Grease well and dust with flour 2 round layer pans, 8 or 9xll;2". Sift flour, I cup sugar, baking powder and salt into bowl. Add oil, \t1 cup milk, vanilla and lemon rind. Beat I min., med. speed on mixer or !50 strokes by hand. Add remaining 1;2 cup milk and egg yolks; beat 1 more min. Beat egg whites until frothy. G radually beat in 1;2 cup sugar. Continue beating until stiff and glossy. Fold into flour mixture. Pour into prepared pans. Bake 8" layers 30 to 35 min. ; 9" layers 25 to 30 min. Cool. Spread lemon filling between layers and frost top and sides with Betty Crocker Fluffy White Frosting Mix. .

    Sour Cream Coffee Cake from The Grand Central Bakery Streusel 1/2 cup cold unsalted butter 1/2 cup granulated sugar 1 cup (7 ounces) packed light brown sugar 1/2 cup all-purpose flour Pinch of slat 3/4 cup rolled oats Coffee Cake 3 cups all-purpose flour 3/4 cup granulated sugar 1 Tablespoon baking powder 1 teaspoon salt 4 eggs 3/4 cup unsalted butter, melted and slightly cooled 1 teaspoon vanilla extract 1 1/2 cups sour cream 2 cups diced fresh fruit, berries or rhubarb Preheat oven to 350 degrees. Lightly grease and flour a 9 x 13 inch baking pan. Make the streusel: Dice the butter into 1/4 to 1/2 inch cubes, then combine it with the granulated and brown sugars, flour and salt. Use two knives, a pastry blender, or your fingers to mix the ingredients until crumbly, then mix in the oats. If you’re making the streusel ahead of time, cover and store in fridge until ready to proceed. Sift the flour, sugar, baking powder and salt into a bowl with high sides. Make a well in the center. In another bowl, lightly whisk the eggs, butter and vanilla together. Pour the mixture into the well, then add the sour cream by evenly distributing large spoonfuls around the edges of the dry ingredients. Gently mix the batter using a large spatula to fold the dry ingredients into the wet ingredients. Use big, slow, circular strokes that scrape the bottom and sides of the bowl with each motion. Don’t worry if the batter appears slightly lumpy, or if there are streaks of sour cream.

Its distinctive feature is from the use of vegetable oil, instead of the traditional fat which is solid at room temperature, such as butter or shortening. This makes it difficult to directly beat air into the batter. As a result, chiffon cakes (as well as angel cakes and other foam cakes) achieve a fluffy texture by having egg whites beaten separately until stiff and then folded into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners. A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating the rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake. They can be baked in tube pans or layered with fillings and frostings. The combination of flavors is unlimited, chocolate, coffee, orange, lemon, strawberry, vanilla… just to give some examples. – What is chiffon cake? Chiffon cake is very light, airy and fluffy cake made mainly with vegetable oil, eggs, sugar, cake flour and any liquid from milk to juices. – What is the method used for chiffon cake? Chiffon cake does not use any baking agent or butter, only vegetable oil and egg whites beaten into meringue as a leavening agent. – Why should you make chiffon cake? Because the texture is super soft, light and moist and almost melts in your mouth. Moreover, you can make it with all kind of flavors and serve plain or with any kind of frosting you desire. – Why you should not be intimidated by chiffon cake? There is really no secret…just mix the egg yolk portion with all the liquids and flour, set aside and beat the egg white to meringue until the soft-stiff peaks forms…fold gently and bake… In my opinion the trick is to beat the meringue to the right stage and fold correctly…other than these two steps, there is really nothing scary about the baking the perfect chiffon cake or any kind of foam cake.
