Franciacorta Menu FRANCIACORTA MENU Senato Caffé presenta il Franciacorta Bar, unico in città e primo nel mondo. Il Franciacorta è una delle eccellenze enologiche italiane. La regione omonima produce dal 1961 quello che è oggi il miglior Metodo Classico in Italia. Grazie a questa collaborazione con il consorzio Franciacorta, potrete scoprire in carta e a rotazione, una selezione accuratissima di bollicine dei migliori produttori. Etichette rare o bottiglie provenienti da piccole cantine altrimenti inaccessibili della Franciacorta, a soli 75 km a est di Milano. Più di 3 mila ettari di vitigni nobili raccolti a mano per la maggior parte Chardonnay, ma anche Pinot Bianco e Pinot Nero. È stato il primo vino italiano realizzato esclusivamente con il metodo della rifermentazione in bottiglia e nel 1995 ha ottenuto la denominazione di origine controllata e garantita (DOCG). Non chiamiamolo spumante dunque, ma Franciacorta! Senato Caffé introduces its Franciacorta Bar, the one -of-a-kind in Milan and the fist one in the world. Franciacorta is one of the Italian wine excellences. Produced in the homonymous region since 1961, it is known today as the best sparkling wine in Italy made according to the traditional ( Champagne) method. Thanks to the partnership with the Franciacorta consortium, the ever-changing wine list offers a superb selection of Franciacorta sparkling wines, coming both from established and emerging wineries directly from the region, which is merely 75 km east of Milan. It comprises more than 3000 hectares of prized vineyards, made up largely of Chardonnay grapes, followed by Pinot Noir and Pinot Blanc. It was the first Italian wine made exclusively with a second fermentation in the bottle and in 1995 received the appellation of DOCG status, the highest quality standard for Italian wine. Don’t make the mistake of calling it spumante. Ask for Franciacorta! Glass Bottle BARONE PIZZINI Animante Extra Brut S.A. ¤ 44,00 Straw yellow color. Bouquet of floreal notes with apricot aromas, honey and dried fruits nuances. On the palate medium-bodied, fragrant, creamy and tasty. Chardonnay 84%; Pinot nero 12%; Pinot Bianco 4% Organic Wine BELLAVISTA Alma Gran Cuvée Brut S.A. ¤ 12,00 ¤ 59,00 Bright yellow and luminous with glints of green. Bouquet is characterized by strong minerality with sweet ripe fruit, meringue, pastries and candied citrus peel. The palate fully matches the bouquet. 77% Chardonnay; 22% Pinot Nero; 1% Pinot Bianco BELLAVISTA Satèn Millesimato ¤ 70,00 Straw yellow with light golden hues. The pronounced and refined bouquet opens with peach blossoms, citrus fruit, honey and hazelnuts. On the palate it is fresh, soft and foamy with a creamy and extra fine perlage. 100% Chardonnay GUIDO BERLUCCHI Berlucchi ‘61 Brut S.A. ¤ 10,00 ¤ 41,00 Straw yellow with greenish hues. Bouquet is fresh, rich and elegant with hints of white fruit and citrus. Fresh, soft and balanced on the palate with final hints of citrus. 90% Chardonnay; 10% Pinot Nero GUIDO BERLUCCHI Berlucchi ‘61 Nature Pas Dosè ¤ 65,00 Millesimato Intense straw yellow color with light golden hues. Bouquet is characterized by a distinct mineral note that blends with delicate hints of citrus, white peach and bread crust. The palate is characterized by a sharp and persistent acidity. 80% Chardonnay; 20% Pinot Nero BERSI SERLINI Anteprima Brut NV ¤ 10,00 ¤ 50,00 Bright and clear bronze color. The dominant notes of sour fruit wrap the whole with brioche and biscuit flavours. The palate is very crisp with significant intensity. The final is soft with hints of spices. 80% Chardonnay; 20% Pinot Bianco BONFADINI Veritas Dosaggio Zero S.A. ¤ 56,00 Brilliant straw yellow. Bouquet of mineral and toasted bread notes. On the palate full-bodied, balanced, long finish and tasty. Chardonnay 90%; Pinot Nero 10% CA’ DEL BOSCO Cuvée Prestige Brut S.A. ¤ 12,00 ¤ 54,00 Golden yellow color. Delicate bouquet with floral scents of wisteria and hawthorn that open to fruity notes of pear, apple and plum but also pineapple and banana. Citrus notes blend with lightly toasted almonds and dried nuts. Bouquet characterized by classic tones, which evokes the vine, yellow peaches and blackcurrants. On the palate it is full and enveloping, well balanced, excellent richness of flavour. 100% Pinot Nero FERGHETTINA Satèn Millesimato ¤ 10,00 ¤ 45,00 Color soft yellow with golden reflection. Very intense almond flavor, white flower and vanilla. Taste very diffused, harmonic and pleasant, keeps a remarkable aroma persistence. A rafined aromatic medley of elderflower and hawthorn blossom nuances, crisp Mediterranean citrus, pear and apple, apricot and melon, wild herbs and almonds. On the palate fruity and fresh with a persistant conclusion. Slender and silky bead of pin-point bubbles. 60% Chardonnay; 30% Pinot Bianco; 10% Pinot Nero RONCO CALINO Satèn S.A. ¤ 46,00 Straw yellow color with lemon-green nuances. Bouquet of ripe fruits, light vegetal-balsamic hint, white flowers and spices. On the palate: full-bodied, harmonic, balanced with a fresh acid. The aftertaste has honey, spices, floreal and citrus fruits, with a final perception of candied lemon peel. Chardonnay 100%.

    Primum Franciacorta Brut DOCG NV W I N E D E S C R I P T I O N La Valle is an idiosyncratic and leading Franciacorta estate founded in 1990. La Valle’s philosophy is to harvest fully ripe grapes and to avoid barrels, malo-lactic, and high dosage in order to preserve their flavors. The soil at La Valle is ancient and the goal is to express their venerable terroir. The vineyards of La Valle are situated in Rodengo Saiano where glaciers cut deep into the earth leaving morainic soils that contain a high concentration of fossils. The vineyards lie just 2 kilometers from Lake Iseo which helps to preserve freshness while the grapes reach full physiological ripeness. “Primum” Franciacorta Brut is a blend of Chardonnay, Pinot Bianco, and Pinot Nero and is the foundation of the La Valle line. The wine is vinified in stainless-steel tanks, sees no malolactic, and spends 24 months on the lees. “Primum” receives a low dosage of 4.5-5 g/l at the time of disgorgement.     PETER DRY Franciacorta shines with Chardonnay HERE IS Franciacorta? You might well ask. Outside of Italy the region and its wines are W virtually unknown. Although wine has been produced here since ancient times, the modern wine indus- try is young by Italian standards. Until the 1960s, the pleas- ant but undistinguished table wines of the region were con- sumed locally. Today, the region is synonymous with high quality sparkling wine. The development of the sparkling wine industry here is an interesting case study because it appears to have been one of those rare instances where the end product was chosen before the suitability of the grape material had been confirmed. For example, two major Italian wine companies, Bellavista and Ca’ del Bosco, decided to invest in the region (for economic reasons) in order to expand their production of sparkling wine. The market demand for the resultant product was good and, fortuitously, the region turned out to be a good location for Chardonnay grapes for sparkling wine. The vineyards of Franciacorta are found in rolling hills to the south of Lake Iseo in central Lombardy, 20 km Peter Dry west of Brescia and 60 km east of Milan. Lombardy is the Vineyards of the World largest and most populous region of Italy.
