Grazie Ristorante Wine Menu Grazie At both Grazie Ristoranti you will find small production hand-crafted wines that have been carefully selected to pair with our signature dishes. This wine list has been put together with great care with the mission to provide our guests at Grazie with the finest selection of Italian wines. Every other year, for the last 26 years, we have taken most of the Grazie Ristoranti family to Italia to immerse them in the culture of Italian wine and food. We have had the opportunity to meet and spend time with wonderful winemaking families. Almost all of the wines selected on our wine list are here because of the direct relationships we have established with the wineries. We will be hap- py to share with you insight into the production of these wines,. So please feel free to ask us to share a story or two about the people, their beautiful vineyards and, of course, their remarkable wines. We do have a limited selection of our local Pacific Northwest and California wines, as well. We are honored to have this opportunity to present these wines to you and to share our passion with each and every one of you who dine with us at Grazie. Kevin & Maria Italy Vini Spumante Zardetto Prosecco Brut DOC NV (Veneto) 34 White flowers, citrus, apples, honeysuckle, all lifted by wonderful bubbles and refreshing acidity. Zardetto ‘Private Cuvée’ Brut NV (Veneto) 8/32 Fabio Zardetto’s blend - Moscato, and Chardonnay join Prosecco’s Glera for a playful bubble offering pears, apples and peaches with a touch of wild flowers. Cleto Chiarli Brut Rosé (Emilia-Romagna) 32 Pinot Noir and Grasparossa grapes make this seductive, fragrant Rosé that shows lively flavors of strawberries and raspberries. Barone Pizzini ‘Animante’ Franciacorta Brut DOCG NV (Lombardia) 50 Chardonnay, Pinot Nero, and Pinot Bianco are hand crafted in the same way as Champagne to produce Italy’s most prestigious bottling of bubbles, Franciacorta. This bottling is aged 20-30 months on it’s lees in bottle before being disgorged. Northern Italy Vini Bianchi Tramin ‘Stoan’ Alto-Adige DOC (Alto-Adige) 60 The name of this exotic blend (Chardonnay, Pinot Bianco, Sauvignon Blanc, and Gewürztraminer) refers to the stony soil in which the grapes are grown, in local dialect is referred to as "stoan”. Alois Lageder Pinot Grigio Alto-Adige DOC (Alto-Adige) 32 Pinot Grigio grown at high elevation in the hills of Alto Adige near Bolzano make wines that are aro- matic, soft, creamy with a long fresh finish. Tiefenbrunner Pinot Grigio Vigneti delle Dolomiti IGT (Trentino-Alto-Adige) 18/33 Aromas of citrus, white flowers, pears, apples, and meadow grass. Up-front citrus flavors give way to stony minerality and a crisp finish. Alois Lageder Chardonnay Alto-Adige DOC (Alto-Adige) 32 Brilliant, straw-yellow color with light green hints; the aroma is delicate with notes of tropical fruit; In- tense flavor and a good, medium bodied structure. Ceretto‘ Blangè’ Arneis Langhe DOC (Piemonte) 45 Aromas of pears, apple blossoms, beeswax, and almonds. On the palate, the Blangè is soft with round, nutty flavors overlaying subtle minerality. Tenuta la Marchesa ‘White Label’ Gavi DOCG (Piemonte) 32 A very important indigenous Piedmont white (Cortese) known for it’s fresh and lively character! Grown near the southern border of Piedmont near the Province of Liguria for over 200 years. Marchesi di Gresy Sauvignon Bianco Langhe DOC (Piemonte) 45 Intense aromas reminiscent of vegetables, finely cut grass and tomato leaves along with fruity aromas of grapefruit and peach. carry onto the palate of this persistent, refreshing and harmonious Sauvignon Blanc. Suavia ‘Monte Carbonare’ Soave Classico DOC (Veneto) 58 The Tessari family describes this wine as “earth in a glass”—a pure expression of their volcanic terroir. This wine is creamy and elegant. It is characterized by freshness and aromas of citrus, herbs, and min- eral. 100% Garganega. Suavia ‘Massifitti’ Bianco Veronese IGT (Veneto) 58 Clear and brilliant in appearance, Displays intense aromas of stone fruit, white flower blossom, and mineral. On the palate the texture is creamy and the wine showcases defined minerality and vibrant acidity. All of these characteristics culminate in a long and focused finish. Inama ‘Vin Soave’ Soave Classico DOC (Veneto) 32 100% Garganega grape from the Basaltic lava soils around the town of Soave. Chamomile, sweet flow- ers on the nose with flavors of sweet almonds on the palate. Zenato Lugana di San Benedetto DOC (Veneto) 33 It was in 1960 that the young Sergio Zenato saw the enormous potential of the native vine Trebbiano di Lugana. Grown near the shores of Lake Garda, it offers appealing notes of peaches, citrus, bananas and herbs. Crisp acidity and supple body. Northern Italy Vini Rossi Tramin Pinot Nero Alto-Adige DOC (Alto-Adige) 25/42 Located in the heart of Alto Adige in the town of Termeno, On the palate, this wine boasts a firm back- bone of tannin and an elegant body with impressive length. This is classic Pinot Noir. Ceretto‘ Monsordo’ Rosso Langhe DOC (Piemonte) 56 Cabernet Sauvignon, Merlot and Syrah. Deep ruby in color with aromas of dark berry fruits, plums and undertones of sweet spices and vanilla makes for a rich, full-bodied wine. Giuseppe Cortese ’Rabajà’ Barbaresco DOCG (Piemonte) 89 Unfiltered to preserve its richness, with concentrated aromas of raspberries, roses, violets, leather and spice. Full-bodied and a lingering finish. Giuseppe Cortese Nebbiolo Langhe DOC (Piemonte) 48 Aged for one year in new to nine-year-old barrels. Intense, yet delicate, fresh and pleasant with subtle aromas of small berries. Marchesi di Gresy 'Martinenga' Barbaresco DOCG (Piemonte) 46/88 Made with 100% “Rose clone” of the Nebbiolo grape and aged in oak for 2 years. This Barbaresco is a great combination of complexity, elegance and full flavors.. Ceretto Barolo DOCG (Piemonte) 89 The Ceretto brothers have selected vineyards in the most historically important areas for the production of great wines. Aromas of roses, tart cherries and hints of truffle. A true classic. Vietti’ Castiglione’ Barolo DOCG (Piemonte) 42/87 The King of wines the wine of kings! Spices, red cherries, and wild flower flavors all meld togeth- er to make this elegant, intense, full body Barolo! Vietti’ Tre Vigne’ Barbera d’Asti DOCG (Piemonte) 36 Barbera grapes sourced from three different vineyards in the beautiful Asti area of Piemonte. Red cherry flavors are prevalent with hints of mineral and vanilla; medium body. Castello di Neive ’Santo Stefano’ Barbera d’Alba DOC (Piemonte) 42 The Barbera grapes for this wine come from the famed Santo Stefano vineyard which initially caused critics to believe Italo Stupino was crazy as this vineyard is typically reserved for the hallowed Nebbio- lo. Giuseppe Cortese Dolcetto d’Alba DOC (Piemonte) 42 This wine is made from 100% Dolcetto from 25-30 year old vines in the Trifolera zone, which is named after the prized white truffles that can be found in the area. Zenato Amarone della Valpolicella Classico DOCG (Veneto) 42/89 Made from grapes that have been dried for up to 5 months, this is a big rich wine that is unique to this region of the world. Intoxicating aromas of dried black cherries, cassis, truffles, and chocolate, with a silky, luscious, and complex lingering finish. Zenato ‘Ripassa’ Valpolicella Superiore DOC (Veneto) 28/49 This wine is a blend of local varieties of Corvina, Rondinella, and Oseleta. This wine is made in a very unique method involving a double fermentation to intensify the wine. Sometimes referred to as a ‘Baby Amarone’. This wine has been on Grazie’s list for more than 20 years. Secondo Marco Valpolicella Classico Ripasso DOC (Veneto) 49 This Ripasso is a medium-bodied wine with plenty of ripe and dried, red-fruit flavors accented by spice and floral notes. The wine is rich and textural on the palate.. Sansonina Merlot Veronese IGT (Veneto) 58 Rich aromatics of crushed black cherries, cocoa, dried herbs, and a touch of balsam . Broad, velvety, and mouth-filling on the palate. Maculan ’Palazzotto’ Cabernet Sauvignon Breganze DOC (Veneto) 49 From 100% Cabernet Sauvignon aged in French barriques for one year. The wine has notes of dark ber- ries, anise, black pepper and just a touch of Mediterranean herbs. Zenato ‘Cormí’ Merlot Corvina delle Venezie IGT (Veneto) 45 ‘Cormi’ which means my heart, is full-bodied with fresh acidity and sweet tannins. Zenato Valpolicella Superiore DOC (Veneto) 32 Offers fleshy aromas of wild berries, black currants, black cherries, and spices, with hints of chocolate. On the palate, the wine is dry and robust with a velvety texture. Central Italy Vini Bianchi San Quirico Vernaccia di San Gimignano DOCG (Toscana) 32 Lemon zest, sage, and minerality with hints of anise and almonds on the crisp finish. Organic. Garofoli ‘Macrina’ Verdicchio Castelli dei Iesi DOC (Le Marche) 32 Made with the Verdicchio grape grown on the Adriatic (East) coast of Italy. This wine is fresh and pleas- ing with notes of peach, apples and exotic fruit varietals. Vini Rossi Chianti Rufina. Chianti Classico. Chianti Classico Riserva RUFINA Rufina is perhaps the best known of the seven subzones with a continental climate and high altitude. Rufina wines are well-structured and, at their best, rival the top wines from Chianti’s Classico zone. Fattoria Selvapiana Chianti Rufina DOCG (Toscana) 35 Delicate aromas of subtle herbs and oak. The palate is elegant and fresh with flavors of red berries, licorice and plum to finish. Balanced, ripe, smooth tannins. GREVE IN CHIANTI Expressive red berried fruit known for its elegance, perfume and finesse. Poggio Scalette Chianti Classico DOCG (Toscana) 38 Bright ruby red in color, a lively bouquet of red fruits and blackberries complement undertones of ripe cherries and pomegranate seeds.

The regulations are particularly severe for wine and include various aspects of the viticulture practices and winemaking techniques. Nevertheless, the use of phenolic profiles for quality control is still fragmented and incomplete, even if they are a promising tool for quality evaluation. Only a few methods have been already validated and widely applied, and an integrated approach is in fact still missing because of the complex dependence of the chemical profile of wine on many viticultural and enological factors, which have not been clarified yet. For example, there is a lack of studies about the phenolic composition in relation to the wine authenticity of white and especially rosé wines.
