Rains and a lowering of temperatures during the second half of August re-created optimal conditions for the vines. There were no problems of healthy development, and the vineyard continued to ripen the grapes in an excellent fashion, accumulating the typical aromatic substances of the different grapes varieties. Fermentation and Aging The varieties were fermented separately, and a small percentage of Viognier and Ansonica were harvested late in order to give the wine notes of warmth and ripeness. The grapes, at the moment of their arrival in the cellars, were given a soft pressing and the must chilled to a constant temperature of 50° Fahrenheit (10° centigrade) for 24 hours in order to favor a natural static settling of the impurities. The clean must went into stainless steel fermenting tanks, where it fermented at a temperature of 61° Fahrenheit (16° centigrade). A brief three month aging period in stainless steel tanks on the fine lees preceded bottling. Alcohol: 12.5% Historical data The Le Mortelle estate was once part of a larger property which already appeared on the maps of Tuscan Grand Duke Leopold II in the mid-19th century. As one of the world's top industrial nations, Italy offers a unique marriage of past and present, tradition blended with modern technology -- as exemplified by the Banfi winery and vineyard estate in Montalcino. Italy is 760 miles long and approximately 100 miles wide (150 at its widest point), an area of 116,303 square miles -- the combined area of Georgia and Florida. It is subdivided into 20 regions, and inhabited by more than 60 million people. Italy's climate is temperate, as it is surrounded on three sides by the sea, and protected from icy northern winds by the majestic sweep of alpine ranges. Winters are fairly mild, and summers are pleasant and enjoyable. NORTHWESTERN ITALY The northwest sector of Italy includes the greater part of the arc of the Alps and Apennines, from which the land slopes toward the Po River. The area is divided into five regions: Valle d'Aosta, Piedmont, Liguria, Lombardy and Emilia-Romagna. Like the topography, soil and climate, the types of wine produced in these areas vary considerably from one region to another. Yet, around the corner, behind those hills, along the country walks there is another village to discover and a further church to visit. Ironically, Tuscany is unknown to most. Just like its people, genuine and proud, friendly at a first glance, however difficult to understand if you do not share their history. Just like its wines, exported all over the world and yet so little appreciated and identified. By placing Casole right in the middle we started our journey through famous and undiscovered wine areas, selecting not only the wines but also the estates that were, to us, representing the terroir between respect of nature and a modern approach to local production. We have spoken to several wine producers and to them we asked their stories and carefully listened. Those stories, their passion and the difficult choices they had to make had become our stories to tell. At Castello di Casole we do not describe our wines, rather we tell stories. -

In the Sicilian dialect “Nica” means small. “Vigna nica” is a small winery that produces organic wine with great passion and hard work. We planted the first vineyard of 2 Hectare (23919.8 square yards) expanding year after year to 5 hectares (59799.5 square yards). Our vineyards are located in Messina District overlooking the Aeolian Islands. We are part of The Mamertino D.O.C. area, (D.O.C. mean Denominazione di Origine Controllata, refer to government guarantees of the wines’ origins). This type of D.O.C. has a long history and was one of the favourite of the Roman emperor Giulio Cesare. The wines are handcrafted and produced with organic and biodynamic methods, this because we love to experiment while we are learning and better understanding our land always keeping in mind the respect of nature. Our wines are artisanal products that means each vintage will never be the same of the previous one because every plant and every year is different … and this is exactly what makes our cellar unique. Nello studio dell’Olocene ci siamo limitati alla situazione presente in Età Romana, non tanto perché considerata priva di interventi antropici, bensì in quanto la più vicina nel tempo ad uno stato del territorio non influenzato da questi ultimi. Particolare attenzione è stata posta alla precisazione dei riferimenti cronologici dei livelli delle successioni stratigrafiche marine, datati secondo i moderni criteri di biozonazione basata principalmente sulle associ- azioni a Foraminiferi planctonici ed a Nannoplancton calcareo. D’altra parte non è stato trascurato il richi- amo a fossili di altri gruppi sistematici e loro associazioni di particolare significato stratigrafico (cronologi- co e/o paleoambientale) sia per le successioni marine, sia per le continentali, né ovviamente sono state trascurate le informazioni offerte dalle determinazioni radiometriche di età. Per agevolare la lettura di questo complesso riassunto, consigliamo di consultare i riferimenti offerti nella Figura 4.
