  • Pairing Basics
Pairing Basics SPICY FOOD: • Bold, peppery, hot • Wide variety of styles, preparations, accompaniments • Requires a palate-cleansing wine to refresh the palate GENERAL Pairing Tips: • Acidity in a wine cuts through richness and helps it stand up to bold flavors in food • Tannins and alcohol in a wine enhance the perception of spice in food • Sweetness and fruitiness in a wine can contrast with and tone down spice in food • Pair “like” components: intensity, complexity, texture, fruit or earth o Example: delicate, fresh, clean flavors deserve a delicate, fresh, clean wine o Example: bold, rich, complex dishes deserve a bold, rich, complex wine • What grows together goes together • Consider the occasion 1) Spreitzer Oestricher Lenchen Kabinett Riesling ’10 – Rheingau, Germany • Riesling has naturally high acidity and can be made in a variety of styles from bone dry to off-dry to very sweet; the acidity balances the sweetness • “Kabinett” is a designation used in Germany; it indicates the grapes were picked at lower levels of ripeness, which translates to lighter, lower alcohol wines; usually off-dry • Light body won’t overwhelm light dishes, or it can contrast with richer dishes • Bright acidity and some sweetness refreshes the palate after eating spicy food 2) Clos Roche Blanche Sauvignon Blanc No. 2 ’11 – Touraine, France • Sancerre is the famous appellation for Sauvignon Blanc in the Loire Valley in France; this is from a larger area just east of there • Tangy fruits, herbal and bell pepper notes complement dishes with peppers and/or fresh herbs; pungency stands up to bold flavors; light body and high acidity refreshes the palate • Clos Roche Blanche is known for being very non-interventionist in approach All class outlines are copyright of Corkbuzz Wine Studio.

  • Top 10 Mediterranean Winegrape Cultivars to Consider for Foothills Vineyards
Top 10 Mediterranean Winegrape Cultivars To Consider for Foothills Vineyards Glenn McGourty, Viticulture and Plant Science Advisor, UCCE Mendocino and Lake Counties The International Varieties n Cabernet Sauvignon n Merlot n Sauvignon Blanc n Pinot Noir n Chardonnay Why International Varieties? n Long modern history of export production n Perceived quality n Tradition European Viticulture n Climate is more continental—more rain, overall cooler in many areas compared to California n Grapes are grown from 38-50th parallel n Vintage years happen when grapes become fully ripe California Has A Mediterranean Climate n Most wine growing occurs between Latitude 33-38 degrees (vs. 41-50 degrees) n Climate is characterized by warm dry summers and cool (but not freezing) winters n One percent of the earth’s surface n One of six areas on the planet Why Consider Planting Something Different? n Niche Market n Vines adapted to your climate n Wine Styles n Direct Sales Market Realities n Wine drinkers are more adventurous than wine distributors! n Many wine writers don’t understand lesser known varieties n It is hard to sell wines with names that consumers can’t pronounce (Viognier, Montepulciano, Cieliegolo, etc.) Other Considerations for Novel Varieties n Not everyone likes what you like n New wines require a hand sell n You are pretty much on your own for information on how to grow things! • Presentazione Fibbiano Winesito
REAL TUSCAN WINE THE HISTORY Fattoria Fibbiano is located near Terricciola in the Era Valley, an area which boasts some significant Etruscan settlemen- ts. On the hill of the farm many tombs have been excavated, which date back to the dawn of Tuscan civilization. During the Middle Ages, the region saw a succession of disputes and conflicts between rival families and towns. In the past, Terricciola itself was a hamlet surrounded by high walls and defence towers. The origins of the farm date back to the 12th century when it was owned by the Gherardi del Testa Barasaglia family, and it followed the family’s fortunes through thick and thin. In 1700, the main building was extended to take the shape of today’s farm. The Fattoria Fibbiano’s farmstead dates back to 1707, but only became a key part of the farm’s hi- story three centuries later in 1997, the year in which Giuseppe Cantoni decided to go back to Italy after a long career abroad in business in order to return to his family roots: the Cantoni family have been farmers for generations, in other words, forever. Giuseppe, with his wife Tiziana and sons Matteo and Nicola, began scouring the Tuscan countryside in search of the right place. When he saw the Fattoria Fibbiano there was no doubt in his mind: from then on, their new life began. A simple life, lived to the full, characterised by silences, passion, close to nature and to the purest of things, far away from the noise of the city. The renovation work began: restoring the old farmstead, which was quite run down, clearing the woodland, reviving the agricultural land, reinstating the old olive groves and vineyards, and re-planting rows of cypress trees.

  • The Wine Picker Willian Hutchinson
The wine picker Wine Picker Ecole du Champagne Maremma in pursuit of terroir 22 maggio 2015Wine ReportsBy Delphine Veissiere Home to the Etruscans, the Maremma is a vast area along the Tuscan coast that stretches from south of Livorno to south of Grosseto. In the southern part, it extends far inland to Scansano and Pitigliano. Broadly speaking, we can divide the Maremma into two distinct regions: North and South. In terms of red wine, the North is home to the “Super Tuscans,” wines that are made from international varieties, while the The wine picker Southern denominations are predominantly Sangiovese. On the other hand, Northern whites often include Vermentino as the core component of the blend in the denominations, and there are also single grape varietal wines allowed from other grapes. In the South, where Trebbiano Toscano, Ansonica, and Vermentino play important roles, there are two white-only denominations and a wider variety of white grapes permitted. Differences in altitude and exposure to the sea winds and its cooling effects create a multitude of microclimates, oftentimes within the same vineyard. Some vineyard areas are protected from the sea by the initial foothills and so have a more continental climate, with a greater diurnal temperature range. In fact, two wineries within 6km of each other in Suvereto have different climates: one is continental and the other is maritime. Soil types range from sand, clay, and stone, in the lower altitudes to calcaire, rocks, and sandstone in the higher altitudes, especially around Scansano, where vineyards are planted up to 500m above sea level.
