Tyson Stelzer is an Australian wine writer with a particular interest in screwcaps and champagne. It was the latter that lured him to a Hawksmoor church in London's Spitalfields recently to lay on the finest generic tasting of champagne the capital had seen for some time. To the outside observer it may seem strange that this event was organised from Australia and, apparently anyway, had nothing to do with the official generic champagne promotional body. Ours not to reason why. Taste Champagne was a great success for those of us who enjoy tasting champagne without too much of a crowd. I dare say Tyson might have wished for even more attendees at the trade tasting during the day and the public one in the evening. But it was a sufficient success for him and his team to be planning the next one already. Put 25 March 2020 in your diary... There were so many champagnes available to taste – 211 – that a strategy was needed. I decided to taste each exhibitor's standard non-vintage blend, which is after all the calling card of all producers and, according to the most accurate estimate I could get from champagne officials, represents 94.4% of all champagne produced. We may all fuss about the luxury-priced prestige cuvées, and I would like to point out that vintage champagne is probably the bargain category at the moment, but in reality, the champagne business is all about NV.

In the Rhône Valley there is Marcel Guigal and Jacques Reynaud; in the Languedoc Aimé Guibert and Laurent Vaillé; in Burgundy Henri Jayer, Jean-François Coche and Lalou-Bize Leroy. In Champagne however, most of the legendary characters are historical and linked to today’s mega houses and luxury brands - Dom Perignon, Lilly Bollinger and the widow Barbe-Nicole Clicquot. Things are changing however. A new cast has emerged over the last couple of decades, and the lead role is played by Anselme Selosse - already a legend in his own lifetime. Anselme decided early that he was going to do things differently. He trained in Burgundy during the 1970s, when the estate bottling revolution swung into action and the act of labelling one’s own production - rather than selling it to the previously dominant negociant houses - became the rule rather than the exception. This sounded the death knell for many merchant houses and those that survived (the likes of Jadot, Drouhin, Bouchard etc) had to adapt to the new reality by becoming significant land holders in their own right.

More specifically, we see terroir producers devoting more time to understanding and letting that character trait come through where previously the focus was always on blending. This 1995 Champagne Dinner offered the opportunity to taste and to experience with food the finest examples from this vintage from a range of producers with varying philosophies on winemaking and viticulture. With the release of the 1996s, the 1995s seemed to get overshadowed. The year 1995 experienced a growing season with late flowering but once it occurred it happened fairly quickly. Then, the summer came on strong with a heatwave in June followed by nearly two months of no rain. Harvesting took place during mid to late September with a plentiful crop. It is considered the first vintage truly worthy of producing a vintage wine after 1990. The heat of the 1995 summer delivered Champagnes with ripe flavours and rounded textures, but they have acidity too, so for some critics they are more balanced in expression than the 1996s. For this dinner we paired the 1995s with the culinary creations of the chef and his team at Howard’s Gourmet.
