Primum Franciacorta Brut DOCG- Winebow Primum Franciacorta Brut DOCG NV W I N E D E S C R I P T I O N La Valle is an idiosyncratic and leading Franciacorta estate founded in 1990. La Valle’s philosophy is to harvest fully ripe grapes and to avoid barrels, malo-lactic, and high dosage in order to preserve their flavors. The soil at La Valle is ancient and the goal is to express their venerable terroir. The vineyards of La Valle are situated in Rodengo Saiano where glaciers cut deep into the earth leaving morainic soils that contain a high concentration of fossils. The vineyards lie just 2 kilometers from Lake Iseo which helps to preserve freshness while the grapes reach full physiological ripeness. “Primum” Franciacorta Brut is a blend of Chardonnay, Pinot Bianco, and Pinot Nero and is the foundation of the La Valle line. The wine is vinified in stainless-steel tanks, sees no malolactic, and spends 24 months on the lees. “Primum” receives a low dosage of 4.5-5 g/l at the time of disgorgement. T A S T I N G N O T E S “Primum” is the classic offering from La Valle. The wine balances the richness and fullness that is typical of Franciacorta with the refinement and mineral expression that is the signature of La Valle. “Primum” is a strong and decisive Franciacorta Brut with an elegant delivery, unexpected complexity, and is a clear expression of terroir. F O O D P A I R I N G Because “Primum” Franciacorta Brut is a somewhat richer and fuller sparkling wine it can be paired with richer and fuller dishes at the table. “Primum” fits perfectly at home with mild white fish sauced with a butter emulsion or roasted Guinea hen. The wine’s earthiness would also pair well with earthy flavors like chanterelle mushrooms finished in cream.
