  • The Kimchi Chronicles Television Show, but Also with This Cookbook
This book is dedicated to my two mothers, one who gave me life and the other who helped me live it. Contents Foreword by Jean-Georges Vongerichten Introduction Pantry: My Korean-American Kitchen One: Kimchi and Banchan Two: Vegetables and Tofu Three: Korean Barbecue Four: Meat and Poultry Five: Fish and Shellfish Six: Rice and Noodles Seven: Cocktails, Anju, and Hangover Cures Eight: A Little Something Sweet Acknowledgments Resources Photo Credits Index Foreword hen I was growing up in Alsace, France, my room was just above the Wkitchen. My mother and grandmother used to prepare meals for the family’s coal company employees. Big pots of traditional Alsatian foods bubbled below, and the scent would just waft up into my room. I loved watching them cook, and eventually I became the family palate—I’d taste the food and tell my mom what was missing: a little salt here, a little butter there. One day, I realized that I wanted to cook for a living, and I was lucky enough to apprentice with some of the greatest chefs in France. I was trained in classical French techniques, which were firmly based in stocks that took hours to make and were heavy on the butter and cream. When I was 23, I moved to Bangkok to work at the Mandarin Oriental. It was the first time that I had ever traveled that far from home. On my way to the hotel from the airport, I stopped at a food stand on the side of the street and had a simple soup that changed my life.

YOUR O.A.T. ADVENTURE TRAVEL PLANNING GUIDE® New! Under the Midnight Sun: Sami Lapland, Norway & the Arctic Circle 2021 Small Groups: 8-16 travelers—guaranteed! (average of 13) Overseas Adventure Travel ® The Leader in Personalized Small Group Adventures on the Road Less Traveled 1 Dear Traveler, At last, the world is opening up again for curious travel lovers like you and me. And the O.A.T. New! Under the Midnight Sun: Sami Lapland, Norway & the Arctic Circle itinerary you’ve expressed interest in will be a wonderful way to resume the discoveries that bring us so much joy. You might soon be enjoying standout moments like these: There was something intangibly magical about Lapland. Maybe it was the midnight sun, the endless rugged tundra, or the welcoming nature of the Sami people. All I know is that there was a true sense of Arctic magic everywhere I went, especially when I met an indigenous Sami family on their reindeer farm. As we explored the farm, they introduced me to their way of life and traditions dating back thousands of years. I was saddened to hear that their ancient culture is under threat from two forces: the construction of an Arctic Railway through Sami territory and Sami youth deviating from their traditional lifestyle. You’ll hear about these challenges as well when you meet with a Sami family on their reindeer farm. In the regions I travel to around the world, the stories of the people who live and work there are the most distinct and poignant experiences. You’ll meet with a local educator in Oslo to hear about July 22, 2011—the harrowing terrorist attack on this city—and their personal account of this day.

  • The Effect of Freeze-Drying on the Properties of Polish Vegetable Soups
applied sciences Article The Effect of Freeze-Drying on the Properties of Polish Vegetable Soups Ewa Jakubczyk * and Aleksandra Jaskulska Department of Food Engineering and Process Management, Institute of Food Sciences, Warsaw University of Life Sciences (WULS_SGGW), 02-787 Warsaw, Poland; [email protected] * Correspondence: [email protected] Abstract: The aim of this study was to investigate selected physical and biochemical properties of four vegetable freeze-dried soups. The water content, water activity, pH, color parameters, antioxidant activity (EC50), total polyphenolic content of fresh tomato, pumpkin, beetroot, and cucumber, and freeze-dried soups were measured. Sensory analysis was applied to compare sensory attributes of fresh and rehydrated soups. The sorption isotherms of freeze-dried soups were obtained with the application of the static and dynamic vapor sorption (DVS) method. The application of the freeze-drying method enabled the obtaining of dry soups with a low water content of 2–3%. The drying caused a significant change of color of all soups. The redness of soups decreased after drying for the beetroot soups from +39.64 to +21.91. The lower chroma value of 25.98 and the highest total color change DE*ab = 36.74 were noted for freeze-dried beetroot soup. The antioxidation activity and total polyphenolic content were reduced after drying, especially for the cucumber and tomato soups. The Peleg model was selected to describe the sorption isotherms of dried soups. The sorption isotherm of freeze-dried cucumber and beetroot soups had a sigmoidal shape of type II. The shape of the moisture sorption isotherm for freeze-dried tomato and pumpkin soups corresponded more with type III isotherms.

