Introducing our BESPOKE HOUSE GIN { Made for us exclusively by No. 209 right here in S.F. }

Our Victorian Dry Gin is made with many classic London dry gin botanicals such as coriander, angelica root, sweet orange peel, cassia bark, liquorice, & juniper of course.

Three delicious signature botanicals differentiate our gin from the rest of the lot: East Kent Golding Hops, English Walnut, and Verbena. WELCOME TO WHITECHAPEL

In the heart of East London…deep beneath the streets…amongst the crumbling ruins of a long abandoned Underground station…something unusual is afoot. The fragrant smell of juniper mingles with exotic botanicals sourced from across the vast British Empire. The hiss of steam punctures the damp subterranean air, and the fires of yield forth the wondrous elixir that has captivated the entire realm: Gin.

Welcome to Whitechapel. A celebration of the wonder of gin. Featuring the largest gin selection in North America, and a carefully chosen cocktail menu that celebrates the history and traditions of this amazing spirit. Far from its reputation as a painfully serious spirit, our menu showcases gin’s versatility and lively approachability with a selection of drinks that are bound to please. So relax, enjoy some fine food and drink, and let us take you back to a time when gin was magic…and drinking gin made you kind of magical, too.

~The Whitechapel Team A DROP OF GIN a poem by Thomas Hood, 1847

Gin! Gin! a drop of Gin! What magnified monsters circle therein! No sole to his shoe, and no brim to his hat; Ragged, and stained with filth and mud, Nor a change of linen ~ except his skin; Some plague-spotted, and some with blood, No gloves, no vest, Shapes of misery, shame, and sin; Either second or best; Figures that make us loathe and tremble, And, what is worse than all the rest, Creatures scarce human, No light heart, though his trousers are thin that more resemble While time elopes Broods of diabolical kin, With all golden hopes, Ghoul and vampyre, demon and Gin! And even with those of pewter and tin; The brightest dreams, Gin! Gin! a drop of Gin! And the best of schemes, The dram of Satan! the of Sin! All knocked down, like a wicket by Mynn. Distilled from the fell Each castle in air Alembics of hell, Seized by giant Despair, By guilt, and Death, No prospect in life worth a minnikin pin; his own brother and twin, No credit, no cash, That man might fall No cold mutton to hash, Still lower than all No bread ~ not even potatoes to mash; The meanest creatures with scale and fin. No coal in the cellar, no in the binn ~ But hold; we are neither Smashed, broken to bits, Barebones nor Prynne, With judgments and writs; Who lashed with such rage Bonds, bills, and cognovits The sins of the age; distracting the wits, Then, instead of making too much of a din, In the webs that the spiders Let Anger be mute, of Chancery spin ~ And sweet Mercy dilute, Till, weary of life, its worry and strife, With a drop of Pity, the drop of Gin! Black visions are rife of a razor, a knife; Of poison ~ a rope ~ “louping over a linn.” Gin! Gin! a drop of Gin! When, darkly, Adversity’s days set in, Gin! Gin! a drop of Gin! And the friends and peers Oh! then its tremendous temptations begin, Of earlier years To take, alas! Prove warm without, but cold within, To the fatal glass; And cannot retrace And happy the wretch that does not win A familiar face To change the black hue That’s steeped in poverty up to the chin; Of his ruin to “blue” ~ But snub, neglect, cold shoulder, and cut While angels sorrow, and demons grin ~ The ragged pauper, misfortune’s butt; And lose the rheumatic Hardly acknowledged by kith and kin, Chill of his attic Because, poor rat, By plunging into the Palace of Gin! He has no cravat, A seedy coat, and a hole in that! Volume I. No. I

The fermented distiller’s beer comes in at the top of the rectifier, where it is warmed by the heat of the rising vapor. once heated, it enters the top of the an- alyzer. As it descends, the steam extracts the alco- hol and aromas and takes them to the bottom of the rectfier. It starts to rise, and gradually cools. When it is almost at the top, the desired quality and grade of alcohol is extracted for further processing.
