Hugo Ortega, executive chef/co-owner of Backstreet Cafe, Hugo’s, Caracol, and the 2017 James Beard Foundation Award winner, was born in City, the oldest of a family of eight children. Mexico’s most famous spirit is derived from the Blue Weber species of Agave in the state of Jalisco. Mezcal is the soul of Mexico. Grown in the state of Oaxaca, it’s the “Father of Tequila” although it has several differences.
