Spread in 2 Tbsp. Green Onions 3 Tbsp. of crumbled bacon dish top with layers of chili and cheese. Microwave Mix first 5 ingredients, spread in 8x8 glass pan. Sprinkle bacon 60 seconds until cheese bubble. Top with chopped on top. Bake 350˚ 15 minutes. Great with Fritos or crackers. tomatoes, onions, black olives and sour cream. Serve with Tortilla Chips or Fritos. Papi’s Devilish Eggs Papi’s Spicy Sausage Stuffed Mushrooms 12 large hard boiled eggs 2 Tbsp. cream cheese 3 Tbsp. Papi’s Sauce 8 oz. cream cheese 1/3 c. mayonnaise 1 Tbsp. Papi’s Sauce 2 cartons fresh mushrooms 1 lb. mild sausage 2 tsp. Dijon mustard Remove stems. Combine Papi’s Sauce, cream cheese and Slice eggs in half lengthwise. Remove yolks and mash with sausage. Spoon mixture into mushroom caps. Place on soften cream cheese. Combine next 3 ingredients, salt and broiler pan. Bake uncoved at 350˚ for 15 minutes. Broil 3 pepper to taste. Add filling to plastic sandwich bag snip off one corner, pipe into the egg shells. Garnish with tamed minutes to brown top lightly if needed. jalapeno and chopped chives. Cover and Chill. Papi’s Zippity Corn Dip Papi’s Dyn-o-mite Pimento Cheese 4 Tbsp. Papi’s Sauce Pork Tenderloin, Chicken, Beef Marinate 2 cans Mexican Corn drained Mix in processor 1 c. mayonnaise 8 oz. cream cheese 3 Tbsp. Papi’s Sauce ¼ c. extra virgin olive oil 14 oz. Cheddar cheese 3 Tbsp. Papi’s Sauce ¼ c. ketchup ¼ c. soy sauce 1 c. sour cream 4 oz. diced pimiento, drained 2 tsp. Italian herbs 2 tsp. seasoning salt Combine cream cheese Combine all ingredients. Bake 2 cloves fresh garlic, smashed mixture with 1 ½ c. grated 350˚ for 20 to 30 min. Serve med. The transformation of milk into cheese is one of the most extraordinary of all human discoveries. No one knows exactly when, but it is believed to have happened at about the same time as the domestication of animals such as goats in the fertile crescent region of the Middle East, around 6,000-7,000BC. It is unknown when the first cheese was made, but the legend goes that a nomad was carrying milk in a pouch made of a calf’s stomach lining. Over time (and at the right temperature) the milk fermented. Not wanting to waste the chunky milk, the nomad tried it and liked it. This legend about the first cheese is not unlike that of the first sourdough leavened bread. The components of Cheese: Milk: Made up of water, fats, proteins, bacteria, lactose (a sugar), minerals and more. Unpasteurized milk also contains the enzyme lactase, which helps you digest milk. It is one of the oldest restaurants in Sofia well preserves its history, following up its tradition to offer traditional Bulgarian dishes prepared with Bulgarian products, most of which are own production. Initially the restaurant was known as Select tavern. It opened its doors in 1926 and quickly became appreciated by Sofia intellectuals and bohemians alike. Its regular clientele consisted of notable people such as Angel Karaliychev, Sirak Skitnik, professor Aleksandar Balabanov, and the actress Elena Snejina. Elin Pelin, who was also a regular visitor of the establishment, gave its poetic name Pod Lipite, a name that is used with pride to this day. In the early 30s, Dora Gabe moved into the rental quarters above the restaurant and the impromptu literature readings quickly relocated from her home into the restaurant. This pub was a part of the daily grind of those who occupy their deserved indisputable place in Bulgarian classics nowadays.     Leader Guide SHOPPING & TASTING THE MEDITERRANEAN DIET CHEESE TASTING “Age is something that doesn’t matter, unless you are a cheese.”- Billie Burke Cheese tastings allow shoppers to try cheese they might not choose on their own. Talk with your store’s deli or prepared foods manager to decide on the cheese to use for the tasting, any accompanying foods you’ll provide in the tasting, and how to best merchandise the cheese used in the tasting. Setup ✴ Cut cheeses into small cubes, wedges or slivers. ✴ Create stations for each cheese being tasted by arranging the samples around ready-to-purchase blocks of that cheese so customers may purchase cheeses they like after the tasting. ✴ Include napkins, toothpicks, and any chosen food accompaniments at each station. Tasting Steps ✴ Provide participants with the cheese tasting handouts and a pen or pencil. ✴ Have someone (you or your cheese manager) instruct participants on how to taste the different cheese samples and answer any questions they may have. ✴ After successfully tasting one cheese, have participants move to the remaining stations to complete the tastings. It’s best to have participants begin with the mildest cheese and progress to the strongest. Supplies List ✴ Three to four different varieties of cheese cut into small pieces. You can hold region-specific events using cheese from a certain area (French, Italian, Spanish, American, etc.); tastings based on cheese types (soft, hard); or any cheese you wish to promote.
