“For al them that delight in Cookery”: The Production and Use of Cookery Books in England, 1300–1600 DISSERTATION Presented in Partial Fulfillment of the Requirements for the Degree Doctor of Philosophy in the Graduate School of The Ohio State University By Sarah Peters Kernan Graduate Program in History The Ohio State University 2016 Dissertation Committee: Daniel Hobbins, PhD, Dissertation Advisor Alison Beach, PhD, Program Advisor Christopher Otter, PhD Copyrighted by Sarah Peters Kernan 2016 ABSTRACT Through an examination of the codicological and bibliographical features of manuscript and print cookbooks produced between 1300 and 1600, I offer a narrative of the early history of English cookeries, their readers, and their producers. The success of the genre was due, in part, to its flexibility. Cookbooks could be used in multiple ways in and out of the kitchen. Furthermore, I examine the shift from manuscript to print through the lens of cookbooks. I argue that an audience for early English printed cookbooks was already in place prior to the introduction of print. The audience for cookeries in England grew steadily over the course of three hundred years, incorporating new readers who spanned class and gender divides. The expanding audience in turn propelled new cookbook production. The transition from script to print provides the backdrop for the genre’s development. First examining late medieval cookbooks as technical literature, I posit that many of these texts were used in contemporary kitchens. Some of the earliest English cookbooks, manuscript rolls, served as aides-mémoires for kitchen staff in great households. Other early manuscript cookbooks were instructional texts, used by cooks in medieval kitchens. -

Departing from well-worn accounts of the English dictionary as a series of more-or-less discrete texts created by more-or-less famous men to constitute a near-neutral record of the entire language, “Women in the English Language Dictionary” conceives, instead, of the English language dictionary as a rhetorical genre, the form, content, audience, exigence, and cultural consequences of which are gendered and gendering. As a focused analysis of the emergence and evolution of a genre, “Women in the English Language Dictionary” finds that women—as an abstract construction and as a social collectivity—were integral for the framing of early dictionaries’ exigencies and for the fashioning of audiences invoked by the genre. Women signal major shifts in the genre’s purposes and participants, shifts heretofore neglected in favor of generic phases delimited by changes in form and content. -

It focuses particularly on Castiglione’s Book of the Courtier. The Courtier is generally recognised as one of the most influential texts in Renaissance Europe. It was originally published in Venice in 1528; the first English translation was produced by Thomas Hoby in 1561. This thesis aims to provide an integrated analysis of Castiglione’s contribution to English political culture throughout the second half of the sixteenth century. It considers the circumstances in which Hoby translated the Courtier, and his motives for doing so. It identifies two distinct models of courtliness delineated by the Urbino interlocutors, and assesses the extent to which these models influenced the self-presentation of leading Elizabethan politicians. The thesis also engages with negative characterisations of the courtier. -

The head as a tower, the eies in the same as watchmen ... the toung as a porter to cal for that which is needfull, & to examine that which is doubtful, the eares as spies to harken & to listen, the hands as servitours & sould iers, the feet as messengers and porters to carry and recarry, the teeth as grinders of natures provision, the pallate as taster, the stomach as a cook-roome, wherin all things are prepared againe for the benefit of nature, & the whole body so to be preserued for the benefit of the soule.! Similar to Burton's conception of the bodv, and how it relates to the souL is Edmund Spenser's description of the House of Alma from his epic poem The Faerie Queene (1590). Mistress Margery Emily Sarah Holt Chapter One. A Regular of Oxenforde. “Give me the book, and let me read; My soul is strangely stirred— They are such words of love and truth As ne’er before I heard!” Mary Howitt. The sun was shining brightly on the battlements and casements of Lovell Tower. The season was spring, and the year 1395. Within the house, though it was barely seven o’clock in the morning, all was bustle and confusion, for Dame Lovell was superintending her handmaidens in the preparation of dinner. A buxom woman was Dame Lovell, neither tall nor short, but decidedly stout, with a round, good-natured face, which just then glowed and burned under the influence of the fire roaring on the large grateless hearth. She wore a black dress, heavily trimmed at the bottom with fur, and she carried on her head one of those remarkable elevations generally known as the Syrian or conical head-dress, made of black stiffened gauze, and spangled with golden stars. Her assistants, mostly girls of from sixteen to twenty-five years of age, were occupied in various parts of the kitchen; while Mistress Katherine, a staid-looking woman of middle age, who filled a post somewhat similar to the modern one of housekeeper, was employed at a side table in mixing some particularly elaborate compound. Among this busy throng moved Dame Lovell, now giving a stir to a pot, and now peeping into a pan, boxing the ears of any maiden who appeared remiss in her duty, and generally keeping up a strict and active supervision. -

