    KARAKTERISTIK PEMPEK INSTAN DENGAN PENGOLAHAN PENGERINGAN OVEN DAN FREEZE DRYING CHARACTERISTICS OF INSTANT PEMPEK WITH DRYING PROCESSING OVEN AND FREEZE DRYING Alhanannasir, Amin Rejo*, Daniel Saputra, Gatot Priyanto Faculty of Agriculture, Sriwijaya University *Corresponding author, email: [email protected] ABSTRACT Palembang capital of South Sumatra Province is famous for its typical pempek food. Pempek is processed food from fish (snakehead fish) milled, tapioca starch, salt, and water. The dough is shaped into the form called lenjer (small and large lenjer), oyster shape, wrapped in banana leaf, adaan, curly, and submarine. Pempek is generally in wet form. Pempek wet has 50-60% water content, so pempek can last 3-4 days, for that there should be treatment for pempek can last long. This study studied the treatment of various concentrations of CaCl2 with oven drying and freeze drying pressure on rehydration and water content. The treatment of CaCl2 concentration of 0,5%, 1%, 1,5%, 2%, 2,5% and 3% with oven drying had a very significant effect on water content and instant pemper rehydration. Average moisture content is 4,43%, and rehydration or absorbed water is 4,09% per 60 minute.Instant pempek with freeze drying at 0.002 bar pressure, 0.004 bar, 0.006 bar, and 0.008 bar at -50 ° C temperature temperature. The pressure is very significant on water content and rehydration. The average moisture content of 2.85% and rehydration was 45,29% per 20 minute. Metode penelitian yang digunakan adalah metode eksperimen yaitu melakukan pembuatan otak-otak ikan patin dengan pengolahan berbeda yaitu X1 (digoreng) dan X2 (dibakar). Selanjutnya dilakukan studi perbandingan (comperative experiment) untuk membandingkan otak-otak digoreng dan dibakar dengan menggunakan Uji t. Berdasarkan hasil penelitian dari penilaian organoleptik, otak otak ikan patin X2 berbeda nyata dengan otak otak ikan patin X1 pada tingkat kepercayaan 95%. Dilihat dari rata-rata aspek rupa X1 7,19 X2 7,44 rasa X1 6,93 X2 7,46, tekstur X1 6,92 X2 7,13 dan aroma X1 7,04 X2 7,34 pada otak otak ikan patin X2 lebih tinggi daripada otak otak ikan patin X1. Sedangkan nilai kadar abu X1 1,51 X2 1,43 dan kadar karbohidrat X1 46,56 X2 46,36 dan kadar protein X1 24,97 X2 22,47 pada otak otak ikan patin X1 lebih tinggi dari pada otak otak ikan patin X2. Sebaliknya dengan kadar air X1 22,68 X2 26,85 pada otak otak ikan patin X2 lebih tinggi dari pada otak otak ikan patin X1. Pengolahan otak otak ikan patin dengan dibakar merupakan yang lebih disukai dilihat dari nilai organoleptik dan nilai kimia, yaitu rupa (cukup cemerlang tanpa lendir), rasa (spesifik otak otak ikan), tekstur (cukup padat dan elastis) dan aroma (spesifik bau otak otak ikan) dengan nilai kadar abu 1,43%, kadar lemak 4,26%, kadar protein 15,34%, kadar air 22,68% dan kadar karbohidrat 53,00%.

Eel (Monopterus albus) is a fish that live in the area of rice fields or water that has high nutritional value. The purpose of this study was to determine differences in the quality of pempek eels with a variety starch and long boiling, as well as determine the level of consumer preferences. The mentod using randomized block design (RAK) two factors, factor 1 consists of three substan variation tapioca starch and eels (40:60, 50:50, 60:40) and the second factor duration long boiling (20, 30, 40) minutes. The second factors were obtained nine attempts, observations made include chemical test that levels of protein, fat and water content, organoleptic test covering the taste, aroma and texture. Data analysis was performed using ANOVA analysis of variance with a confidence interval of 1%. If found influence on one variebel then continued with real difference test. Results from the study indicate the best treatment for chemical tests on samples contained A1B1 with provisions protein content 6.49% and fat 0.41%. The best treatment for water content contained in the sample A1B3.

