It all began at the beginning of the 1990s in the Actors' House in Częstochowa. In a small rented canteen with kitchen facilities, the owners of our company and six women workers started to make dumplings. All the products were made by hand and only natural ingredients were used, following old recipes. When an order for the first "truck" of dumplings was placed, everyone started to count – to their horror – how many days and nights they would need to work to make such a large number of the increasingly popular products. This dilemma is still valid today, because our Customers expect us to produce more and more, to introduce new fillings and types of products, and at the same time not to lose sight of what is most impor- tant about food, i.e. its natural taste. JAWO is a Polish family business, currently employing over 250 people. We produce using the same well-tested recipes and despite a much larger scale, many of the production processes involve traditional hand-made production. We always carefully select our suppliers and buy only the best ingredients, because excellent taste and the highest quality are of key importance to us. And our Customers' satisfaction is the best proof that they find what they need with us: time savings, products for all kinds of occasions, dishes which will satisfy any palate and cooking ideas for many scenarios that life brings about. Freezing is a very old way of preserving food, one of the best and healthiest. Ice for food conser- vation was already used by the Chinese as far back as one thousand years B.C. The history of frozen food, as we know it today, began in the 1930s. It was then that the American Clarence Birdseye invented the right technology for the process. Deep freezing of food carried out in industrial conditions does not require manufacturers such as the JAWO company to use artificial preservatives. The process which we use is called blast freezing. It involves drastically lowering the temperature of the product by exposing it to a stream of cold air and freezing it in a very short time. Thanks to that, the product retains its nutri- tional value and look fresh and presentable. When freezing food at home, we are not able to achieve the same effect as in industrial conditions. In the slow process of freezing food at home, ice crystals form in the product and rupture the cell walls during freezing. And it is actually home freezing that does not guarantee the preservation of the full nutritional value of vegetables, fruit or flour and potato products. This is why it is advisable to leave freezing to specialists. CONSIDERATION SUSTAINABILITY AND RESPONSIBILITY IN BUSINESS . In 2018, we made a public declaration that by 2025 we would stop using cage eggs in our products. This is how we responded to the appeal of the "Otwarte klatki" (Open Cages) Association. JAWO, as a socially responsible company, also wishes to show concern for the welfare of laying hens. We are not indifferent to their fate. We have already decided not to wait for the effective date of the declaration, and changed the recipe for dumplings to the one in which we do not use eggs to produce dough in this line of our products. We have also stopped using hydrogenated palm oil in the production process and replaced it with coconut oil, which is reported to be better for our health provided it is consumed in small quantities because of its high content of unsaturated fatty acids. Our decision to eliminate palm oil was large- ly due to our concern for the planet and the response to our Customers' expectations, as it turns out that its production results in climate change and deaths of thousands of orangutans, which are threatened with extinction. We intend to be eco-friendly in our factory "backyard". Therefore, the waste generated during production is segregated and 90% of the waste is recycled. Waste paper and plastics are recycled while food/organic waste is used to produce alternative fuels, electricity and agricultural fertilizer. We have also invested in modern technologies, thanks to which we are able to recover 75% of heat from the cooling systems installed in the plant. We use the recovered heat to heat domestic water and water in the central heating system, which means that we use less electricity. Following the . latest extension of our plant , thanks to the modern solutions in the potato processing technology . introduced, we have reduced the use of water by 15%, at the same time reducing the amount of . wastewater generated by the plant. ..................... Foreword About the only complaint on ETAPS’02 in Grenoble I heard concerned the fact that no list of restaurants was readily available. Since this was considered a defect in France, I realised immediately that this might be even more of a problem in Poland. So, one of the first resolutions of the ETAPS’03 team was that a list of Warsaw restaurants must be made available for participants. Indeed, you will find more than one such list among the tourist material provided. I looked at them though and realised that they all are so dry: I wouldn’t be able to make up my mind where to go for dinner on this basis. Hence, additionally stimulated by an old, classical paper by Fernando Orejas written I believe for ICALP’83 in Barcelona (once ETAPS’03 is over, you should really look forward to ETAPS’04!), I decided to try to write down at least a few random hints to help. I must admit that I have no good idea how to start, or how to organise whatever I might be able to suggest. I guess I will try to first hint on typical Polish dishes you might encounter in a restaurant menu. Here, the order is pretty obvious: starters, soups, main course, desserts. Then I will try to list some Warsaw restaurants that might be worth thinking about. Basically, the list will be arranged by moving from one area to another, with an occasional insert on some specific motif.