THE CATHOLIC UNIVERSITY OF AMERICA Chaucerian Works in the English Renaissance: Editions and Imitations A DISSERTATION Submitted to the Faculty of the Department of English School of Arts and Sciences Of The Catholic University of America In Partial Fulfillment of the Requirements For the Degree of Doctor of Philosophy By Sean Gordon Lewis Washington, D.C. 2011 Chaucerian Works in the English Renaissance: Editions and Imitations Sean Gordon Lewis, Ph.D. Director: Michael Mack, Ph.D. Chaucerian Works in the English Renaissance: Editions and Imitations articulates the connection between editorial presentation and authorial imitation in order to solve a very specific problem: why were the comedic aspects of the works of Geoffrey Chaucer—aspects that appear to be central to his poetic sensibilities—so often ignored by Renaissance poets who drew on Chaucerian materials? While shifts in language, religion, politics, and poetic sensibilities help account for a predilection for prizing Chaucerian works of sentence (moral gravity), it does not adequately explain why a poet like Edmund Spenser—one of the age’s most unabashedly Chaucerian poets—would imitate comedic, works of solaas (literary pleasure) in a completely sententious manner. This dissertation combines bibliographic approaches with formal analysis of literary history, leading to a fuller understanding of the “uncomedying” of Chaucer by Renaissance editors and poets. This dissertation examines the rhetorical and aesthetic effects of editions of the works of Chaucer published between 1477 and 1602 (Caxton through Speght) as a means of understanding patterns of Chaucerian imitation by poets of the period. Although the most obvious shift in textual presentation is the change from printing single works to printing “Complete Works” beginning with the 1532 Thynne, I argue that choices made by the printing-house (in terms of layout, font, and, most specifically, editorial directions) had a gradual, cumulative effect of highlighting Chaucerian sentence at the expense of solaas . -

BEER DISSERTATION Submitted in partial fulfillment of the requirements for the degree of Doctor of Philosophy in History in the Graduate College of the University of Illinois at Urbana-Champaign, 2014 Urbana, Illinois Doctoral Committee: Professor Emerita Caroline Hibbard, Chair Associate Professor Clare Crowston Associate Professor Derek Neal, Nipissing University Associate Professor Carol Symes ABSTRACT This dissertation explores the reigns of two early sixteenth-century queens consort of England and Scotland, Catherine of Aragon (r. 1509-1533) and Margaret Tudor (r. 1503-1513). It examines the responsibilities, rights, duties, and actions of Catherine and Margaret within their sixteenth-century dynastic context, without a teleological focus on the controversies of their later lives. As the first wife of Henry VIII, Catherine of Aragon has often been portrayed as a pious and ultimately tragic figure whose reign has been overshadowed by her inability to bear a male heir. Margaret Tudor, Henry VIII’s sister and queen of James IV, has had her reign continually cast in the shadow of her husband’s tragic early death and her later disastrous career as regent of Scotland. Despite being the common subjects of popular histories, Catherine and Margaret are in fact understudied queens, neither of whom has been the subject of scholarly monographs for over fifty years. This work is the first to consider Catherine and Margaret since the emergence of a robust field of queenship studies, which has combined women’s and gender history with the study of international court culture and politics. -
