At Eight Row Flint, we believe that giving people the opportunity to try new things back-to-back proves the easiest way to clarify those differences. In this flight we picked four spirits from some of our favorite producers to help navigate this potentially unfamiliar territory. >>> Make It Even Better: Add a Sangrita for $2.5 Tequila: From Tequila Ocho, in the state of Jalisco, Mexico. Made from 100% Blue Agave Weber, cooked with steam, fermented in open-air wooden tanks, and distilled twice on copper pot stills. Tequila Ocho sources agave from single estates all over Jalisco and prides itself on maintaining the nuance of terroir between each field. Mezcal: From Rey Campero, in the state of Oaxaca, Mexico. Oaxaca is arguably one of Mexico’s most famous mezcal-producing regions. The agave variety used here is Tepextate, a wild agave grown in the Southern Highlands of Oaxaca that can take up to 25 years to mature—about three times as long as tequila agave. Cooked over wood in underground “hornos,” after which it is crushed and fermented with wild yeast, and distilled twice in copper pot stills. Sotol: From Flor del Desierto, in the state of Chihuahua, Mexico. Sotol is an misunderstood plant that grows all over the Chihuahuan desert, as far north as West Texas. While it acts similarly to agave, sotol is not agave at all. It is more closely-related to the artichoke. This plant provides spirits with a massive range in variation and flavor profiles. Our favorite comes from Juarez, Mexico. Cooked and processed almost identically to Rey Campero’s Tepextate, it is a fine balance of light smoke and the vegetal qualities that make sotol so interesting. Raicilla: From La Venenosa, also in the state of Jalisco, but not technically in the Tequila-growing region. Raicilla is produced from agave cultivated by Maestro Tabarnero Don Rune Peña. Grown at 1,500 feet above sea level, the Agave Maximiliana plants are roasted after harvest in a wood-fired adobe oven, and fermented with wild yeast in 200L vats. It is then distilled in an Arabic-Filipino hybrid still, and uniquely, is bottled after only one distillation.     PAGE 89 • Articles • Distilling Tradition: The Traditionalization of Craft Moonshine at Bear Wallow Distillery CAROLINE HUNDLEY MILLER Indiana University, Bloomington Abstract: Moonshine has traditionally been defined by the illicit nature of its production. Increasingly micro-distilleries are basing their business on the production of “legal moonshine”—legally produced un-aged whiskey labelled by the distillers as moonshine. This paper draws primarily on ethnographic work at Bear Wallow Distillery to understand how the owners create a destination distillery by connecting their legal moonshine and distillery experience to a local moonshining tradition and a broader rural American imaginary. It will also explore issues of traditionalization and commodification of heritage through examining how micro-distilleries rely on a perceived connection with an “authentic” moonshine tradition even as they seek to challenge traditional definitions of moonshine in the development of their own moonshining tradition. Bear Wallow Distillery is a family-run craft micro-distillery in Gnaw Bone, Indiana, nestled in the hills of Brown County. Brown County, situated about an hour south o f Indianapolis, is a popular tourist destination, especially for outdoor recreation. Its beautiful outdoor attractions include Hoosier National Forest, Brown County State Park, Yellowwood State Forest, Lake Monroe, and Lake Lemon. The distillery opened in 2014 and is owned and operated by Susan Spagnuolo. The distillery is truly a family-run business: Susan’s son Adam is the head of production, her son Jon is in charge of marketing and creates all the labelling and logos, and her husband Mike works at the distillery entertaining customers with highly engaging tours on the weekends.

    The Whiskey Machine: Nanofactory-Based Replication of Fine Spirits and Other Alcohol-Based Beverages © 2016 Robert A. Freitas Jr. All Rights Reserved. Abstract. Specialized nanofactories will be able to manufacture specific products or classes of products very efficiently and inexpensively. This paper is the first serious scaling study of a nanofactory designed for the manufacture of a specific food product, in this case high-value-per- liter alcoholic beverages. The analysis indicates that a 6-kg desktop appliance called the Fine Spirits Synthesizer, aka. the “Whiskey Machine,” consuming 300 W of power for all atomically precise mechanosynthesis operations, along with a commercially available 59-kg 900 W cryogenic refrigerator, could produce one 750 ml bottle per hour of any fine spirit beverage for which the molecular recipe is precisely known at a manufacturing cost of about $0.36 per bottle, assuming no reduction in the current $0.07/kWh cost for industrial electricity. The appliance’s carbon footprint is a minuscule 0.3 gm CO2 emitted per bottle, more than 1000 times smaller than the 460 gm CO2 per bottle carbon footprint of conventional distillery operations today. The same desktop appliance can intake a tiny physical sample of any fine spirit beverage and produce a complete molecular recipe for that product in ~17 minutes of run time, consuming <25 W of power, at negligible additional cost.     The 25 Most Important Bourbons Ever Mad If you asked a spirits expert a quarter century ago to name the most important bourbons ever made, they might have wondered whether America’s home-grown whiskey deserved such analytical consideration. Bourbon was in the doldrums, unappreciated and underdrunk. But today, thanks to a boom that shifted into high gear around the turn of the century, bourbon is arguably the most talked-about, most obsessed-over and most in-demand spirit in the world. To better assess how we got here, we consulted with 23 bourbon experts, including distillers, journalists, authors, whiskey-bar owners and one whiskey-centric-liquor-store proprietor. Each participant named five to ten bourbons that made a difference—not their favorite bourbons, or the ones they thought tasted best, but those bottles that were influential, innovative or otherwise held a significant place in bourbon history. They were allowed to reach way back to pre-Prohibition years, cite bourbons they could never have tasted, and yes, in the case of distillers, include their own creations. (One self-serving endorsement would not land them a spot on this list, however, as every bourbon here received multiple votes.) The final order was determined strictly by the votes received. There were a number of ties in the lower rankings. In those cases, editorial judgment determined final rankings. In a few instances, the panelists indicated complete lines of bourbons that bore the same name, not just a single bottling. In other cases, panelists pointed out different bottlings within a single line. As the arguments behind these choices were often similar, these votes were sometimes combined and placed within the rankings as a bourbon label’s complete line.

No specially prepared samples will be accepted. Entries must be in their final container and sealed. Categories that are not recognized by the TTB or not in approved TTB size formats will be automatically removed from the competition. Eligibility Open to commercially licensed Spirits producers with valid DSP (Distilled Spirits Plant) permit and/or distributors. All Spirits must be entered with permission of the brand owners, and be available for commercial sale. Limits There is no limit to the number of entries per producer. No Spirit may be entered in more than one (1) class. Tips When Registering Register each spirit under the correct distillery name. Check your distillery’s name spelling/completeness. Review your entry cart before you complete the registration transaction to assure that you have entered the correct division and class for each distillery/Spirit.
