Catalogue Official FINAL www.premiumbakey.net WHO WE ARE Our Company has started its operation since 2000 as flour Production Company. With its 4000 m2 facility it is one of the best in region. Firstly, we have started producing varieties of flour products for Kosovo's market and exporting to neighbor countries. The factory is equipped with a modern lab which helps maintain the quality of our products. Based on the market need for quality bread, in 2012 we have started producing standard industrial white bread. Meanwhile we have started to produce other varieties of bread and croissants. Seeing the opportunity in 2013 we built a new facility for production of bread and other dough based products. In 2014 we have started producing in the modern facility of 2000 m2. In 2015 we have prepared the new facility of 800 m2 for producing Turkish sweets like Turkish baklava, biscuits, kek, and kadif. In 2017, Premium expanded its production into additional 2000 m2 with 2 modern line productions. In 2018 Premium has expanded its production with additional Rondo Line for Puff Pastry and Croissant Production. In February 2019 it has installed the Burek production Line. In March 2019 it will be finished also the modern 1000 m2 new offices with Lab and Demo Center. Today, Premium Industry has a range of over 200 products, selling in Kosovo in more than 1000 markets. Moreover, the company operates in 25 shop in shop bakeries within Supermarkets in Kosovo. It has been certified with ISO 22000:2015 from TUV Nord, and now is in the final stage for FSCC 22000 and Halal Certification. There’s something about biting into flaky, bread layers and finding a bite of special chocolate in the middle. The process is the same as basic croissant up to the final formation and last rising. We’ve used the classic shape of a rolled rectangle for the version presented here. Serve them warm with your favorite coffee or tea. 1 Tbsp (1.5 pkg) active dry yeast 6 Tbsp warm water Two good pinches of sugar 3-1/2 cups flour 1-1/3 cups milk, warmed 1-1/2 Tbsp. sugar 1 Tbsp. salt 4 Tbsp. butter, cut into 8 chunks 1/2 lb. (2 sticks) unsalted butter, chilled Extra flour for dusting while rolling 1 egg (for egg wash) 12 oz. dark, bittersweet chocolate PART 1 – MIXING THE DOUGH 1. ACTIVATE the yeast. The water should be between 95-100°F, or comfortably warm to the inside of the wrist. Add two good pinches of sugar and stir to dissolve prior to adding the yeast granules. Swirl the sweetened water, and sprinkle the yeast on top while the water is still moving. Allow to sit for 5-7 minutes or until the top is nicely foamy and the yeast awakened. 2. MEASURE the flour and place in a large mixing bowl. 3. WARM the milk with the sugar, salt, and 4 Tbsp. butter (cut into chunks) added until 95-100°F, or comfortable to the inside of the wrist and the butter melted.
