Stuffed peppers are among the most loved Bulgarian dishes and they are prepared all over the country, despite the fact that the recipes differentiate in the various regions of Bulgaria. The dish is prepared by flavorful fresh and dried peppers, and the foreign guests of the country like it very much.

The most significant part of the recipe is the filling. It can be prepared with mean, as well as without - only by and . Meat is usually a minced mixture of veal and pork meat; depending on the preferences it can be made only of one of them. In some regions peppers are baked, and in others they are boiled; and spices are usually , savory, salt, etc.

Peppers can be green or red, as red peppers are more flavorful and sweet and give the dish a specific taste.

Prepare 8 large peppers - green or red, dried or fresh, washed, cleared of their seeds and stems. For the filling: 250 g minced meat, 1 glass of rice, 2 tablespoons of sunflower oil, 1 onion, 1 carrot, 1 tomato or tomato paste, 1 teaspoon of paprika, salt and pepper according to your preferences, 1 tablespoon of flour.

1. Fine chop the onion.

2. Slice the carrots into small cubes.

3. Heat up the frying pan with the oil.

4. Stew the onion.

5. Add the carrots and continue stewing.

6. Add salt.

7. Mix the minced meat with the vegetables.

8. Add tomato paste.

9. Stir well and add the rice in the mixture.

10. Add paprika.

11. Finally you can add pepper or other of your choice.

12. With the help of a spoon, fill the peppers with the ready filling.

13. Dip the peppers in flour, in order to seal them.

14. Arrange the peppers in a clay vessel and pour them with some water.

15. Bake the dish in the oven for about 40-50 minutes.

The ready stuffed peppers can be served in their own sauce or another sauce of your choice. They are most often garnished with Bulgarian yogurt or sauce, prepared by yogurt, flour and an egg.
