Õdoƒædgh RQ'g Noodles, Rice and Side Dish Thai cuisine and the culinary traditions and cuisines of Thailand's neighbors have mutually influenced one another over the course of many centuries. Regional variations tend to correlate to neighboring states (often sharing the same cultural background and ethnicity on both sides of the border) as well as climate and geography. Southern curries tend to contain coconut milk and fresh turmeric, while northeastern dishes often include lime juice. The cuisine of Northeastern (or Isan) Thailand is similar to southern Lao cuisine whereas northern Thai cuisine shares many dishes with northern Lao cuisine and the cuisine of Shan state in Burma. Many popular dishes eaten in Thailand were originally Chinese dishes which were introduced to Thailand mainly by the Teochew people who make up the majority of the Thai Chinese. Such dishes include chok (rice porridge), kuai-tiao rat na (fried rice-noodles) and khao kha mu (stewed pork with rice). The Chinese also introduced the use of a wok for cooking, the technique of deep-frying and stir-frying dishes, and noodles, oyster sauce and soybean products. Dishes such as kaeng kari (yellow curry) and kaeng matsaman (massaman curry) are Thai adaptations of dishes originating in the cuisine of India and the cuisine of Persia. äÓ```Ñ≤````ª```dG Appetizers อาหารว่าง A1. Recipes and Cuisine of Thailand December 2013 Cuisine Blending elements of several Southeast Asian traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic components. The spiciness of Thai cuisine is well known. As with other Asian cuisines, balance, detail, and variety are of great significance to Thai chefs. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal: sour, sweet, salty, and bitter. Thai cuisine is more accurately described as four regional cuisines corresponding to the four main regions of the country: Northern, Northeastern (or Isan), Central, and Southern, each cuisine sharing similar foods or foods derived from those of neighboring countries and regions: Myanmar/Burma to the northwest, Laos and the Chinese province of Yunnan to the north, Vietnam and Cambodia to the east, and Malaysia to the south. In addition to these four regional cuisines, there is also the Thai Royal Cuisine which can trace its history back to the cosmopolitan palace cuisine of the Ayutthaya kingdom (1351–1767 CE). Its refinement, cooking techniques, and use of ingredients were of great influence on the cuisine of the Central Thai plains. • Thai Experiences
THE BEST OF THAILAND 1 rom the temples of Wat Pho and The Grand Palace through to Thailand’s Khao Yai and Doi Inthanon national parks and FKo Hong rock, to scuba diving in Ko Pha Ngan and the white, sandy beaches of Hua Hin, Thailand is a land of variety. The country has plenty to satisfy single travelers, couples, or families, from Bangkok’s shopping and nightlife to adventure sports in the northern hills or a pam- pering spa at a beach resort. All topped off with the famous Thai hospital- ity; their smiles and irresistible, laid-back attitude. CITIES & TOWNS Begin in Bangkok, with its chaotic mix of ancient temples and modern glass towers, street markets and stylish shopping malls, tuk-tuks, and river taxis. Then head north to the venerable, walled city of Chiang Mai for a peek at the capital of the region once known as “the Kingdom of a Million Rice Fields,” but leave at least a few days to sprawl on a beach on Ko Samui or Phuket. COUNTRYSIDE Go trekking or white-water rafting in the northern hills that are home to brightly dressed hill-tribes, cycle round the ancient cities of Ayutthaya and Sukhothai in the Central Plains, pick from over a hundred national parks to explore, or cruise along the Andaman or Gulf coast in search of stunning dive sites. EATING & DRINKING Thai cuisine is enough reason to visit the country in itself, and whether you crave the brow-mopping challenge of a fiery tom yam or an aromatic bowl of noodles in broth, you’ll find it all here.

  • 004 Basic Thai Ingredients
-004 Basic Thai Ingredients Any number of Asian stir-fries begin with garlic cooked in oil. But if you add chilies, kaffir lime leaves, sugar, and fish sauce, a stir-fry takes on a delicious, unmistakably Thai flavor. The result is an explosion of salty, spicy, sweet, and sour flavors that sparkle with personality yet all harmonize on the plate. Indeed, the art of Thai cooking is combining ingredients at opposite ends of the flavor spectrum--chile paste and coconut milk, palm sugar and lime juice--and balancing them to create vibrantly flavored food. Fish sauce may not sound appealing, but used correctly, its flavor is subtle and savory. To create such dishes at home, stock your pantry with some basic Thai flavorings. Once you understand the main players, you can use them to cook authentic Thai food or to give your own cooking a taste of Thailand. Fish sauce--the salt of Thai cuisine. Fish sauce, called nam pla in Thai or nuoc mam in Vietnamese, is used much like salt or soy sauce as a flavor enhancer. It serves as a seasoning in cooked dishes as well as a base for dipping sauces. Made from the liquid drained from fermented anchovies, fish sauce is potent; it's usually combined with other ingredients when used as a dipping sauce. For cooking, you can use it straight, but never add it to a dry pan or the smell will be overpowering. Like olive oil, there are several grades of fish sauce. High-quality fish sauce, which is the first to be drained off the fermented fish, is usually pale amber, like clear brewed tea.

Indeed, Jay Fai, whose real name is Supinya Junsuta, a 73-year-old female chef, won this award with her famous dish: “crab omelet” After the announcement of Michelin Guide in 2018, the one-star award brought about a surge of customers for Jay Fai, who had never heard of the guide before and had to be persuaded to attend the ceremony. The restaurant continues to serve mainly wok-cooked seafood dishes. Following the announcement, Raan Jay Fai Restaurant became extremely busy and is highly popular among food enthusiasts despite its high prices. • Introduction Thai Food
English for Food and Catering Chutima Intarapanich M.Ed. (Curriculum and Instruction) B.A. (English) Udon Thani Rajabhat University 2018 Preface This book has been designed as a learning resource for skillful culinary students in food industry majors. The purpose of this book is to provide the students with skills to read and write recipes in Thai cuisine written in English language. Articles and recipes of famous Thai dishes are written in ways to make them easy to understand and use as models where they can learn how to write a recipe in English. In the book, activities are designed to infuse the learning of English for Thai cuisine and self-regulated thinking. Relevant information is involved as well as knowledge of cooking. It is suitable for learners who already have experience in cooking Thai food and want to construct their own recipes in English. The book contains an introduction to Thai food, ten units for different types of food involving six sections: introduction, reading 1, reading 2, vocabulary, grammar and writing; appendices and index. This book presents subject matter and terminologies that are probably difficult to understand without clarification by instructors. Therefore, in conceptualizing and then writing this book, the author has employed a top-down approach to Whole Language Approach that emphasizes literature and text comprehension where students are encouraged to use critical thinking strategies and use context to guess words that they do not recognize. They should be able to construct a personal meaning for a text based on using their prior knowledge to interpret the meaning of what they are reading.
