    The Whiskey Machine: Nanofactory-Based Replication of Fine Spirits and Other Alcohol-Based Beverages © 2016 Robert A. Freitas Jr. All Rights Reserved. Abstract. Specialized nanofactories will be able to manufacture specific products or classes of products very efficiently and inexpensively. This paper is the first serious scaling study of a nanofactory designed for the manufacture of a specific food product, in this case high-value-per- liter alcoholic beverages. The analysis indicates that a 6-kg desktop appliance called the Fine Spirits Synthesizer, aka. the “Whiskey Machine,” consuming 300 W of power for all atomically precise mechanosynthesis operations, along with a commercially available 59-kg 900 W cryogenic refrigerator, could produce one 750 ml bottle per hour of any fine spirit beverage for which the molecular recipe is precisely known at a manufacturing cost of about $0.36 per bottle, assuming no reduction in the current $0.07/kWh cost for industrial electricity. The appliance’s carbon footprint is a minuscule 0.3 gm CO2 emitted per bottle, more than 1000 times smaller than the 460 gm CO2 per bottle carbon footprint of conventional distillery operations today. The same desktop appliance can intake a tiny physical sample of any fine spirit beverage and produce a complete molecular recipe for that product in ~17 minutes of run time, consuming <25 W of power, at negligible additional cost.     PENDERYN PRESS PACK NOV 5TH 2018 PENDERYN WHISKY: 100 YEARS IN THE MAKING Penderyn Whisky is made at the Penderyn Distillery which is located in the southern foothills of the famous Brecon Beacons National Park, north-west of Cardiff, and north- east of Swansea. Small stills existed in Wales in the 4th century, but the last whisky officially distilled in Wales was produced by the original, but short-lived Welsh Whisky Company at the Frongoch Distillery in Bala, North Wales, which closed in the early 1900s. Other notable characters in Wales’ whisky past include David Lloyd George, the only Welsh Prime Minister of Great Britain, who introduced the ‘3 year/1 day’ rule for whisky maturing; and Evan Williams (from Dale in Pembrokeshire) who was one of the founders of the American Bourbon industry. The idea for Penderyn was conceived by a group of friends sitting around a pub table in The Glancynon Inn in nearby Hirwaun, who decided to re-introduce the lost art of whisky distilling to Wales when they bought an un-commissioned whisky still designed by Dr David Faraday, a descendant of the famous Victorian scientist, Michael Faraday. Their dream was to create a world class single malt whisky. On Thursday 14 September 2000 the first distillation was carried out. The whisky is distilled in a unique single column still, producing a flavourful spirit at 92% abv which is married with water from the Brecon Beacons. The late great Master Distiller Dr Jim Swan came on board in 2002 and his vision helped create Penderyn’s unique style.

Abstract This comment considers the history of chocolate in parallel with that of coffee, in order to identify not only patterns of similarity and distinction, but also to highlight potential strategies for explanation and their implications for the writing of commodity history. Keywords Cacao, Chocolate, Coffee, Commodity History The appearance of this new collection of primary research articles on aspects of the history of chocolate affords an opportunity to reflect on possible approaches to the integration and implications of their findings into an overview of that history as a whole. By considering these in parallel with the history of coffee, it may be possible to identify not just patterns of similarity and distinction, but also strategies of explanation with implications for the writing of commodity history. Coffee and chocolate share many similarities as crops, commodities and consumer products. Both crops can only be grown in the tropics, in both cases the tradable commodity takes the form of a dry bean, and in both instances that bean has to be roasted and subject to various additional processes in order to turn it into a consumable. The final coffee and chocolate products have frequently had their connections back to their origins obscured , enabling them to be recast as branded “glocal” goods, ones that have been both materially adjusted and culturally constructed to respond to the particular preferences of the eventual consumer. That disconnection has been intensified over the course of a historical trajectory that has seen both coffee and chocolate travelling the path from elite luxuries to democratised daily indulgences within the developed nations of the West.
