The beauty of tequila is that the agave flavour brings an earthy, sweet element to drinks that no other liquor can. It is interesting to see how that flavour reacts with a variety of mixers. Around 1920, at his favourite Florentine bar, Negroni asked for something stronger, so the soda water was replaced with gin, and the Negroni was born.
