Recipes for Food Division Updated 10-1-2018 KENTUCKY 4-H FAIR EXHIBITS Recipes for Food Division Updated 10-1-2018 For fair competition, Kentucky 4-H members are to use the recipes specified below. Most of the recipes are part of the 4-H Cooking 101 – 401 series, available from https://shop4-h.org/collections/healthy-living-foods-curriculum. Each project book explains a variety of cooking skills in easy-to-follow steps. Members who have little or no experience in cooking are encouraged to start with 4-H Cooking 101. The higher the number on the book, the more advanced the skills. It is important to read and follow the recipe to produce a high quality product. Ovens vary; baking times may need to be adjusted if the product appears to be getting overdone or does not appear done. RECIPE: Carol’s Oatmeal Muffins From 4-H Cooking 101, page 54 Yield: 10-12 muffins Ingredients Equipment 1 1/3 cups all-purpose flour Non-stick cooking spray 3/4 cup rolled oats, quick cooking or regular Large mixing bowl 1/3 cup granulated sugar Mixing spoon 2 teaspoons baking powder Measuring cups 1/4 teaspoon salt Measuring spoons 1 egg Small bowl and fork 3/4 cup milk Muffin pan 1/4 cup oil Wire rack Hot pads Order of Work 1. Preheat the oven to 400 degrees F. Lightly coat the muffin pan with non-stick cooking spray. 2. Measure flour, oatmeal, sugar, baking powder, and salt into the large bowl. Mix with a spoon. 3. Break the egg into the small bowl and beat it lightly with the fork. Then stir in the vegetable oil and milk. 4. Add the egg mixture to the dry mixture in the large bowl. 5. With a large spoon, mix only about 25 times, just enough to get the dry ingredients wet. The dough is supposed to be lumpy. If you mix too much, your muffins will be tough. 6. Carefully spoon the batter into prepared muffin pan. Fill each cup two-thirds full. 7. Bake for 20 minutes or until golden brown. Remove pan from the oven with hot pads. Let muffins cool slightly; then remove them from the pan and place them on a wire rack to cool. RECIPE: Cheese Muffins From 4-H Cooking 201, page 49 Yield: 12 muffins Ingredients Equipment 2 cups all-purpose flour Muffin pan 1 tablespoon baking powder Baking cup liners, optional 1 tablespoon sugar Non-stick cooking spray 1/2 teaspoon salt Flour sifter 1 teaspoon powdered mustard Mixing bowls, large and small 1/2 teaspoon garlic powder Measuring spoons 1 egg, slightly beaten Measuring cups 1 cup milk Mixing spoon 1/4 cup oil Rubber scraper 1/2 cup shredded cheddar cheese Order of Work 1. Preheat oven to 375 degrees F. Lightly coat muffin pan with non-stick cooking spray or place a baking liner in each muffin cup. 2. Place the flour sifter in the mixing bowl. Measure flour and pour into sifter. Add baking powder, sugar, salt, mustard, and garlic powder to the flour in the sifter. Sift together into the mixing bowl. 3. Combine slightly beaten egg, milk, and vegetable oil in the small mixing bowl. 4. Add liquid ingredients to dry ingredients. Stir together until dry ingredients are just moist, but the batter is still lumpy. Stir in shredded cheese. 5. Fill muffin cups 1/2 full. 6. Bake for 20 minutes. Remove from oven. RECIPE: Rolled Biscuits From 4-H Cooking 201, page 50 Yield: Ingredients Equipment 2 cups all-purpose flour Flour sifter 1 tablespoon baking powder Mixing bowl 3/4 teaspoon salt Measuring cups, dry and liquid 1/3 cup butter or margarine, chilled Measuring spoons 3/4 cup low-fat milk Pastry blender or fork Extra flour for kneading Baking sheet Biscuit or cookie cutter Order of Work 1. Preheat oven to 450 degrees F. 2. Sift flour once and then measure it. Add to mixing bowl. Add baking powder and salt. Stir. 3. Measure the fat and add to flour mixture. Cut the fat into the flour mixture with fork or pastry blender until well mixed. 