Chinese Fried Rice with Shrimp & Frankfurters
CHINESE FRIED RICE WITH SHRIMP & FRANKFURTERS DIFFICULTY: Easy | SERVES: 4 | READY IN: 25 minutes The flavour of this easy Chinese fried rice is similar to what you get from a takeaway shop. I’ve added some extra veggies and brown rice for better nutrition, and frankfurters for their yummy taste! 1. PREPARE INGREDIENTS Microwave rice according to instructions on the packet. Set aside. Place veggies in a microwave safe bowl and microwave until just defrosted. 2. Chop broccoli and frankfurters into 1-2cm pieces. Crush garlic. Thinly slice spring onion. Whisk together soy sauce, oyster sauce and sesame oil. 3. COOK FRIED RICE Heat 1/2 Tbsp peanut oil over a high heat in a large wok. Crack eggs into the wok and cook, stirring rapidly, until scrambled (this should only take a few seconds). Remove from the wok onto a large plate. 4. Add another 1/2 Tbsp oil to the pan together with the frankfurters and shrimps. Cook until frankfurters are browned and shrimp are warmed through, then set aside with the eggs. 5. Add the remaining 1/2 Tbsp peanut oil, broccoli, garlic and ginger to the wok. Stir fry for 2 minutes. Add the cooking wine and sugar. Cook for 1 minute. 6. Stir in the mixed veggies. Add rice and soy sauce mixture. Stir to combine, then stir through frankfurters, egg and half the spring onion. Stir fry for 2 minutes. 7. SERVE Dish out portions into individual bowls and sprinkle FRIED RICE 2 Tbsp soy sauce with remaining spring onions. 1 1/2 Tbsp oyster sauce 2 x 250g microwave 1 tsp sesame oil pouches brown rice 1 1/2 Tbsp peanut oil (2 x 8.8oz) 2 eggs 1 1/2 cups frozen mixed 200g frozen shrimps (7oz) vegetables (225g) 1 1/2 tsp finely grated 1 broccoli ginger 4 frankfurters (250g / 1 1/2 Tbsp Chinese 8.8oz) cooking wine 2 cloves garlic 1/2 tsp sugar 3 spring onions WINE MATCH: An un-oaked Chardonnay. -

和 食 Traditional Dietary Cultures of the Japanese Itadaki-masu WASHOKU - cultures that should be preserved What exactly is WASHOKU? Maybe even Japanese people haven’t thought seriously about it very much. Typical washoku at home is usually comprised of cooked rice, miso soup, some main and side dishes and pickles. A set menu of grilled fish at a downtown diner is also a type of washoku. Recipes using cooked rice as the main ingredient such as curry and rice or sushi should also be considered as a type of washoku. Of course, washoku includes some noodle and mochi dishes. The world of traditional washoku is extensive. In the first place, the term WASHOKU does not refer solely to a dish or a cuisine. For instance, let’s take a look at osechi- ryori, a set of traditional dishes for New Year. The dishes are prepared to celebrate the coming of the new year, and with a wish to be able to spend the coming year soundly and happily. In other words, the religion and the mindset of Japanese people are expressed in osechi-ryori, otoso (rice wine for New Year) and ozohni (soup with mochi), as well as the ambience of the people sitting around the table with these dishes. Food culture has been developed with the background of the natural environment surrounding people and culture that is unique to the country or the region. I. PENDAHULUAN I.I Latar Belakang Kabupaten Pasaman merupakan daerah penghasil ikan air tawar terbesar di Provinsi Sumatera Barat. Salah satu daerah penyumbang sektor perikanan di Pasaman adalah Kecamatan Rao. Luas kolam ikan petani di Kecamatan Rao +4.282 Ha dengan produksi perikanan terbesar tahun 2015 adalah perikanan budidaya di kolam yaitu 11.571,64 ton dan perikanan budidaya di sungai dengan total produksi sebesar 380,6 ton. Luas Kecamatan Rao sendiri +236,18 Km2 dan sebagian besar mata pencaharian penduduknya adalah beternak ikan (BPS, 2016). Ikan Betutu (Oxyeleotris marmorata) merupakan salah satu komoditas ikan air tawar yang populasinya besar didaerah Kabupaten Pasaman. Ikan betutu yang dikenal dengan dengan nama lain ikan malas atau ikan bodoh ini pada umumnya kurang diminati masyarakat karena bentuknya yang menyeramkan dan baunya juga amis padahal kandungan gizi ikan betutu ini cukup tinggi. Rendahnya tingkat pemanfaatan ikan tersebut dihadapkan kepada kelayakan ekonomi dan tingginya harga pakan ikan masih berada diatas harga jual. Perlu dilakukan upaya untuk mengoptimalkan pemanfaatan ikan betutu tersebut agar memiliki nilai ekonomis yang lebih tinggi. Ikan betutu diolah menjadi produk baru dengan tetap mempertahankan komposisi gizi yang terkandung didalamnya. Salah satu bentuk usaha yang dapat dilakukan adalah dengan mengolahnya menjadi surimi. Surimi merupakan teknologi pengolahan ikan yang secara tradisional telah digunakan oleh masyarakat Jepang dengan menggunakan peralatan yang sederhana. Saat ini produk surimi secara komersial telah diproduksi secara mekanis. Pabrik surimi dapat ditemukan di beberapa lokasi di Indonesia dan dipasarkan dalam keadaan beku. Surimi dan daging lumat merupakan produk setengah jadi yang dapat diolah menjadi berbagai jenis produk, seperti bakso, sosis, nugget, burger, sate lilit, otak-otak, dan pempek. -
