Tasting Notes By: Master Sommelier Christopher Bates #71 TASTING NOTES BY: MASTER SOMMELIER CHRISTOPHER BATES Red core, see through and a browning rim. Thick tears. Herbal, mineral, savory notes, along with ripe red fruit and orange peel notes. Dried strawberries, red plums and a slight cranberry tartness. Grilled lavender, thyme, rosemary notes, dusty mineral, sanguine notes and a crushed pepper salami note. TASTING NOTES BY: ADVANCED SOMMELIER BRANDON FORD Ruby with orange rim. Stewed and dried red fruit (strawberry and raspberry), plum, blackberry. Lavender, herbes de provence, garrigue, savory herbs. Charcuterie notes, dried orange peel, leather, forest floor, crimini mushroom, gravel. Lush, intense mouthfeel. Sweetness: Dry Tannin: Medium Alcohol: High Acid: Medium Oak: old world or new? climate? grape? country? place WINE DETAILS: Winery: Olivier & Lafont Cuvee: Jocunditae Grape: 70% Grenache, 20% Syrah, 10% Mouvedre Country: France Regions: Gigondas Vintage: 2015 Alcohol: 15% Elevage: The grape varietals are all vinified Separately and aged in concrete tank Winemaking: Two friends, Baptiste Olivier and Gerald Lafont started making wine Together in 2011 – so make sure to Drink their wine with a good friend! NOTES : Grenache is a thin skinned grape that oxidizes easily. So, we get see through red wines, with browning around the rim, usually red, but, blending grapes can cause this to appear purple. I expect these wines to be ripe, almost new world like, but, all red fruits (strawberries), and most notably, the amount of savory, spicy, peppery and grippy minerally notes ground this as a ripe style from the old world. Feel how the ripe lushness disappears and the grippy tannins start to tighten on the palate! Retail Price: $32.00 Click Here to Reorder at F.L.X. #6 TASTING NOTES BY: MASTER SOMMELIER MAX CAST Moderate intensity of aroma with ripe yellow pear, fresh Meyer lemon, quince zest, golden delicious apple, and notes of honey and button mushroom (possibly signs of botyrtis). The wine is dry, full-bodied, with an oily texture. There is phenolic bitterness as well. TASTING NOTES BY: F.L.X. TABLE’S MICHALIS KALAMPOUKAS Notes of ripe peach, lemon cream and apple. There is Chamomile-like floral quality, mushroom and wet wool notes with some possible botrytis from the notes of dried honey and ginger. WINE DETAILS: Winery: Famille Hugel Cuvee: Classic “Hugel” Grape: Pinot Gris Country: France Regions: Alsace Vintage: 2017 Alcohol: 14.5% Elevage: No New Oak Other: Slow, temperature controlled fermentations NOTES : Alsatian Pinot Gris is very different from its Italian counterpart Pinot Grigio; it is even slightly more aromatic. This could be confused with Marsanne/Roussanne blend form the Rhône, but those have slightly more lifted aromatics and are often aged in oak. Once you have narrowed down moderate aromatics, medium plus body, oily texture, medium acid, there are very few places to go, except Alsatian Pinot Grigio. A great blind tasting example that what is not there also can lead the way to a conclusion. Retail Price: $25 Click Here to Reorder at F.L.X. • Diverse International Pairings for Every Chablis Wines
Press release – Chablis Diverse International Pairings for Every Chablis Wine Just one grape from one region produces a spectacular range of wines, from Petit Chablis to Chablis Grand Cru, perfect for pairing with seasonal international dishes Ask any sommelier to list the most food-friendly wines, and he or she will invariably name Chablis. An expression of pure Chardonnay centered on the village of the same name, in northern Bourgogne, Chablis’ bright acidity, minerality, and balance all make these wines excellent matches for food. But even though Chablis is made from one grape in one region, its four appellations – Petit Chablis, Chablis, Chablis Premier Cru, and Chablis Grand Cru – create a wide range of wines, from fresh and easy-drinking to rich and complex. Use this array to take a palate journey around the world, pairing international dishes with Chablis wines and hitting the right note every time. A precise combination of factors comes together in Chablis to create some of the world’s most distinctive white wines. Nestled about 2 hours southeast of Paris, Chablis is located at the northern limit of still wine balance, the cool climate combining with the region’s characteristic clay-limestone soils to create the precise balance of acidity, minerality, and full flavor that these wines are known for. Within Chablis’ 13,400 acres, vineyards are classified into four appellations according to location, soil, and slope. In this special region, slight nuances make a remarkable difference in style, from the cooler vineyards of Petit Chablis AOC located mainly around the perimeter of the region and also above the Chablis Grand Cru hills, to the unparalleled exposure and rich, fossil-filled Kimmeridgian soils in the sloped vineyards on the hill above the Serein River known as Chablis Grand Cru AOC.