LAZY CHEESE DUMPLINGS / Kopytka Recipe / Przepis Separate the yolks from the egg white / Oddzielić żółtka od białka Whip the egg white / ubić białka Add the yolks into the cottage cheese and season it with the nutmeg. / Dodać żółtka do sera i przyprawić z gałką muszkatułową. Add the whipped egg white into the yolks and stir it slightly. / Dodaj ubitą pianę do żółtek i lekko ją wymieszać. Add some flour and knead it, but remember not to make it too hard. / Dodać mąkę i zagnieść ciasto, ale pamiętaj, aby nie dokonać tego zbyt mocno Divide the dough into two parts. Roll each part into a roller than is not thicker than 2 cm. Cut the rollers into small pieces / Ciasto podzielić na dwie części. Rolki każdej części w walcu nie jest grubsza niż 2 cm. Rolki należy ciąć na małe kawałki. Boil water with salt / Zagotować wodę z solą When the water boils add the dumplings gently / Gdy woda wrze dodać delikatnie pierogi. Be careful not to burn yourself / Należy uważać, aby się nie poparzyć Cook everything for 2 minutes and then take the dumplings out of the water / Gotować wszystko przez 2 minuty, a następnie Wyjąć pierogi z wody. Make a frying pan hot and put some breadcrumbs on it. Make it a lightly brown. Add some butter and keep it on the frying pan for a moment so the breadcrumbs become golden.     Dieta z niskim indeksem glikemicznym Indeks glikemiczny (IG) informuje o stopniu wzrostu stężenia glukozy po spożyciu danego produktu żywnościowego. Im wyższa wartość IG, tym większy poziom cukru we krwi po spożyciu tego produktu. Zjedzenie posiłku / produktu o wysokim IG prowadzi do szybkiego wzrostu stężenia cukru we krwi wywołującego w odpowiedzi znaczny wyrzut insuliny z trzustki. Wysokie stężenie insuliny prowadzi z kolei do znacznego i szybkiego zmnieszenia poziomu cukru, nawet do wartości poniżej normy, czyli do hipoglikemii. Objawem hipoglikemii mogą być drżenia rąk, nadmierna potliwość, ospałość oraz głód. Chęć zaspokojenia głodu jest powodem niekontrolowanego podjadania. Pokarmy z wysokim IG sprzyjają wzrostowi masy ciała oraz otyłości poprzez wywoływanie głodu, co prowadzi do częstszego jedzenia oraz poprzez działanie anabolicznie związane z wysokimi stężeniami insuliny (głównie poposiłkowymi). Insulina kontroluje stężenie glukozy w organizmie, ale aktywuje również procesy anaboliczne, co w praktyce może przekładać się na tycie. Insulina pobudza też proces tworzenia tłuszczów - głównie z dostarczanych węglowodanów (cukrów). Wysokie stężenie insuliny sprzyja tyciu, ale też odworotnie u osób otyłych często stwierdza się hiperinsulinemię. Pokarmy z wysokim indeksem glikemicznym powodują gwałtowny i znaczny wzrost stężenia glukozy oraz w konsekwencji duży wyrzut insuliny. Natomiast spożycie produktu o niskim indeksie glikemicznym powoduje powolny i relatywnie niewielki wzrost poziomu cukru i co za tym idzie - niewielki wyrzut insuliny.
