Ingredients 300 g chickpeas out of a can 1 small onion, finely chopped (optional) 1 medium tomato, finely chopped 1 tsp cumin powder 1 tsp chaat masala 50 g pomegranate pearls 5 tbsp mango chutney 2 g coriander leaves, chopped
Method
1.Remove the chickpeas from the can and wash them under running water. 2.In a large bowl add the drained chickpea and everything else under ingredients list. Give it all a good mix. 3.This salad tastes great at room temperature and is perfect to be carried along for lunch/picnic meals.

Cook Time: 20 min Resting time: 30 min Serves: 4 people Chicken Wrap with Chutney CHICKEN
Ingredients 500 g chicken filet, in cubes 4x4cm (alternate - halloumi) 1 tsp garam masala 1/2 tsp salt 2 tbsp sunflower or olive oil 4 whole wheat durum wrap 4 tbsp mango chutney 2 avocado slices 1 small onion, finely sliced (optional) 200 g Goat cheese (geitenkaas) cubes 3 g coriander leaves or parsley
Method
1.Marinate chicken filet or halloumi with garam masala and salt for 30 mins. Later add oil and grill the chicken for 5-7 mins each side. 2.Place a wrap on a plate, spread 1 tbsp mango chutney inside. 3.Add avocado slices, onion, grilled chicken, goat cheese cubes and some fresh herbs. 4.Enjoy this warm or at room temperature.

Cook Time: 15 min Easy Crostini with chutney Serves: 4 people VEGETARIAN
Ingredients 1 french baguette 100 g cream cheese 8 tbsp tomato dates chutney 3 tbsp sunflower seeds or walnuts, chopped 2 g fresh basil leaves, sliced
Method 1.Preheat the oven to 220C for 8 mins. 2.Slice the baguette with 1 cm thickness. Place them on a baking tray and bake this for 4 mins. 3.Remove and smear cream cheese on each slice and top it with tomato and dates chutney. 4.Garnish this with sunflower seeds or chopped walnuts and some fresh basil leaves.
Tip: This recipe can be used with goat cheese and onion chutney as well.

Cook Time: 25 min Traditional Latkes with a twist Serves: 10 pieces VEGETARIAN
Ingredients 320 g potato (roseval) 1 medium onion, finely chopped 1 large eggs 40 g all purpose flour 1/2 tsp salt 1 tsp baking powder 1/2 tsp garam masala 1/2 tsp black pepper, freshly ground 100 ml sunflower oil for frying
Method
1.Grate the potatoes and place them in a cheese cloth and squeeze water as much as possible. Place it back on a bowl. 2.Add onion, eggs, flour, salt, baking powder, garam masala, black pepper to it and give it a good mix. 3.Heat oil in a pan. Add a spoonful of the batter in the pan and flatten it using the spoon. Fry it for 5 mins on medium - low heat on each side. This makes it crunchy. Remove it on a kitchen paper to soak extra oil. 4.Serve it warm with tomato dates chutney.

Cook Time: 25 min Tandoori Feta Kale Kebabs Serves: 8 pieces VEGETARIAN
Ingredients 150 g Feta 100 g Kale, finely chopped 70 g rolled oats 1 tsp tandoori masala 1 tsp fresh lemon juice 60 ml sunflower oil for shallow frying
Method
1.Crumble the feta in a bowl. Add the chopped kale and massage it well. This releases water from the kale. 2.Add rolled oats, tandoori masala and lemon juice. Give it a good mix. 3. Divide the mixture into 8 equal portions. Roll it into a small ball and flatten it between palms to a 5-6 cm diameter. 4.Heat oil in a pan. Add the kebabs on a medium heat and cook for 3-4 mins per side. Remove this on a plate with kitchen paper to soak extra oil. Let this sit for 10 mins before serving it with onion chutney.

Cook Time: 25 min Cheesy Onion Toastie Serves: 4 people VEGETARIAN
Ingredients 8 sourdough bread slices 6 tbsp caramelized onion chutney 4 slices of cheddar 4 slices of old Gouda or Rotterdam cheese 1 tsp freshly ground black pepper 8 tsp butter to grill the toastie
Method 1.Take 1 slice of bread and spread 1.5 tbsp of caramelized onion chutney across the slice. Place one cheddar slice and Gouda slice on it. Add some freshly ground black pepper on it. 2.Put the other slice on top of it. 3.Add 1 tsp butter on the panini maker on the inside and 1 tsp butter on the slice on top. Grill it for 4 mins till it is crunchy and enjoy this warm.
