The most notable of these is Vin Jaune (yellow wine) which is aged under flor yeast, similar to sherry from 2-6 or more years. The whites are made from Chardonnay and/or Savagnin and display similar nutty, characteristics, to sherry (also aged under flor yeast), but with the addition of ‘apple-ish, orchard’ notes, cumin or other spices. These are intense wines that can age for many years and are best enjoyed with food. DOMAINE TISSOT produce thier wines using bio-dynamic viticulture and are based in the Arbois appelation. They are best after some time in the decanter and offer aromas of fruits, nuts, flowers, spices and sherry characters. The palate is very different to many other wines and offers a lemon skin, mealy character with great acidity. Try with Oysters 2011 TISSOT ‘Selection’ Chardonnay-Savagnin - Arbois 80 DOMAINE BERTHET-BONDET was established in 1984 and crafts wines, respectful of terroir and tradional winemaking methods. They are amongst the most highly regarded and sort after wines in France and are produced from thier own vineyards within the Jura region. The Catering Team here at St John’s College tasted many of the new wines for the list in March 2017, to make sure they fall within our quality expectations. Some of the wines have been tasted against some of the menu items that feature in the new set of banqueting menus. We also believe that these wines give real value for money. We have also held a few wine tastings with the students of the College, which is always important, as they then know the wines when selecting for their functions. In February 2017 we hosted a wine suppliers’ lunch to discuss new wines, regions, vintages, the wine trade in general and new wines for the list. Many of the suppliers have given us great help and support throughout the year. I visited some vineyards in Portugal, Austria, Sweden, Bordeaux, Rioja and Alsace in the last year. This year we have added a little Bordeaux section to the wine list. Please try some of the more unusual wines, they are good quality and very well made.

    CÔTES DU JURA BLANC 2018 HÉRITAGE Domaine MAIRE & Fils Even if Henri Maire embodied for years the emblematic figure of the Jura wines, several generations have been necessary to patiently built one of the largest and greatest estates in the area, focused on key appellations such as Château-Chalon, l’Étoile and Arbois. The Domaine MAIRE & Fils covers nowadays 218 hectares of vines producing all the area grapes varieties. Appellation The Jura wine region is small in size but large in its remarkable diversity. It covers 80 kilometres between Burgundy and Switzerland, in the eastern France. Created in 1937, the AOC (designation of origin) of Cotes du Jura is omnipresent in the north and south of the vineyard, on varied and contrasting terroirs. It is the second leading AOC in Jura in terms of production, and it engages all five of the Jura's grape varieties. The whole range of wines of the Jura is represented, although the whites dominate - still or sparkling - with wines that are round, fruity, and generous. Grape Variety The Chardonnay grape variety, originating from Burgundy but cultivated in the Jura since the 10th Century, has become a native of the region. Its great adaptability makes it the most prominent grape variety today, especially on limestone and light soils. 1 Terroir & cultivation mode In order to develop a harmonious cuvée, our Côtes du Jura comes from a selection of our best plots. The work in the vines, is based on the respect of the nature and the soil. For young vines, located on steep slopes, to avoid erosion, we cultivate a row out of two, practice soil reassembly to aerate the lands subjected to settlement due to moisture, and grass with plants.

    Domaine Jean-Luc Mouillard Jura The Wines • Côtes du Jura Chardonnay: This Chardonnay comes from three parcels totaling just under seven acres of vines. The initial fermentation takes place in steel with the malo taking place during aging in older barrels, and both fermentations are normally spontaneous (as with all their still wines). The wine is a product of Jura’s alpine foothills—their elevation and their limestone—making for a delicious combination of elegance and minerality. Production averages a little over 400 cases. • Côtes du Jura Savagnin “L’Ouillé”: Ouillé, from oeil, French for eye, refers to wines that during élevage are topped off up to the eye of the barrel to be protected from oxidation—standard just about everywhere except in Jura, where the tradition has been to work with oxidative wines. The grape is Jura’s own distinctive Savagnin, commonly used to make the Sherry-like Vin Jaune and the sweet, concentrated Vin de Paille. This version is one of the new wave of wines coming out of these Alpine foothills. Production is limited to a couple hundred cases. • Côtes du Jura Trousseau: Two parcels, 2.35 acres. Trousseau is a Jura native and at some point in its history migrated to Portugal, where it is known as Bastardo. The Mouillard rendition is a lightly-colored wine of notably full, limestony flavors. Lighter years see this wine aged entirely in tank while riper years can see barrel ageing. Low yielding years can result in this being blended with Poulsard and Pinot Noir to make a red in sufficient volume named Rubis.

Later this month we will be participating in the Handmade event in Melbourne where a number of importers of natural wines and producers of local natural wines will be showcasing their offerings at the popular Builders Arms Hotel in Fitzroy. See the details below. While we are in Melbourne we will also be matching our wines to six different cheeses at the new and funky Clever Polly’s in West Melbourne. Once again, the details are in this newsletter. We have six different special packs this month. The first highlights the newly arrived wines from the wonderful Jean-Paul Brun who makes such clean, precise, flavoursome wines in the Beaujolais. The second is a pack of the no added sulphites red wines from Michel Guignier also from Beaujolais but further north near Fleurie. We then offer a pack of interesting whites and another of lighter style reds for those of you who prefer red wines that complement food rather than overpowering it. We then have another “No added sulphites” pack due to the increasing demand for this style of wine. The final pack is a collation of wines from Gaillac to go with the story later in the newsletter about this fascinating wine region in the south of France.
