Email: [email protected] ABSTRACT Favorite snack food is very popular to Yogyakarta's residents, such as cilok, skewered meatballs, and dumplings. The processing and serving processes of these food does not pay attention to hygiene aspects, therefore, it is necessary to monitor the presence or absence of coliform bacteria and enteric pathogens that often cause digestive disorders. A total of 30 samples were collected from each food from different locations. These samples were then enumerated on a CCA medium to grow all types of coliforms and enteric pathogens. The resulted colonies were then selected on SSA, SMAC, and DFI Agar medium to obtain a single isolate, which were biochemically tested until their genus levels were identified using API 20E. Based on the identification results of 30 food samples, the contamination levels obtained were as follows, Escherichia coli (16.6%), Klebsiella pneumoniae (13.3%), Yersinia enterocolitica (13.3%), Pantoea spp (6.6%). ), Aeromonas hydrophila (6.6%), Enterobacter cloacae (6.6%), Serratia marcescens (6.6%), Bordetella / Alcaligenes / Moraxella spp (6.6%), Serratia liquefaciens (3.3%), Proteus mirabilis (3.3%), Shigella spp (3.3%), and Ewingella Americana (3.3%).

Herein is revealed the application of true local culture amid commercialization and modernization, differentiating between the authenticity and that which is out-of-sorts with local identity. The controversy of contextualization, the discussion of what is necessary, and the commodification of traditional food, namely the traditional foods of Riau Malay, to respond to the demand of a global market, are areas of interest in this study, as well as how the traditional foods of Riau Malay may compete with excellence and sustainability in a global market while retaining its authenticity values. The methodology used in this research is qualitative phenomenological; the interviews were carried out from the informants who were cultural figures of Riau Malay, social figures, and business actors in the traditional Riau Malay food industry with resulting evidence that confirms the necessity of heritage value of traditional Riau Malay foods, commodification in the area of globalization, without necessitating any loss of authenticity elements.

Kedai Bajigur Mbak Ika is one of the entrepreneurs who sell traditional Bajigur beverage. In maintaining customer satisfaction, Kedai Bajigur Mbak Ika provides various efforts in improving the quality of its products. This study aims to determine what efforts are given Kedai Bajigur Mbak Ika in creating customer satisfaction. Penenlitian method used is qualitative descriptive method by collecting data through documentation and interview. The interview was conducted at Kedai Bajigur Mbak Ika with the owner of the shop, Mbak Ika along with two buyers. The results of this study indicate that Kedai Bajigur Mbak Ika undertakes such efforts as asking customers' opinions about their products, while maintaining the quality of Bajigur without reducing the basic ingredients, and if the ingredients rise in the market of Kedai Bajigur Mbak Ika will raise the price without reducing the portion. These efforts make Kedai Bajigur Mbak Ika customers remain loyal. Mahasiswa termasuk kelompok yang sering mengonsumsi jajanan. Konsumsi jajanan dengan kadar lemak tinggi dapat meningkatkan risiko penyakit tidak menular seperti hipertensi. Penelitian ini bertujuan untuk mengetahui kadar lemak total pada jajanan yang sering dikonsumsi oleh mahasiswa Fakultas Kedokteran Universitas Brawijaya. Penelitian potong lintang ini dilakukan dengan mengumpulkan 32 sampel jajanan yang dipilih dengan non random sampling. Sampel jajanan ini terdiri dari delapan kelompok yaitu kentang goreng, weci, batagor, siomay, taiwan street snacks, roti bakar, batagor, cilok dan jasuke. Kadar lemak total pada jajanan diukur menggunakan metode proksimat. Hasil uji one way ANOVA menunjukkan ada perbedaan yang bermakna pada delapan kelompok jajanan yang diteliti (p < 0,001). Rerata kadar lemak total tertinggi ditemukan pada kelompok kentang goreng (7,97 g dalam 100 g makanan) dan terendah pada cilok (0,27 g dalam 100 g makanan). Kadar lemak total pada kentang goreng tidak berbeda dengan batagor, weci, dan taiwan street snacks.

Selain kurangnya kapasitas produksi, kedua mitra ingin meningkatkan nilai tambah dari produk olahan ikan yang mereka hasilkan, dengan menjadikan olahan ikan menjadi berbagai produk diantaranya bakso ikan, nugget ikan, kaki naga, keripik kulit dan dawet ikan. Mitra menyatakan bahwa hal ini akan dapat menjadi suatu daya tarik dan keberlanjutan usaha dimasa mendatang. Oleh karena itu dalam kegiatan ini di berikan pelatihan tentang diversifikasi hasil olahan ikan. Pendampingan setelah pelatihan untuk produksi diversifikasi hasil olahan ikan juga dilakukan. Metode penyelesaian yang digunakan pada program ini adalah melakukan evaluasi terhadap hasil pelatihan pendampingan dan membuat modul cara pembuatan masing-masing olahan produk ikan. Hasilnya sekarang kedua mitra dapat membuat produk-produk olahan ikan. Kata kunci : diversifikasi, ikan,mina mas, olahan, dan putri rawa sejati. 1. PENDAHULUAN Desa Asinan berjarak sekitar 8 km dari pusat pemerintahan kecamatan Bawen, berjarak sekitar 25 km dari Ibukota Kabupaten Semarang dan 55 km dari Ibukota Provinsi Jawa Tengah. Secara geografis, Desa Asinan terletak pada ketinggian 500 meter di atas permukaan laut (mdpl), memiliki iklim sedang dengan suhu udara rata-rata 30oC, dan memiliki curah hujan rata- rata 500 – 1000 mm/tahun.

This study aims to determine the financial feasibility of the tamarind turmeric beverage business, determine the added value generated, determine the feasibility of a tamarind turmeric beverage business if there is an increase in operational costs and a decrease in revenue using a sensitivity analysis. Tamarind turmeric beverage business is feasible to run, the Net Present Value result is Rp. 6.144.470 for 300 ml packaging. Internal Rate of Return of 13% for 300 ml packaging and 14% indicates that the rate of return is greater than the specified bank interest rate. Payback Period for 2 years 5 months for 300 ml packaging. The B / C ratio is 1,42 for 300 ml packages. The added value of the business of turmeric acid is the added value obtained is Rp.