After completing a Masters Degree in Finance in 2001, Frédéric went back to college for a Sommelier diploma and started his career as a Burgundy wine broker. In late 2012, Frédéric and Elaine were fortunate to take over 25 acres of old vines in Faugères, organically farmed for twenty years and deeply rooted in schist soils.

  • Fifth Annual PA Sommelier Judgment Reveals Refreshing Results Albariño, Sauvignon Blanc and Cabernet Sauvignon Score Top Marks in 2021 Blind Tasting
! Fifth Annual PA Sommelier Judgment Reveals Refreshing Results Albariño, Sauvignon Blanc and Cabernet Sauvignon Score Top Marks in 2021 Blind Tasting Chadds Ford, PA - On May 24, sommeliers, beverage directors and other notable industry representatives from the region’s top wine programs convened for the fifth annual PA Sommelier Judgment, a blind tasting of vinifera wines produced in Pennsylvania using grapes grown in the state. The panel tasted an array of Pennsylvania wines from all regions of the commonwealth, sharing its marks following two extensive tasting rounds. Twenty-two wines from 13 individual Pennsylvania wineries were recognized. The ten highest scoring wines featured five white wines, three red wines, one rosé, and for the first time in the Judgment’s history, a sparkling wine made in the French pétillant naturel (“natural sparkling”) style. Albariño, Sauvignon Blanc and Cabernet Sauvignon were among the top varietals. This was the second year that an Albariño finished among the best wines. The complete breakdown of top wines and honorable mentions are listed below. The PA Sommelier Judgment is an initiative founded by the Pennsylvania Winery Association (PWA). For the second year, the judgment was held outdoors in Delaware County, Pennsylvania to provide guests with an opportunity to safely gather in person. Since 2017, the PWA has partnered with Scott Zoccolillo, wine director at Del Frisco’s Restaurant Group, to organize the annual event. “It was inspiring to see wineries submitting for the first time this year," stated Zoccolillo. "Local wineries are realizing the amazing potential of white wines in Pennsylvania's climate and geology, especially with Albariño and Grüner Veltliner," he added.

  • 10 Reasons Sommeliers Should Enter the Wines of South Africa Sommelier Cup by David Clarke, Vice-Chairman of the South African Sommeliers Association –May 2016
10 reasons sommeliers should enter the Wines of South Africa Sommelier Cup By David Clarke, vice-chairman of the South African Sommeliers Association –May 2016 1. Chenin Blanc – no other country has more planted than South Africa. The range of wines it produces is dazzling: from Craig Hawkins’ ethereal wines from the Swartland to Ken Forrester’s rich FMC from Stellenbosch and all the others in between, it is clearly uniquely South African now, having been here for centuries. 2. Syrah/Shiraz – whatever you know it as, South Africa is starting to produce excellent, terroir- specific examples. Stylistically speaking, it lies between the stereotypical ‘French’ and ‘Australian’ styles, giving it an authentic South African flavour. The best wines (for me) show a ‘fynbos’ (indigenous vegetation) character – like the ‘garrigue’ in France or ‘eucalyptus’ in Australia. 3. Brandy – why no one outside South Africa seems to know about its brandies is a huge shame. A long history of production ensures the products in bottle are mature and balanced. Seriously underrated. 4. Gin – so many boutique gins distilled in South Africa have hit the market that it is hard to keep up but lots of fun! Many use fynbos (see point 2) in production, making the gins super- local. 5. Cinsau(l)t – doesn’t matter if you use an ‘L’ or not – is super delicious. Effortlessly medium- bodied (similar in a way to Gamay), Cinsaut has started having somewhat of a resurgence and the results are juicy, crunchy and freeesshhh. 6. Braai – the South African name for barbeque. They love it! You will too.

At the time, the eastern slope of the Santa Lucia Mountains was unknown but with its well-drained soils, Pacific winds and fog, and warm summer days, it was a clear bet that Pinot Noir would grow well.
