Sauce and Greek Wrap Kitchen Tools: Shopping List: • Box Grater 1 medium 10-ounce cucumber • Measuring cups 18 ounces of plain Greek yogurt • Measuring Extra-virgin oil (enough for 2 tablespoons) Spoons 0.5-ounce package of fresh • Chef's Knife 1 lemon 1 clove Optional: (enough for 1/2 teaspoon) • garlic press • cheese cloth Shopping List for the Wrap: • 1 medium 10-ounce cucumber citrus juicer 1 red bell pepper 1 small container of cherry tomatoes 1 red 1 small can/jar pitted ; kalamata olives suggested 6 ounces cheese Choice of flatbread such as tortillas or bread

Optional: Lettuce or greens The Sauce: Measurements • 2 cups grated cucumber • 1.5 cups plain Greek yogurt • 2 tablespoons extra-virgin • 2 tablespoons chopped fresh dill • 1 tablespoon lemon juice • 1 medium clove garlic, minced • ½ teaspoon salt Instructions 1. Wash your hands with soap and water, then gather all your equipment and ingredients and put them on a counter. 2. Wash and dry all produce. 3. Grate one cucumber and measure 2 cups (o need to peel or seed the cucumber). Working with one big handful at a time, lightly squeeze the grated cucumber between your palms over the sink to remove moisture. Transfer the squeezed cucumber to a serving bowl, and repeat with the remaining cucumber. 4. Add the yogurt, olive oil, herbs, lemon juice, garlic, and salt to the bowl, and stir to blend. Let the mixture rest for 5 minutes to allow the flavors to meld. Taste and add additional chopped herbs, lemon juice, and/or salt, if necessary. 5. Leftover Tzatziki keeps well in the refrigerator for about 1 week.

The Wrap: Measurements • 1 cup diced cucumber • ½ cup diced bell pepper • ½ cup halved tomatoes • 1/3 cup sliced red onion • ¼ cup pitted, chopped olives • ½ cup cheese, crumbled • 1 cup tzatziki sauce • Optional lettuce or greens • Flatbread wrap Instructions 1. Wash and dry all produce 2. Peel cucumber and cut into 1/2-inch dice 3. Clean bell pepper of seeds and cut into 1/2- inch dice 4. Cut cherry tomatoes in half 5. Peel, quarter and thinly slice red onion 6. Coarsely chop olives 7. Lay out flatbread 8. Spread tzatziki sauce on flatbread 9. Top with vegetables in the middle 10. Add cheese and lettuce

11. Fold in ends of the flatbread, wrap, and enjoy!
