6.00 pm: Guided tour of Mende and his historical centre Administrative centre of Lozère, Mende, is the former capital of Gévaudan. Its massive church, built during the 14th century (the tower was made in the 16th century) owned at that time the highest chruch town of Christianity: the Non Pareille. Destroyed in 1579 during religious wars by Protestant troops led by captain Merle, only the clapper remains nowadays, 2,15m high.
Notre-Dame gate, from 14th century, has always overcome violent rises of the Lot thanks to its wide central arch opening.

12.00 pm: Lunch in the cheese dairy Le Fédou Fédou is a trademark of ewe cheese. These rustic animals graze on the big spaces of the Causse Méjean and the farmers deliver their unpasteurized milks cooled at the cooperative which mixes them, warms them for the renneting. The obtained curd cheese is put in small molds. The cooperative cheese maker of Hyelzas (municipality of Hures-la- Parade) produces this brand of cheese which resumes the principle of elaboration of the ancestral cheese appellation pérail of the region of Causses.

1.30 pm: Visit of the Ferme Caussenarde d’Autrefois The museum “La Ferme Caussenarde d' Autrefois" tells the life of the residents of the Causse. Caussenards shaped the landscape during centuries with few resources. In an outstanding site, typical architecture, tools, machines and furniture, are presented as if time had stopped.
