Chambourcin is the most abundant hybrid grape grown in Pennsylvania and is more resistant to cold temperatures and fungal diseases compared to Vitis vinifera. Here, non-Saccharomyces yeasts were isolated from spontaneously fermenting Chambourcin must from three regional vineyards. Using cultured-based methods and ITS sequencing, Hanseniaspora and Pichia spp. were the most dominant genus out of 29 fungal species identified. Five strains of Hanseniaspora uvarum, H. opuntiae, Pichia kluyveri, P. kudriavzevii, and Aureobasidium pullulans were characterized for the ability to tolerate sulfite and ethanol. Hanseniaspora opuntiae PSWCC64 and P. kudriavzevii PSWCC102 can tolerate 8–10% ethanol and were able to utilize 60–80% sugars during fermentation. Laboratory scale fermentations of candidate strain into sterile Chambourcin juice allowed for analyzing compounds associated with wine flavor. Nine nonvolatile compounds were conserved in inoculated fermentations. In contrast, Hanseniaspora strains PSWCC64 and PSWCC70 were positively correlated with 2-heptanol and ionone associated to fruity and floral odor and P. kudriazevii PSWCC102 was positively correlated with a Citation: Feng, C.T.; Du, X.; Wee, J. We primarily work with fruit from our Charlottesville vineyard, with occasional sourcing from other locations if we see the opportunity to make something special. We’ve put together some really enjoyable wines for you to try – some classic, some fun, all delicious. Secondly, you’ll see wines from all around the world. Some you’ll recognize, others you might not. These selections lend to our wine bar-style atmosphere and really enrich the experience by offering a wide range of wines to be tried. They’re all available by the bottle, and most by the glass and flight as well, right alongside our Mermaid Wines. The staff can tell you all about any of them, so rest assured that you’ll never be drinking blind. These wines also rotate with the season, and there’s always something new to try. We have a full kitchen too, with a diverse menu that can carry you through lunch, brunch and dinner from the lightest snack to a full-on meal. With dishes that can be easily paired with a variety of our wines, make sure you try anything that catches your eye. -

We will provide the updated vintage on our list. WELCOME Welcome to the new St John’s College Wine List for 2017/18. The wines have been chosen for their individual style and quality. The Catering Team here at St John’s College tasted many of the new wines for the list in March 2017, to make sure they fall within our quality expectations. Some of the wines have been tasted against some of the menu items that feature in the new set of banqueting menus. We also believe that these wines give real value for money. We have also held a few wine tastings with the students of the College, which is always important, as they then know the wines when selecting for their functions. In February 2017 we hosted a wine suppliers’ lunch to discuss new wines, regions, vintages, the wine trade in general and new wines for the list. Many of the suppliers have given us great help and support throughout the year. I visited some vineyards in Portugal, Austria, Sweden, Bordeaux, Rioja and Alsace in the last year. This year we have added a little Bordeaux section to the wine list. Please try some of the more unusual wines, they are good quality and very well made. -

Introduction Wine is commonly recognised as a particular type of processed agrifood product, showing several different characteristics. Above all a close relationship is commonly assigned between wine and land of origin, the environment and the ecosystem in general (including not only natural aspects but also human skills, tradition, etc.), based on a complex web of interrelation between all the involved elements/operators. Since the 70s the interest on “clean wine-growing” has been increasing among the operators; this fact has also caused the development and the improving of organic processes for wine production (Iordachescu et al., 2009). For long time the legislation framework on the organic wine regulations has been incomplete and inefficient: EC Reg. 2092/911 and, after this, EC Reg. 834/20072 were extremely generic and through these Regulations it has been only possible to certify as “organic” the raw material (grapes from organically growing technique) and not the whole wine-making process.
