Five Questions for Amelia Saltsman To paraphrase the age-old question, how is this Jewish cookbook different from all others? We tend to compartmentalize the different aspects of our lives. We have one box for the seasonal, lighter, healthier way we eat today, and another for Jewish food, which is often misunderstood as heavy, only Eastern European (Ashkenazic), or irrelevant to today’s lifestyle. (This box also often holds wistful memories for beloved foods we think we’re no longer supposed to eat.) In The Seasonal Jewish Kitchen, I want to open up all those boxes and show how intertwined tradition and modern life actually are. I’ve read the Bible for history and for literature, but now I’ve mined it for food, agriculture, and sustainable practices, and wow, what a trove of delicious connections I discovered! What kind of surprises will readers discover? First, the great diversity of Jewish cuisine. The Jewish Diaspora, or migration, is thousands of years old and global. Jewish food is a patchwork of regional cuisines that includes the deli foods of Eastern Europe and the bold flavors of North Africa, the Middle East, the Mediterranean, and more. My hope is that The Seasonal Jewish Kitchen will keep you saying, “That’s Jewish food? Who knew?” Remember the line from Ecclesiastes about there being nothing new under the sun? The ancient Hebrews were among the world’s early sustainable farmers, and many of today’s innovative practices have their roots in the Bible. Also, the Bible contains quite a few “recipes” that are remarkably current (think freekeh, fire-roasted lamb, and red lentil stew). -

The repertoire of dishes is fragrant, diverse, and highly refined, based on complex culinary techniques. They are imbued with fresh flowers and herbs like rose petals, fenugreek, and mint; spices like saffron, sumac, and cardamom; fruits like pomegranate and barberry; all kinds of citrus; and nuts, including pistachios and almonds. If this roster of ingredients sounds familiar, it’s because Persian cooking has influenced Middle Eastern, Moroccan, Northern Indian, and Turkish cuisines yet itself remains somewhat below the radar. Typical Iranian main dishes are combinations of rice with meat (such as lamb, chicken, or fish), vegetables, and nuts. Fresh green herbs are frequently used, along with fruits such as plums, pomegranates, quinces, prunes, apricots, and raisins. Characteristic Iranian flavorings such as saffron, dried limes, cinnamon, turmeric, and fresh herbs are mixed and used in various dishes. The agriculture of Iran produces many fruits and vegetables. Thus, a bowl of fresh fruit is common on Iranian tables, and vegetables are standard sides to most meals. These are not only enjoyed fresh and ripe as desserts but are also combined with meat and form accompaniments to main dishes. When fresh fruits are not available, a large variety of dried fruits such as dates, figs, apricots, and peaches are used instead. -

Keep an eye on the pot as yellow split peas produce lots of foam and can spill over. Once boiling, partially cover and simmer on low heat for about 15 minutes. The yellow split peas are partially cooked at this stage and will continue to cook further once integrated into the stew. Remove from the heat, strain and set aside. Stew Saute the onions with oil in a large pot over medium heat for 15 minutes, Add turmeric and saute for an additional 2 minutes. -

Sour Cream Coffee Cake from The Grand Central Bakery Streusel 1/2 cup cold unsalted butter 1/2 cup granulated sugar 1 cup (7 ounces) packed light brown sugar 1/2 cup all-purpose flour Pinch of slat 3/4 cup rolled oats Coffee Cake 3 cups all-purpose flour 3/4 cup granulated sugar 1 Tablespoon baking powder 1 teaspoon salt 4 eggs 3/4 cup unsalted butter, melted and slightly cooled 1 teaspoon vanilla extract 1 1/2 cups sour cream 2 cups diced fresh fruit, berries or rhubarb Preheat oven to 350 degrees. Lightly grease and flour a 9 x 13 inch baking pan. Make the streusel: Dice the butter into 1/4 to 1/2 inch cubes, then combine it with the granulated and brown sugars, flour and salt. Use two knives, a pastry blender, or your fingers to mix the ingredients until crumbly, then mix in the oats. If you’re making the streusel ahead of time, cover and store in fridge until ready to proceed. Sift the flour, sugar, baking powder and salt into a bowl with high sides. Make a well in the center. In another bowl, lightly whisk the eggs, butter and vanilla together. Pour the mixture into the well, then add the sour cream by evenly distributing large spoonfuls around the edges of the dry ingredients. Gently mix the batter using a large spatula to fold the dry ingredients into the wet ingredients. Use big, slow, circular strokes that scrape the bottom and sides of the bowl with each motion. Don’t worry if the batter appears slightly lumpy, or if there are streaks of sour cream. -
