The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail, and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter. Thai cuisine is more accurately described as four regional cuisines corresponding to the four main regions of the country: Northern, Northeastern (or Isan), Central, and Southern, each cuisine sharing similar foods or foods derived from those of neighboring countries and regions: Myanmar/Burma to the northwest, Laos and the Chinese province of Yunnan to the north, Vietnam and Cambodia to the east, and Malaysia to the south. In addition to these four regional cuisines, there is also the Thai Royal Cuisine which can trace its history back to the cosmopolitan palace cuisine of the Ayutthaya kingdom (1351–1767 CE). Its refinement, cooking techniques, and use of ingredients were of great influence on the cuisine of the Central Thai plains. Thai cuisine and the culinary traditions and cuisines of Thailand's neighbors have mutually influenced one another over the course of many centuries. Many popular dishes eaten in Thailand were originally Chinese dishes, introduced to Thailand mainly by the Teochew people who make up the majority of the Thai Chinese. Fish sauce, called nam pla in Thai or nuoc mam in Vietnamese, is used much like salt or soy sauce as a flavor enhancer. It serves as a seasoning in cooked dishes as well as a base for dipping sauces. Made from the liquid drained from fermented anchovies, fish sauce is potent; it's usually combined with other ingredients when used as a dipping sauce. Indeed, Jay Fai, whose real name is Supinya Junsuta, a 73-year-old female chef, won this award with her famous dish: “crab omelet” After the announcement of Michelin Guide in 2018, the one-star award brought about a surge of customers for Jay Fai, who had never heard of the guide before and had to be persuaded to attend the ceremony. The restaurant continues to serve mainly wok-cooked seafood dishes. Following the announcement, Raan Jay Fai Restaurant became extremely busy and is highly popular among food enthusiasts despite its high prices. Due to this Michelin-starred fame, she has encountered several challenges ranging from a dramatic increase in customers to unwanted attention from the tax men. Articles and recipes of famous Thai dishes are written in ways to make them easy to understand and use as models where they can learn how to write a recipe in English. In the book, activities are designed to infuse the learning of English for Thai cuisine and self-regulated thinking. Relevant information is involved as well as knowledge of cooking. It is suitable for learners who already have experience in cooking Thai food and want to construct their own recipes in English. The book contains an introduction to Thai food, ten units for different types of food involving six sections: introduction, reading 1, reading 2, vocabulary, grammar and writing; appendices and index. This book presents subject matter and terminologies that are probably difficult to understand without clarification by instructors. Therefore, in conceptualizing and then writing this book, the author has employed a top-down approach to Whole Language Approach that emphasizes literature and text comprehension where students are encouraged to use critical thinking strategies and use context to guess words that they do not recognize. They should be able to construct a personal meaning for a text based on using their prior knowledge to interpret the meaning of what they are reading.
