SHERBET, SORBET &WATER ICE BASES

Add once can of #840 to 10 pounds of sugar, 4-1/2 gallons of water, 1-1/2 gallons of ice cream mix, 6 ounces of citric acid and desired flavoring. Mix well. Chill in cooler for a minimum of 4 hours (overnight is always best). After cooling, run through machine for a smooth, creamy sherbet.
