Made at Shepherds Purse Artisan Cheeses, Thirsk. This golden cheese is eye catching on a cheese board. C / V / P / UK Colston An intensely rich and creamy stilton with £4.44 200g £8.88 400g Bassett deep complex flavours. It is one of the last Stilton PDO remaining hand-ladled Stilton’s produced. This blue veined Italian soft cheese is wonderful for a cheeseboard of adding to a meal. The Keen family are now fifth generation cheesemakers and have been making Unpasteurised Keens Cheddar at Moorhayes Farm since 1899. Keen’s unpasteurised cheddar is a fantastic award winning British . Applewood First produced in 1965 in Ilchester, Somerset £4.16 200g £8.32 400g smoked Applewood is made using a traditional hand- Cheddar turned farmhouse Cheddar method, with a delicate smoky flavour and a lovely smooth texture, all finished with a dusting of paprika for good measure. A firm favourite for eating or cooking with. Cornish Yarg tends to have a leaf fluffy textured centre with lactic flavours and a buttery creamy breakdown under that beautiful earthy edible rind. Made in the Ile de France region just outside Paris since the middle ages, a cheese that’s steeped in royal history and perfect for any cheese board. C / UP / France

Baron Bigod The UK’s first unpasteurised brie and by £7.06 200g £14.12 400g Brie (and by golly do they do a good job of it. Baron Bigod god its good) is produced on Fen Farm in Suffolk by Jonny & Dulcie Crickmore, its produced from unpasteurised/raw milk from their own Montbeliarde herd using the recipe they have from a French Cheesemaker. Baron Bigod is named after the 12th century Earl of Norfolk who owned the land the farm now stands upon. The Earl was a Frenchman who came to Norfolk following the Norman Invasion, a highly fitting name for a brie style cheese. Baron Bigod is a creamy, white bloomy-rind beauty, it has a smooth silky texture and a golden , with long lasting warm earth, farmyard and mushroom flavours. C / UP / UK Delice de A decadent triple-. Rich and £4.84 200g £9.68 400g Bourgogne full-flavoured with a smooth, velvety, melt- in-the-mouth texture. Produced in the Burgundy region, France. C / P / France

Ribblesdale A hard goats cheese with a firm but creamy £7.28 200g £14.56 400g Mature Goat texture. Aged for three months developing an interesting taste profile offering nutty and slightly caramelised milk flavours with a goaty taste nearer to the rind. A well- balanced Yorkshire goats cheese. Produced by Iona Hill and her team at Ribblesdale Cheese Company in the heart of the Yorkshire Dales. G / P / V / UK

King Richard King Richard III is a traditional, cloth-bound, £5.58 200g £11.16 400g III cows’ milk cheese made to a pre-war recipe Wensleydale for Wensleydale. It’s the only artisan produced Wensleydale available. It's moist and creamy, with a honeyed flavour and lower acidity than modern Wensleydale and a world away on flavour. C / P / V / UK

Reblochon Unique to the , Reblochon is a nutty £6.52 250g £13.04 500g PDO flavoured cheese with an unctuous smooth texture and an attractive rind. Its origins are thought to date back to the 13th century and so the story goes it’s the original tax avoidance cheese. C / UP / France Valencay Mellow and savoury on the palate this four- £7.84 Each Pyramid PDO sided, truncated pyramid from Berrichon (220g) goat’s raw milk is a true beauty and one to try. According to history the shape was changed by Napolean’s anger after a disastrous campaign in Egypt, he saw his favourite cheese and chopped the top off with his sword. Made by allowing the curd to drain in a mould before removing it to be salted and covered in charcoal ash. Produced in central France. G / UP / France Vacherin Mont D’or PDO £5.64 200g £11.28 400g Mont D’or Made from the rich, unpasteurised milk of PDO alpine pastures, this cheese has a melting, voluptuous texture. Produced only between Pre-Order September – March when cows return to Only their higher pastures. A decadent cheese rarely seen locally. Expect hints of mushroom and rich creaminess with a fragrance dominated by the aroma of the spruce band. C / UP / France Langres Made in the Champagne region of France £6.82 Each this little beauty takes its colour from being washed throughout its maturing in Marc de Bourgogne Brandy. Rich and creamy with a melt in the mouth texture, a beautifully complex cheese. This cheese is only turned once during its maturation which creates a perfect little dent in the top which is traditionally used to serve a tot of champagne in. What’s not to love? C / UP / France

Munster A cheese with its own museum (La Maison £4.60 200g £9.20 400g du Munster) this famous cheese has been produced since 7th century in Alsace. Originally produced by Benedictine Monks forbidden from eating meats they wanted something powerful and meaty to substitute and created this epic cheese. A soft, raw cows milk cheese with a washed rind, it has a pungent smell when ripe, with a nutty, spicy flavour. C/UP/France

Taleggio A semi-soft rich washed rind cheese from £4.52 200g £9.04 400g Italy’s Lombardy region. It is characteristically aromatic yet mild in flavour and features tangy, robust notes with a fruity finish. The combination of the soft texture, pungent aroma, and buttery flavours has proven to be addictive especially when spread on fresh crusty bread. Taleggio pairs nicely with Italian wines, as well as fruits and nuts. C / P / Italy Gruyere A hard mountain cheese made using raw £4.22 200g £8.44 400g milk in the Alp’s. It has a smooth, medium- hard texture and offers a nutty flavour with hints of orchard fruits. C / UP / France A raw milk Swiss mountain cheese with a £3.52 200g £7.04 400g firm texture and buttery flavour. Delicious when used in cooking or traditionally cooked on a raclette machine and served hot and melted over new potatoes and accompanied with a selection of charcuterie, cornichon and salads.
