TEQUILA To many the name brings with it feelings of fear and trepidation.. It’s the bad boy of the drinks industry, it’s the one with the worm in it and it’s been the drink for many that have been responsible for “finishing” off a night in a less than graceful manner. The beauty of tequila is that the agave flavour brings an earthy, sweet element to drinks that no other liquor can. It is interesting to see how that flavour reacts with a variety of mixers.

NEGRONI SPECIAL SELECTION First created for Count Camillo Negroni in 1919 at Florence’s Café Casoni, the Negroni is actually predated by the Milano-Torino, a mix of bitter, barky Campari and sweet that evolved into the . Around 1920, at his favourite Florentine bar, Negroni asked for something stronger, so the soda water was replaced with gin, and the Negroni was born. Today, it’s a mixologist’s favourite play thing, with ingredients swapped for everything from mescal to sherry. Here are some of our favourite adaptations. Enjoy!

AUTUMN MENU

Summer's halfway gone, and before you know it, we'll have blinked and missed the leaves turning. So let's slow down and plan our autumn-time drinking. A cocktail for fall ought to be richly coloured and robust, so you can forget that cold weather looms just around the corner. Here, we have the classics, like an Old Fashioned and a Manhattan, and some riffs: a rum cocktail with a Figs boost to combat the gloomiest of November days; and a variation on the Old Fashioned that borrows the unofficial liquor of summer, tequila. Oh, and plenty of whiskey. These fall cocktails will keep you going until the snow starts to float down from the sky and we're ordering something more winter appropriate cocktails. You can even leave out the alcohol and just make a bright, low-calorie drink.