As the recipes are based on different measurements and temperature scales we have added conversion tables for your (and our) help. At the end of the recipe book you will find a vocabulary list with the most common ingredients for the recipes in the languages used in the countries involved in the project. For the order of recipes we decided to begin with starters and soups being followed by various main courses and desserts. Finally we have added a chapter about typical cookies and cakes. We learned during the project work, that making cookies yourself is not common in many of the countries involved in this project, but nevertheless many nice cookies recipes exist – we wanted to give them some space here and we hope that you will try out some of them! We have added a DVD which shows the making of some of the dishes during the meetings and also contains the recipes.

During these sessions, the nourishment for mind and soul has been complemented by nourishment for the body—wonderful soups and the best bread in Baltimore. More recently, a Reading Circle has been formed to occupy the remaining Wednesdays. And even though the Reading Circle was started during the summer, the participants have found themselves hungering for soup as the perfect accompaniment to the entertainment of the spoken word. This cookbook contains some of the favorite soup recipes of the parishioners of St. Stephen’s. It is a companion to the Cookie Walk Cook Book, which contains our parishioners’ favorite cookie recipes (many of which are featured at St. Stephen’s famous annual Cookie Walk). • Soup at the Distinguished Table in Mexico City, 1830-1920
SOUP AT THE DISTINGUISHED TABLE IN MEXICO CITY, 1830-1920 Nanosh Lucas A Thesis Submitted to the Graduate College of Bowling Green State University in partial fulfillment of the requirements for the degree of MASTER OF ARTS May 2017 Committee: Amílcar Challú, Committee Co-Chair Franciso Cabanillas, Committee Co-Chair Amy Robinson Timothy Messer-Kruse © 2017 Nanosh Jacob Isadore Joshua Lucas All Rights Reserved iii ABSTRACT Amílcar Challú, Committee Co-Chair Francisco Cabanillas, Committee Co-Chair This thesis uses soup discourse as a vehicle to explore dimensions of class and hierarchies of taste in Mexican cookbooks and newspapers from 1830-1920. It contrasts soups with classic European roots, such as sopa de pan (bread soup), with New World soups, such as sopa de tortilla (tortilla soup) and chilaquiles (toasted tortillas in a soupy sauce made from chiles). I adopt a multi-disciplinary approach, combining quantitative methods in the digital humanities with qualitative techniques in history and literature. To produce this analysis, I draw from Pierre Bourdieu’s work on distinction and social capital, Max Weber’s ideas about modernization and rationalization, and Charles Tilly’s notions of categorical inequality. Results demonstrate that soup plays a part in a complex drama of inclusion and exclusion as people socially construct themselves in print and culinary practice. Elites attempted to define respectable soups by what ingredients they used, and how they prepared, served, and consumed soup. Yet, at the same time, certain soups seemed to defy hierarchical categorization, and that is where this story begins. iv To Lisa and Isadora Lucas. Thank you for your sacrifices.

This document is not intended for sale; it is available for free dissemination by anybody wishing to support the health of their patients, friends and loved ones. Copyright © 2011 Conner Middelmann-Whitney Zest for Life 2 Introduction Ten years ago I had a close brush with cancer. Diagnosed with cancerous lesions of the cervix, I decided to adopt a healthier lifestyle to support my medical treatment. However, I struggled to find reliable information and practical guidance to help me make the necessary changes. There is more information available now than a decade ago but much of it is confusing and not based on solid medical science. Moreover, while many cancer- prevention books issue theoretical dietary recommendations, few provide guidance on practical ways of applying these in our busy day-to-day lives. This is why I decided to write this book. My first aim is to help you rediscover the guilt-free pleasure of eating healthy, delicious food.
