The post-prohibition House-made Vanilla Vodka, Espresso, definition of a martini Brovo Chocolate, Moody Tongue Cream, expanded to include gin Mole Bitters or vodka with a splash of vermouth, shaken or stirred. In the early 1980’s, the definition changed yet again to include any libation put in a “martini glass.” It’s this 1980’s definition that we are paying homage FYI: to and elevating. The original 1870’s Martini consists of London Dry Gin Dry, French vermouth, and a few healthy dashes of orange bitters. Classically stirred (NOT SHAKEN!) and served up, this bartender favorite is always available upon request.

For the better part of 80 years, what we have come to know as the Old Fashioned was actually simply named “cocktail.” The definition of an old fashioned (and a cocktail) is: spirit, sugar, and bitters. Pink Squirrel Rye OLD FASHIONED $14 Gin, Créme de Noyaux, Créme de Cacao, Lemon, This is the original whiskey used for most classic cocktails. This pleasantly spicy Egg white, Spiced Hemp Syrup, Peychaud’s spirit is defined as having at least 51% Rye in the mash bill, made in America, and aged in new American oak. Bartenders tend to veer towards Rye while building cocktails for its full flavor and surprising versatility… not for the faint of heart. Tequila Sunrise bourbon OLD FASHIONED $14 Tequila, Grenadine, Kina La’Avion, Blood Orange, Lime Legally defined as containing at least 51% corn in the mash bill while being produced in the U.S. and aged in new American oak, Bourbon is inclined to be a sweeter, more unctuous version of its spicy cousin. This version of whiskey tends to be more approachable and balanced. If you’re a novice to whiskey, this is as New York Sour good a place as any to begin. Brandy, Lemon, Demerara, Eggwhite, Chai Bitters, Sangiovese mezcal OLD FASHIONED $14 The less famous of the two major agave based spirits, Mezcal derives most of Penicillin its flavor from being smoked in a pit. Made from 30 different varieties of agave, Highland Park Magnus, Lemon, Honey, Ginger this spirit definitely provides a depth of flavor and is perfectly suited for a spirit- forward cocktail such as an old fashioned.
