Greetings!

I’m looking forward to our upcoming class and to meeting all of you. Below, you’ll fnd info on what you need to get ready before class, so that we’re ready to start the learning and fun right on time.

CLASS DETAILS Smoky Class

BEFORE CLASS ● clear 1 - 2 feet of counter or table space to work on

ITEMS TO HAVE ON HAND Smoked Kit (included with class)

Tools ● (or jar/large travel mug with lid) ● jigger (or measuring cup with ounces marked) ● spoon (or any long spoon, or chopsticks) ● cocktail strainer (or fne mesh strainer) ● lots of ice ● rocks glasses ● (coupe/martini style)

Ingredients for alcoholic drinks ● sweet Vermouth: (recommended: Carpano Anitca, Cinzano, or Martini & Rossi) ● rye (recommended: Rittenhouse, Old Overholt) OR Bourbon (recommended: Elijah Craig, Maker’s Mark) ● gin (recommended: Beefeater, Hendrick's, Ford’s, Plymouth) ● Campari ● lemon, egg white or aquafaba for non-alcoholic drinks ● black tea (your favorite) ● honey or agave (make before class, see recipe in “prep” section, below)

Note: Only chickpeas will work, no other type of peas or beans. You’ll whip it into a froth in class.)

Prepare before class ● chill cocktail glasses (or any kind of glass if you don’t have cocktail glasses) in your freezer (30 mins - 2 hrs) ● squeeze lime juice ● squeeze lemon juice ● make sure you have plenty of ice for the non-alcoholic Manhattan only (see below) ● brew black tea and let cool to room temperature ● honey syrup (recipe: 3 parts honey or agave and 1 part water, simmered and cooled.) You’ll only need 1-3 tsp for each drink, but it’s hard to make such a small batch and nice to have on hand, so make a bigger batch, if you like.

RECIPES FOR CLASS Smoked Reverse Manhattan ● 2 oz sweet vermouth ● 1 oz rye or bourbon ● smoked bitters from the Smoked Cocktail Kit ● chilled glass non-alcoholic version Black Tea Manhattan ● black tea (room temperature) 1 tablespoon black tea leaves steeped in 16 oz water for 24 hrs and chilled ● honey or agave syrup 1-2 barspoons to taste ● .5 oz lemon juice ● Lemon, optional for garnish

Smokegroni ● 1 oz gin ● 1 oz sweet vermouth ● 1 oz Campari ● rocks glasses

Smoked Quebecois ● 2 oz bourbon ● 1 oz fresh lemon juice ● .75 oz smoked maple syrup (any kind), you can substitute with regular maple syrup ● 1 egg white or 2 T aquafaba (for a vegan option) per drink non-alcoholic version ● 1 oz fresh lemon juice ● .75 oz maple syrup ● 3 oz seltzer or tonic water, ● 1 oz raw egg white or aquafaba (for a vegan option).