4. Make a hole in the center of the flour mixture. Slowly add milk and stir, using just enough to make dough soft but not sticky. Stir just enough to wet the flour. 5. Sprinkle 3-4 tablespoons of flour on a clean, dry surface and spread the flour with your hand. Turn dough onto the floured surface. Knead dough a few times. To knead the dough, rub some flour onto your hands. Use the heel of your hand to push the dough away from you, and then fold it back over itself. Give the dough a little turn, push and turn again. Repeat 6-8 more times. Over-kneading the dough or adding too much flour will make the biscuits tough. 6. Roll or pat dough to 3/4-inch thickness. Dip the biscuit cutter into the flour. Use the biscuit cutter to cut the dough or cut it into 2-inch squares with a knife. Place biscuits on ungreased baking sheet about 2 inches apart. Gather the dough scraps and reshape. Cut biscuits and add to baking sheet. 7. Bake about 10-12 minutes or until golden brown.     LA IMMACULADA CONCEPCION SCHOOL JUNIOR HIGH SCHOOL GRADE 11 – BREAD AND PASTRY MAY 26 -30 TOPIC: CHIFFON CAKE A chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. Its distinctive feature is from the use of vegetable oil, instead of the traditional fat which is solid at room temperature, such as butter or shortening. This makes it difficult to directly beat air into the batter. As a result, chiffon cakes (as well as angel cakes and other foam cakes) achieve a fluffy texture by having egg whites beaten separately until stiff and then folded into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners. A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating the rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake. They can be baked in tube pans or layered with fillings and frostings. In the original recipe, the cake tin is not lined or greased, which enables the cake batter to stick to side of the pan, giving the cake better leverage to rise, as well as support in the cooling process when the cake is turned upside down to keep air bubbles stable.     Strawberry Cheesecake Pots Gluten & Sugar Free Recipe Recipes Made using our ‘Vanilla Almond Biscuit’ packet mix. What do you need? BISCUIT BASE 1 packet of 180 Cakes Vanilla Almond Biscuit Mix 1 large egg 40ml of cooking oil CHEESECAKE 500g softened cream cheese + 250ml cream 120g of your favourite sweetener (i use Xylitol) Lorem ipsum dolor sit amet, consectetur adipiscing elit. Ut elit tellus, luctus nec ullamcorper mattis, pulvinar dapibus leo. TOPPING Sugar free jam Lorem ipsum dolor sit amet, consectetur adipiscing elit. Ut elit tellus, luctus nec ullamcorper mattis, pulvinar dapibus leo. InSTRUCTIONS 1. Bake biscuits according to instructions on packet. 2. Once biscuits are cooled blend into biscuit crumbs. 3. Combine biscuit crumbs with melted butter. Press into base of jars. 4. Beat the cream cheese and xylitol with an electric mixer until smooth. Add cream and continue beating until smooth. 5.     Ship’s Biscuit Ship’s biscuit was a hard piece of bread that Constitution’s sailors ate at nearly every meal. The biscuit was baked on land, stored on board the ship, and then sent out to sea with the sailors. Sailors soaked the rock-hard biscuit in their stew to soften it before taking a bite. If you bake a ship’s biscuit and would like to taste it, make sure you follow the sailors’ example and soak it in water or stew before eating! Ingredients 2 cups stone ground whole wheat flour wooden mallet or rolling pin ½ teaspoon salt greased baking sheet ½ cup water lightly floured work surface Directions 1. Preheat oven to 350 degrees Fahrenheit 2. Combine flour and salt on work surface. 3. Add the water. 4. Beat with mallet or rolling pin until ½ inch thick. 5. Fold and repeat several times. 6. Cut the dough into cookie-sized pieces. 7. Place on baking sheet and cook for 30 minutes.