Pempek is a typical food of the city of Palembang, South Sumatra, Indonesia which contains lots of protein, carbohydrates, fats, and other micro nutrients. Pempek is a processed food product made from the mixture of main ingredients of milled Snakehead fish, tapioca starch, salt, and water. The dough is shaped into the forms called lenjer (sausage-like bar ), pastel (oyster shape), otak-otak (wrapped in banana leaf), keriting (curly), and kapal selam (submarine) in the form of wet pempek.Instant pempek is obtained from processing the wet pempek by using freeze drying pressure technique with the pressure of 0.002 bar, 0.004 bar, 0.006 bar and 0.008 bar at a condensing temperature of -50 oC. The pressure has a very significant effect on rehydration, diameter of porosity, and color (lightness, chroma, hue). Instant pempek has the characteristics of porosity diameter size 1138.21 µm, rehydration (amount of water absorbed) 17.04 g, lightness 83.01%, chroma 18.29%, and hue 89.93%.

Permasalahan yang dihadapi oleh masyarakat di Kecamatan Sanrobone adalah kurangnya Anwar Ramli pengetahuan dan keterampilan yang dimiliki oleh masyarakat petani Universitas Negeri Makassar nelayan tentang teknologi untuk mengolah hasil perikanan menjadi produk olahan ikan siap saji yang bernilai gizi yang tinggi serta bernilai jual yang tinggi. Tujuan yang akan dicapai pada kegiatan Pengabdian Ipteks bagi Masyarakat ini adalah memberikan pengetahuan dan keterampilan kepada masyarakat kelompok tani nelayan di Kecamatan Sanrobone Kabupaten Takalar tentang teknologi pengolahan hasil perikanan menjadi produk yang siap saji yang bernilai gizi tinggi serta dapat meningkatkan pendapatan keluarga. Metode yang digunakan untuk mencapai target kegiatan pengabdian adalah memberikan penyuluhan, pelatihan, dan demonstrasi tentang teknologi pengolahan produk olahan ikan: nughet ikan, bakso ikan, otak-otak, dan empek-empek yang memiliki cita rasa tinggi dan diminati oleh masyarakat. Sasaran khusus kegiatan pengabdian Ipteks bagi Masyarakat ini adalah dua mitra kelompok masyarakat, yaitu kelompok budidaya udang windu/ikan “Harapan Kita” dan Kelompok Tani/Nelayan Usaha Pengolahan Ikan “Semoga Sukses”. Berdasarkan hasil evaluasi yang telah dilakukan oleh tim pengabdi, semua peserta (100%) menyatakan bahwa kegiatan ini bermanfaat untuk mengembangkan wirausaha yang dapat meningkatkan pendapatan keluarga. To increase economic value, the seed of jackfruit and the seed of Durian utilized and processed to be new food source and one of them was chips. The study was done in three stages, making the chips from the seed of jackfruit and the seed of Durian, analyzing the content of nutrient and organoleptic test. Analyzing the content of nutrient in the study was the level of protein, fat, water, dust, and carbohydrate and organoleptic test at color, taste, aroma, and texture from chips produced. Based on the results of study that the level of protein, fat, water, dust, carbohydrate and organoleptic test of chips from the seed of jackfruit was 1.1151%, 0.9687%,9,3626%, 43118%, 84.2419%, and the chips from the seed of Durian the level of protein, fat, water, dust, and carbohydrate were 1.0786%, 2.7932%, 8,8043%, 3.4763 and 83.8477%. The chips from the seed of jackfruit and the seed of Durian had high level of carbohydrate. Thus the writer likes the chips form the seed of jackfruit and the seed of Durian.

    CHAPTER 1 INTRODUCTION 1.1 Background Different countries have different food to eat. Some countries have their own choices of food based on the history. Traditional food mostly come from the past habits. It means that people keep eating something in the past until now. The eating traditions become their own habit and the food eaten by them become the traditional food. Traditional food usually depends on the habitat. For example for those who live on the mountain, their traditional foods would be any kinds of vegetables. For those who live near the sea or river, their traditional foods would mostly based on fish. Sometimes traditional food also comes from the era. The middle-aged food usually comes from the farm product, for example eggs, cheese or any kinds of lamb or poultry. So thats why different countries have different choices of food. The food that they choose become their own traditional food. The traditional foods use simple traditional tools for cooking. Usually, they are cooked using the traditional way; without any machine. The traditional foods are cooked without using the gas stove, but they are cooked using fireplace. People build the fire using the burning coal or wood. There are also another traditional kitchen utensils such as pot is made from ceramic, cutting board is from wood, food basket is from bamboo, stock pot is from clay, pestle and mortar are from stone etc. The tools for cooking traditional food are quite simple because the traditional cooking utensils are made mostly from the natural sources such as stone, wood, clay or bamboo.
