    By Hiroshi Ito, Japan’s Use of Flour Began with Noodles owner of Nagaura in Ginza Noodles Introduced by Zen Priests In previous issues of FOOD CULTURE, Hirotaka Matsumoto described the globalization of sushi with stories and photos from his own travels to sushi restaurants and stores in thirty-five cities in twenty-five countries. He provided detailed reports of the tremendous expansion of sushi throughout the world, indicating that there are 14,000 to 18,000 restaurants and stores selling sushi around the world. In the course of its history, the foods and diet of Japan have assimilated aspects of the food cultures of many coun- tries. More than any other, the use of flour, introduced from China during the Middle Ages (end of the twelfth cen- tury to the end of the sixteenth century) took firm root in Japan, making noodles a food with an importance comparable to rice, the staple food of the Japanese diet. In this issue, we begin to trace the historical development of noodles, focusing on the flour processing techniques brought from China by Japanese Zen priests, and the process that made noodles a major Japanese food.     COOKING Ready-Made Store-Bought Noodles Semi-fresh han nama men 半生麺・乾麺 Dried kan men・冷凍麺 frozen reitō men When I don’t have the time (or a group of people to help me stomp, roll and cut noodle dough) to make fresh-stomped udon, my personal preference is to purchase han nama udon or semi-fresh udon noodles. Han-nama udon are easily available in stores throughout Japan. However, when buying Japanese noodles overseas. kan men or “dried noodles” are usually a more reliable choice. Many brands will have Sanuki 讃岐 as part of their name; this refers to the Sanuki region of Shikoku (current day Kagawa prefecture) known for its udon. Ishimaru brand (logo above) produces many excellent kinds of Sanuki-style udon noodles; two dried kan men products I have used while in the U.S.A. are té uchi hōchō-giri (”knife cut”) noodles and regular Sanuki udon noodles. Pictured below, left to right: regular DRIED Sanuki-style udon, DRIED té uchi hōchō-giri Sanuki-style udon, SEMI-FRESH Sanuki-style udon. Store all dried and shelf-stable noodles as you would any pasta, on a cool, dark, dry shelf. After opening the original packages, transfer remaining contents to a lidded jar, canister, or sealed bag (include the packet of drying agent that came with the original package). Label the container with the date the package was opened; it is best to use the product within a few months, though spoilage is rare even a year later. Cooking times for packaged Japanese noodles vary enormously according to the type (dried kan men or semi-dried han nama), and from brand to brand.

    Adapted from KANSHA: Celebrating Japan’s Vegetarian Traditions 手打ちうどん TÉ UCHI UDON (Home-Stomped UDON Noodles) Made from wheat flour and saltwater (average salinity 3.5%), udon noodle dough is dense and stiff, requiring tremendous strength to knead. Stomping power is far more effective, and certainly more fun, than using your hands to work the dough. Tatami--matted floors are ideal for stomping noodles, but linoleum-covered flooring works well, too. If your kitchen has a hard wood or flagstone floor, you will need to provide some cushioning. Try spreading a blanket or several bath towels on the floor before placing the noodle dough (in a plastic bag) on top. And, if foot stomping is not your style, you can use a mechanical kneading device such as a dough hook on a food processor, or a lasagna attachment to a pasta machine. The amount of water needed can change quite dramatically depending upon the temperature and humidity. It is best to have extra brine on hand, using as little as possible to get the dough to hold together. 4 (generous) portions: 2 (American-sized) cups all-purpose flour, whole wheat if you prefer Brine: 1 tablespoon sea salt (1/2 that amount if using table salt) dissolved in 1/3 (American-sized) cup warm water Wheat flour for hands, rolling pin, and board (about 2-3 tablespoons) To make fresh, homemade-style, noodles: Mix the dough by placing the flour in a bowl, and pouring in half the brine in a steady, slow stream around the outer edge rather than the center of the bowl.
