mozzarella: a fresh, soft textured creamy with porcelain-white color and delicate taste; when cut it produces a fluid with the aroma of fresh milk. It is made from either buffalo or cow milk produced in the southern Italian regions of Campania and Puglia. It is served fresh, at room temperature.

bufala: the most prized fresh mozzarella made from milk in a protected area around Napoli in the Campania region.

bocconcini: ‘small mouthfuls’ buffalo milk mozzarella.

treccia: jumbo sized ‘plait’.

affumicata: large ‘smoked’ buffalo mozzarella. : means ‘buttered’ in Italian, it is a fresh artisanal cheese from Puglia, made from cow milk mozzarella and cream with a solid silky outer shell and soft creamy center.

burratina: small sized burrata. fior di latte: round shaped mozzarella made from fresh pasteurized cow milk with a richly sweet milk flavor.

stracciatella: literally meaning ‘little rags’, a mix of shredded cow’s milk mozzarella and fresh cream; delightfully rich.

nodini Pugliesi: hand made juicy ‘little knots’ mozzarella from fresh pasteurized cow milk; a specialty from northern Puglia.
