    The Whiskey Machine: Nanofactory-Based Replication of Fine Spirits and Other Alcohol-Based Beverages © 2016 Robert A. Freitas Jr. All Rights Reserved. Abstract. Specialized nanofactories will be able to manufacture specific products or classes of products very efficiently and inexpensively. This paper is the first serious scaling study of a nanofactory designed for the manufacture of a specific food product, in this case high-value-per- liter alcoholic beverages. The analysis indicates that a 6-kg desktop appliance called the Fine Spirits Synthesizer, aka. the “Whiskey Machine,” consuming 300 W of power for all atomically precise mechanosynthesis operations, along with a commercially available 59-kg 900 W cryogenic refrigerator, could produce one 750 ml bottle per hour of any fine spirit beverage for which the molecular recipe is precisely known at a manufacturing cost of about $0.36 per bottle, assuming no reduction in the current $0.07/kWh cost for industrial electricity. The appliance’s carbon footprint is a minuscule 0.3 gm CO2 emitted per bottle, more than 1000 times smaller than the 460 gm CO2 per bottle carbon footprint of conventional distillery operations today. The same desktop appliance can intake a tiny physical sample of any fine spirit beverage and produce a complete molecular recipe for that product in ~17 minutes of run time, consuming <25 W of power, at negligible additional cost.     WHISKEY 101 Rye Whiskey: If corn whiskey is the Neanderthal ancestor of debonair modern bourbon, rye is the missing link in the evolutionary scale...Cro Magnon whiskey if you will. Straight rye whiskey must be made from a mash of at least 51% rye, and must be fermented in new charred oak barrels. Offering a sweeter flavor but still sporting a mule kick, rye is often an acquired taste, but one that is well worth acquiring. Rye is the trickiest of aii whiskey's to define. The reason for this comes from a historical naming convention for Rye produced in Canada. While you would assume Rye whiskey must be made predominantly from Rye mash, this is not always the case. Canada has distilled Rye for almost as long as the country has existed, and historically the majority of the mash was comprised of Rye mash. But with no actual rules in place the spirit is now produced with a mash sporting a corn to rye ration as high as 9:1. The only rule to label your whisky as Rye in Canada is for it to have some rye in it, and to possess the aroma, taste and character generaily attributed to Canadian whiskey... whatever that is. Bourbon Whiskey is "a distinctive product of the United States made from a fermented mash containing at least 51 percent corn, distilled at no more than 160 proof, aged at no more than 125 proof for at least two years in new charred oak barrels, and bottled at no less than 80 proof."
