The Evolution of Bulgogi Over the Past 100 Years*
Korea Journal, vol. 53, no. 4 (winter 2013): 168-194. 168 © Korean NationalKOREA Commission JOURNAL for / UNESCO, WINTER 2013 The Evolution of Bulgogi over the Past 100 Years* LEE Kyou Jin and CHO Mi Sook Abstract The purpose of this research is to examine the history of bulgogi’s transition and development over the past century. While bulgogi carries on the legacy of Korean traditional roasted meat, it is simultaneously a very unique cuisine, of which the rec- ipe and meaning have changed over time according to shifting economic and social conditions. As a result, bulgogi is not merely a simple dish; rather, the term embodies numerous symbolic meanings of Korean food culture. The origin of this seasoned roast meat can be traced back to the Goguryeo dynasty (37 BC–AD 668). In differ- ent historical periods and social contexts, bulgogi has gone through unusual and dynamic transitions of cooking methods, such as roasting and boiling. One of its first transitional periods (1920s–1960s) is marked by the use of grilled beef that origi- nates from neobiani and the commercialized cooking process of roasting. During the developmental phase of bulgogi (1960s–1990s), bulgogi boiled in meat broth appeared, quickly gaining popularity. The phase of decline in bulgogi consumption and popularity was followed by the revival of bulgogi (after the 1990s), when it was adapted through various cooking methods. Crock-Pot Kalbi Jjim [Beef Short Rib Stew] Serves: 4-6 This wintery dish simply speaks to us, a recipe that uses traditional Korean flavors, but with a preparation that is wholly American. The Crock-Pot was invented in 1971 by a Chicagoan named Irving Naxon, whose grandmother grew up eating slow-cooked cholent in her Lithuanian shtetl. With Naxon’s electric slow-cooker, a generation of Americans was raised on the culinary principal of “set it and forget it.” This recipe has been created with just that in mind. After going low and slow for six hours, beef ribs become fall-off-the-bone tender while the vegetables glaze themselves in a robust, umami-rich sauce. There’s natural sweetness from the apples and mirin and a savory edge from the soy sauce. It’s a can’t-lose combination. For many Koreans, kalbi jjim is considered a special-occasion dish, the one Mom makes to celebrate big life achievements, like acing that big calculus test or being named All State in tennis. This is because short ribs are expensive, especially in Korea. When preparing our version, it’s important to take care with the initial sear on the ribs. We are open for lunch and dinner; our full service bar features original cocktails. We aim to be a bright, fun and easy place for all to be with enthusiastic, informative and warm service. ABOUT OUR FOOD The food at Miss Kim is rooted in Korean culinary tradition and inspired by Michigan’s bountiful produce and hard working farmers. Despite Korea being relatively small, traditional Korean food is intensely sea- sonal and regional. To us at Miss Kim, this means that to truly honor a dish, it must be made with local, seasonal ingredients–rather than Korean ingredients that happen to be in season thousands of miles away. While this requires a constantly changing menu, a ton of historical research and many, many experiments, we firmly, even stubbornly, believe that it is the only honest way to cook.
