July 2014 THE BERKELEY FLYER [email protected] GLORIA’S GLORIOUS PORK, BLACK PUDDING AND CHICKPEA STEW Serves 6 people The Monday Night ‘Guest Chefs’ at The Salutation Inn in Ham, Polly and Craig, have agreed to share some of their recipes with you over the next few months and wanted to kick off with one of their old favourites, inspired by Polly’s godmother Gloria. Polly and Craig cook at The Sally every Monday night and always try to cook something a little bit different from the usual ‘pub grub’, using the best local produce that’s available to them. Ingredients: 3 x TBSP olive oil 2 x diced onions 1 x diced carrot 1 x diced stick of celery 4 x crushed garlic cloves 1 x small handful of chopped fresh thyme leaves 1kg pork shoulder, cut into 3cm cubes 300g black pudding cut into 1.5cm slices 1 glass dry sherry 700ml chicken stock 4 x bay leaves 2 x 400g tins of chickpeas (drained and rinsed) 100g kale (trim off the thicker parts of the stalks and coarsely chopped) 4 x handfuls of chopped parsley Salt and freshly ground pepper Instructions: Warm 1 tablespoon of oil in a large heavy-based saucepan, over a low heat. Sweat the onions with a pinch of salt until the onions are softened and translucent. This should take about 10 minutes. Turn the temperature up to a medium heat. Add the diced carrot and celery to the pan and cook for 5 minutes. Now add the garlic and the fresh thyme and cook for a further minute or so (the smell should be making you salivate by now). Place the vegetable mixture into a bowl and set aside. Pour the rest of the oil (2 TBSP) into the saucepan and warm over a medium-high heat. Brown the pieces of pork in the pan a few cubes at once, being careful not to overcrowd the pan. Each piece of pork should sit on the bottom of the pan, not on top of each other. This is to brown the meat, not to cook it and should take approximately 90 seconds per batch, turning halfway through. Transfer the browned bits of pork to join the vegetables and await next steps. Having finished browning the pork, use the same saucepan to lightly brown the slices of black pudding and set aside, separately from the pork and vegetables. Deglaze the empty saucepan with sherry. To do this, add the sherry to the hot pan and scrape any brown bits from the sides and from the bottom. Be careful not to get spat on! Put the pork and vegetables back in the saucepan along with the stock and bay leaves. Season with salt and freshly cracked black pepper. At Your Service...
