Its botanicals give it a characteristic that no other liquor has; one brand can have a completely different profile from another and it is surprisingly versatile when it comes to flavour profiles. Gin is also the foundation for some of the best drinks ever made, including the iconic Martini. The selections include gin at its best in the simplest of mixes as well as in the more complicated, often disputed, and finely balanced recipes. It’s basically the technique of taking a cocktail (with a strict spirits backbone), putting it in a barrel, and waiting for the alcohol to extract the colours and flavours from the wood over time. Infuse vodka with seasonal fruit such as rhubarb, or add it to tomato juice for a fortifying Bloody Mary. There is no debate that vodka is the most mixable (and therefore useful) liquor in the bar. It’s the bad boy of the drinks industry, it’s the one with the worm in it and it’s been the drink for many that have been responsible for “finishing” off a night in a less than graceful manner. The beauty of tequila is that the agave flavour brings an earthy, sweet element to drinks that no other liquor can. It is interesting to see how that flavour reacts with a variety of mixers. Around 1920, at his favourite Florentine bar, Negroni asked for something stronger, so the soda water was replaced with gin, and the Negroni was born. Today, it’s a mixologist’s favourite play thing, with ingredients swapped for everything from mescal to sherry. Here are some of our favourite adaptations. Enjoy! We take the bottle, smoke it up, and then we pour our cocktail in and just let it sit there. It infuses flavour into the drinks for the final result.
