The sterilization process is carried out for 60 minutes with a Fo value of 9,141 minutes. Storage was carried out for 8 weeks at 3 temperature conditions namely 35, 45, and 55 ° C. Storage temperature affects changes in physicochemical and sensory quality of the product. The higher the storage temperature changes in food quality are faster. Based on the results of sensory and physicochemical analysis, critical parameters that have the fastest reaction rate are color, aftertaste and aroma.
