However, it is also responsible for the unpleasant fishy smell and high salt content of kimchi. Therefore, the present study aimed to identify alternative jeotgal sources and investigate the fermentation properties of jeotgal alternatives added to kimchi. The tomato hot- water extract (TH2) and dry-aged beef hot-water extract (DBH) were selected as jeotgal alternatives for kimchi preparation based on their glutamic acid contents. Characteristics of kimchi with TH2 alone (JA1) and TH2 and DBH in combination (1:1, JA2) were compared with kimchi prepared using commercially available anchovy fish sauce (CON).

Basically you coat your vegetables in flour and egg and then pan-fry with a bit of oil. Main Ingredients: o 1½ Cups Potato Batter Ingredients: o 1/2 Cup Onion o 1 Cup Zucchini o 1.5 Cups Flour o 1 Cup Carrot o 1 Cup Ice Water o ½ Cup Green Onion o 2 Eggs o 1 tsp Salt o ½ tsp Salt o Some Cooking Oil (For Frying) Mix these ingredients for the Dipping Sauce: 1 Tbsp Soy Sauce, ½ tsp Vinegar, ½ tsp Water Directions Peel and wash vegetables before slicing them into small strips. Gently mix all the vegetables with 1 tsp of salt in a mixing bowl. Set it aside for about 3 minutes while making the pancake batter. Add all the ingredients for the batter to a separate bowl and mix. Add the salted vegetables into the batter. Mix the vegetables with the batter gently. Preheat a nonstick pan with a generous amount of oil on medium. Pour some of the batter into the oiled pan. Spread the batter out evenly and thinly with a fork. Using a generous amount of oil, and making the pancakes thin, are two more secrets for crispy pancakes. When one side of the pancake becomes golden brown, flip the pancake. Push the pancake with your spatula to give it a better texture. Cut your pancake into your desired shape and enjoy!
