis, these famous Grands Crus stretch themselves in the right back of the river . Their names are: Bougros, Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos, Blanchot.

The Seven Grands Crus are planted on a Kimmeridgian soil, more or less rocky, which al- lows every to produce different wines, due to their soil and sun exposure. After 2004, the emphasis was put towards sustainable viticulture and converting some of the vineyards into organic viticulture. The first step was to eliminate all possible chemical products not directly necessary for the vineyards, using only organic amendment, reduction of 50% in the use of weed killer and stop- ping the use of insecticide. Amendment is put in a parcel only if necessary and based on the soil samples result done during the year.

Chablis Grands Crus are fully under organic viticulture, with a close attention to the and the type of natural products used. We make a mix between organic products and natural sub- stances (derived from plants) in order to nourish only the vine and to make it more resistant against predators and diseases. Also, more work is done in those vineyards on , num- ber of buds, repartition of the amount of grapes and trellising.

All the Grands Crus have gone under a program of being fully “enherbés” in order to install a natural competition in the vineyard between the vine and the grass limiting the production.

Since 2004, we have been working with a nursery, selecting our cuttings issued from the Grands Crus vineyards to duplicate our vine vegetal material and securing the future quality of the vines to be replanted.

In addition, we have invested in a software program in order to regroup and trace everything that is done in the vineyards, parcel per parcel from product application, man and mechanical intervention.

Louis Moreau is member of the Union des Grands Crus de Chablis since its crea- tion, believing that the Association is an important tool to communicate on the quality of the Grands Crus wines produced by its members and guarantees this quality through the Charter established and applied by its partners.
