We will provide the updated vintage on our list. WELCOME Welcome to the new St John’s College Wine List for 2017/18. The wines have been chosen for their individual style and quality. The Catering Team here at St John’s College tasted many of the new wines for the list in March 2017, to make sure they fall within our quality expectations. Some of the wines have been tasted against some of the menu items that feature in the new set of banqueting menus. We also believe that these wines give real value for money. We have also held a few wine tastings with the students of the College, which is always important, as they then know the wines when selecting for their functions. In February 2017 we hosted a wine suppliers’ lunch to discuss new wines, regions, vintages, the wine trade in general and new wines for the list. Many of the suppliers have given us great help and support throughout the year. I visited some vineyards in Portugal, Austria, Sweden, Bordeaux, Rioja and Alsace in the last year. This year we have added a little Bordeaux section to the wine list. Please try some of the more unusual wines, they are good quality and very well made. -

He had set out to create a device that would allow its user to have a glass of wine from a bottle without ever opening it, keeping the rest of the wine from deteriorating. With a background in the medical technologies sector and also nuclear engineering, Lambrecht was well equipped in approach- ing such a task. The Coravin® works by driving a medical-grade needle through the cork of the bottle and then injecting 99.9% pure argon gas. The pressure created by the buildup of gas in the bottle forces the wine out through the Coravin®. Once the wine is served, the needle slides back out and the cork closure will re-seal itself. The inert nature of the argon gas in the bottle keeps the wine protect- ed from deterioration and is good to hold for even a few years! We use the Coravin® to access all the wines that we serve by-the- glass, as well as the wines on our pairing. We are confident that every glass of wine we serve to you will be as good as the first one! Beverage Pairing Mostly Mavericks WINE Go on a little journey around the world with our sommeliers who will showcase wines from lesser-known parts of the world, made with mostly in- digenous grape varieties. The wines of this flight are all by artisanal and boutique winemakers who have come from various backgrounds to produce wines of the highest quality, with also the highest regard for the environment and traditions. -

Credit: Patrick Forget / Sagaphoto.com / Alamy Stock Photo You can’t call many wine regions ‘enigmatic’ – but Gaillac fits the bill. It’s about 50 km northeast of Toulouse, on the Tarn river, which gouges its course through the Cévennes limestones from its source on Mont Lozère. When the river reaches Gaillac, the hills open up and the river becomes navigable – all the way, via the Garonne, to the Atlantic. Strangely, this was one of the two Grands Crus of Roman Gaul. (The other comprised the vineyards around Vienne, Ampuis and Tain.) As quality wine, it was a millennium ahead of Burgundy and 1500 years ahead of much of Bordeaux. Incredulous? Remember that the Romans came from the south, and that they favoured hill sites (no use for grain production) for their vines. Once the legionnaires had marched over the Cévennes, Gaillac offered the first suitable hillside land, with the evident transport advantages for colonists and garrisons further north that the river provided. (Bordeaux’s first Roman settlers drank Gaillac.) It was also a crossroads for the paths and roads which ran from east to west across Gaul; there were wild vines in the local forest of Grésigne. Archeologists have discovered a large Roman-era pottery for creating amphorae at Montans just downriver from Gaillac. -

Casa Ferreirinha Esteva Tinto 2018 Douro, Portugal The Esteva Douro Tinto is made primarily from grapes from the Quintas do Caêdo, Seixo and Porto estates, located in the Pinhão area, as well as grapes from surrounding areas at higher altitudes. This wine is ruby red in colour with intense floral notes of rose, spicy notes of black pepper and aromas of red fruits. It is smooth on the palate, with well-integrated acidity giving exceptional freshness and vivacity. Polished tannins support floral aromas and fresh red fruits resulting in a long and elegant finish. Chateau Galochet 2017 Bordeaux, France Thierry Bergeon has managed Château Galochet with his wife and brother since 1996. The estate is located 30km from Bordeaux. Enthusiastic about being winegrowers and delighted to live in the country, this inseparable trio has also started breeding dairy cows and selling raw milk in bottle, which is quite rare. This 100% Merlot shows an attractive deep garnet-red color and a fruity nose with hints of redcurrant. -
