“Let Food Be Your Drug and Drug Be Your Food” Ippocrate Di Coo Business Presentation “Let food be your drug and drug be your food” Ippocrate di Coo Business presentation The company was born from the intuition of two great friends who love and appreciate strongly the territory of Calabria in Southern Italy. Only Good Italy is a company that wants to make better known the typical food of this rich territory of Mediterranean crops of excellence abroad. The aim of the com- pany is to spread some gastronomic delicacies on the international market. They want to do this in order to offer the best of what can be achieved fol- lowing old peasant recipes, which are enriched by the modern knowledge of food production. With this in mind, best products of this area have been selected, such as paste, oil, wine, cheese, cold cuts, pâté, preserves, spices, cakes, honey, Christmas desserts and the goodness of the flavors of Magna Graecia (that are specialties of Calabria and Sicily), to be offered directly to consumers who are looking for products made using organic and certified raw materials following an essential handcraft manufacture. The territory The south of Italy, in particular the region of Calabria, was a territory where different cultures settled many years ago and where many people have left their cultural background during their passage. The Greeks and the Romans, later the Visigoths, the Goths and also the Byzantines, the Arabs and the Normans, left to this territory their culture, art and traditions that are unique in their kind. Thanks to them, Cala- bria is today the cradle of those high-quality products which were maintained over the centuries. Starting from the top of the Italian boot, the province of Reggio Calabria is very famous for the presence of bergamot, which is a product completely exclusive of this area, whose good climatic conditions are particularly advantageous for the plantation of citrus fruits. Going up along the Tyrrhenian coast, we can find the little province of Vibo Valencia where N’duja is produced, which is considered by many people the typical plate of the region, in the little town of Spilinga. The province of Crotone can be distinguished for the production of Pecorino Cheese, a dough che- ese made with sheep’s milk; this production goes back many centuries ago, as well as for the production of Sardella, also called the “Calabrian Caviar”, typical product based on sardines and red chili. The area of Catanzaro is known for its spicy pro- ductions and the area of Cosenza can be reminded for its typical desserts. Going along the whole region of Calabria, thanks to the local production of wheat, wines and olive groves, it is possible to appreciate a particular traditional production of pasta, wine and oil that, combining themselves with climatic conditions and the altitude where they are produced, permit us to offer a rare product. In addition the tradition and the recipes handed down from generations to generations guarantee for the consumer the possibility to taste a traditional product of the highest quality that has nothing to do with mass heap and the main purpose of producers is to increase their production, facing the nature obtaining questionable results. Starting from this strong territorial connotation, Only Good Italy proposes Italian food that are the basis of the Mediterranean diet. It is a product for a nutritious and healthy cuisine, handed down over the centuries through family life that is also a peasant type and close to the ground. The Mediterranean diet is considered to be particularly suitable to human nourishment because it is complete, balanced and characterized by a large number of unsaturated fatty acids and plant fibers, which are all ingredients that go back to the root of the local traditions. Italy Mission All the “Made in Italy” products are historically expression of tradition, art and crafts, artisans workings, and great attention to details that are matured over the course of decades of experience. Only Good Italy wants to be an ambassador of the typical agric-food excellencies of the Italian tradition. It wants to become a point of reference in the exploitation of the gastronomic culture, which is linked to the territory. Thus, through the selection of the most excellent producers who are well-established in the territory of origin, are also able to combine safety and quality, and to export beyond the borders of our beloved land the flavors of tradition. The selected products are all certified for high quality and typicality. This is an area where there are a lot of vineyards, olive tree groves, woods and plenty of water that all constitute the perfect conditions to produce an excellent wheat and therefore an excellent pasta. Preparing homemade “macaro- ni”, “covatelli” and all the other types of pasta is important for us to give satisfaction to the most demanding palates, using a wheat flour of the highest quality honored for its yield and its organolep- tic characteristics, it is also worked with the water coming from the plateau of the south of Italy, which is called Sila. This is the secret that we were to look for: an handmade pasta with durum wheat semolina, obtained exclusively from the semo- lina of the highest quality and from transformation processes that guarantee high quality, flavor and color of the homemade pasta. In this local context, where the great rural tradition is still at the head of the food chain and where the territory expresses all the ideal conditions for the cultivation of a good wheat, handmade pasta takes shape combining tradition with technology. The pro- duction is today enriched by following the latest technological methods and in compliance with health regulations and metho- dologies. Controlled at each instant and production phase, the product is careful examined at each step of processing so as the ensure a product that can guarantee the particular characteristics of the past. Through small machinery and various manufacturing stages, it is possible to obtain the traditional pasta forms. Pasta is pasteurized and dried in a slow and gradual way so as not to change its typical nourishing characteristics, obtaining a genuine and a product of the highest quality. I watched while my mother, an excellent cook from whom I inherited the passion for cooking, prepared delicious meals.
