ISSUE 4 . 2014 PROVENANCE VINEYARDS UNIQUE SOILS AND WINES IN THE HEART OF THE NAPA VALLEY SITUATED IN RUTHERFORD IN THE HEART OF THE NAPA VALLEY, Provenance Vineyards has been growing and producing distinctive Cabernet Sauvignon, Merlot, and Sauvignon Blanc since 1999. Over the last fifteen years the wines have continued to show greater power and complexity, thanks in large part to the outstanding winemaking team. Winemaker Chris Cooney works in close step with the Director of Winemaking, Tom Rinaldi, one of the most highly regarded winemakers in California, and the driving force behind the enormous success and popularity of Napa Valley Merlot and Sauvignon Blanc. PRIOR TO JOINING PROVENANCE, Tom Rinaldi spent over two decades as the head winemaker at Duckhorn Vineyards. It was during this time at Duckhorn that he refined the styles of Cabernet, Merlot, and Sauvignon Blanc that made these wines so famous, and established Rinaldi as one of the reference point winemakers for these varietals in California. This expertise has been translated beautifully to the winemaking at Provenance. Lush Merlot, rich yet elegant Cabernet, and exotic, perfumed Sauvignon Blanc – these are the hallmarks of the Provenance wines. In fact it actually CHABLIS lies closer to Champagne (19 miles) than Beaune (60 miles) and roughly measures 108 square miles. Only Champagne & Alsace have a more northern location. Chablis’s claim to fame is the geological formation of limestone and clay that it shares with parts of southern England. This soil is known as Kimmeridgian, after the Dorset village of Kimmeridge, and is a composition of limestone, clay and fossilized oyster shells. This soil provides the distinctively mineral and flinty notes that all Chablis drinkers adore. Most Chablis is fermented in stainless steel, but older oak barrels are used in some of the Cru wines. Its close proximity to Paris provided the perfect marketplace for this unique style to gain popularity. The great Chardonnay grape is believed to have been first planted here by Monks in the 12th Century and only later made its way south to the rest of Burgundy. The Class structure is the same as Burgundy. In addition to Chablis AOC and Petite Chablis, there are seven Grand Cru vineyards which are all bundled together on one contiguous southwest facing slope of exceptional location and seventeen Premier Cru vineyards that are scattered around on isolated slopes of excellent exposure. Ferenc iscrpnom analizom povoda, uzroka, tijeka i posljedica iseljavanja Slovenaca s područja Slovenije koje je zaposjeo Treći Reicha doprinosi razumijevanju i migracija drugih nacionalnih skupina, posebice srpskog stanovništva na području NDH. Durante la guerra le distillerie sono state bombardate e poi è nata la nuova Repubblica Federale Jugoslava di Tito, il che ha costretto la Luxardo a spostarsi in Veneto. Da lì, è rinato il maraschino Luxardo, ma senza più poterlo produrre da quei frutti specifici cresciuti in Istria. Anche se con dispiacere, per la Luxardo, noi abbiamo pensato di andare a cercare quello che era il maraschino originale, che continua a utilizzare il frutto e il terroir originali. Traditional copper pot stills, aging vats, marasca cherry orchards, warehouses and brand new bottling lines are all pillars that distinguish the Luxardo Distillery still today, as it was in the past. With the arrival of the seventh generation, today three generations work together to continue Girolamo’s legacy. Maraschino Originale 32% alc. by vol. Luxardo Maraschino Originale is still produced according to a special formula created by Girolamo Luxardo in 1821. When Luxardo marasca cherries are harvested at the beginning of every summer, they are put in alcoholic infusion in larch-wood vats together with some leaves and branches of the same trees for up to three years. When ready, both the liquid and the solid parts are distilled in traditional copper pot stills, separating the heart from heads and tails. Only the heart of the distillate is then allowed to mature in ash-wood vats. The last process consists in transforming the distillate in liqueur by adding a simple syrup of water and sugar lowering the ABV to 32%. Crystal clear in colour, the aroma is typical of marasca cherry distillate with strong alcohol spirit and roasted nuttiness, while the taste results smooth but sharp at the same time with hints of dark chocolate, vanilla and orange marmalade.
