It is also a part of the traditional cycle of horse husbandry and the modern small business production that thrives in the countryside around big cities. In my study, based on the in-person and online survey of kumis consumers and on in-depth interviews with kumis producers in the two major cities of Kazakhstan, Astana and Almaty, I explore the dynamics of kumis supply chain and customer behavior and discuss how modern- day city dwellers make choices about kumis consumption while imagining the landscape, seasonality, and “natural-ness” of kumis production. National dish From Wikipedia, the free encyclopedia https://en.wikipedia.org/wiki/National_dish A national dish is a culinary dish that is strongly associated with a particular country.[1] A dish can be considered a national dish for a variety of reasons: • It is a staple food, made from a selection of locally available foodstuffs that can be prepared in a distinctive way, such as fruits de mer, served along the west coast of France.[1] • It contains a particular 'exotic' ingredient that is produced locally, such as the South American paprika grown in the European Pyrenees.[1] • It is served as a festive culinary tradition that forms part of a cultural heritage—for example, barbecues at summer camp or fondue at dinner parties—or as part of a religious practice, such as Korban Pesach or Iftar celebrations.[1] • It has been promoted as a national dish, by the country itself, such as the promotion of fondue as a national dish of Switzerland by the Swiss Cheese Union (Schweizerische Käseunion) in the 1930s. Pilaf (O'sh), a national dish in the cuisines of Central Asia National dishes are part of a nation's identity and self-image.[2] During the age of European empire-building, nations would develop a national cuisine to distinguish themselves from their rivals.[3] According to Zilkia Janer, a lecturer on Latin American culture at Hofstra University, it is impossible to choose a single national dish, even unofficially, for countries such as Mexico, China or India because of their diverse ethnic populations and cultures.[2] The cuisine of such countries simply cannot be represented by any single national dish. -

The Kazakh, Kyrgyz, Tajik, Turkmen and Uzbek peoples belonged to various states: Turkistan governor-generalship, which was part of the Russian empire, the emirate of Bukhara and the khanate of Khiva. Since ancient times the peoples of the region had lived in close contact and influenced one another, developing many common features in their material and spiritual culture and way of life. An important role in this was played by Islam, which for many centuries had been the region’s domi- nant religion. While emphasizing the common history of the region’s peoples we should nevertheless note the nature of the differences between them, in particular their various his- torical and cultural traditions. Some (the Tajiks, and to a considerable extent the Uzbeks) led a settled way of life, others were in transition to a settled way of life, while still others were nomadic and began the transition to a settled way of life only in the Soviet period (after 1917). These circumstances are important for any analysis and understanding of the problems of their spiritual life. On the Edge. The Concept of Progress in Bukhara during the Rule of the Later Manghits. Studia Iranica Upsaliensia 22. 215 pp. Uppsala: Acta Universitatis Upsalien- sis. ISBN 978-91-554-8805-5. This work is a study of the concept of progress in Bukhara between approximately 1860 and 1920. It is based on unpublished and published sources from this period. The study suggests that not only the technological and social developments that took place on a global scale between 1860 and 1920 affected the conceptualization of progress in Bukhara, but that globa- lized narratives on progress did so as well. Cosmographical concepts and explanations that previously were more common were notably absent in what during the 1910s became a disco- urse on progress, but the concept of progress still had an important eschatological dimension and was closely related to apocalypticism. Chapter One presents the context of the study. The second chapter discusses the theoreti- cal framework and the analytical concepts. The next chapter continues by outlining the politi- cal, economic and cultural conditions in Bukhara during this period as well as providing a short historiographical discussion. -
