CLIMATE CHANGE A REALITY IN THE REGION Over the past 30 years, the three key uni- versal bioclimatic indexes used to monitor Water balance local winegrowing conditions have evolved slightly down as follows: Huglin index rose from 1,565 to 1,800 Cool nights index rose from 9.8°C to 10.4°C Compared with the 30-year baseline average (1961-1990), the temperature has risen by 1.1°C ON AVERAGE.     FRANÇOIS ROUSSET-MARTIN Country: France Region: Jura Appellation(s): Côtes du Jura Producer: François Rousset-Martin Founded: 2007 Annual Production: 1,000 cases Farming: Organic Blink and you might miss Nevy-sur-Seille, a tiny village tucked away in the Vallée des Reculées, where François Rousset makes his wine. Albeit discreet, this part of the Jura resembles something of the American West—undiscovered and wild, and rich in natural habitat. The backdrop here is dramatic: Massive limestone and marl cliffs perched atop pedestals of sloping vineyards, and in the foreground, flocks of livestock grazing and snoozing the day away. Traditionally a mixed farming region, the Jura is witnessing a new generation focused exclusively on winemaking, and in the case of Rousset, redefining what we consider typical of the area with his vins ouillés. François first caught the wine-bug growing up in Burgundy where his father was a micro-biologist for the Hospices de Beaune. Childhood trips were spent in the Jura getting to know and falling in love with a parcel of family vines which he would later vinify with his father. After earning an oenology degree and continuing his journey in the southern Rhône and Languedoc regions, he returned to his Jurassian roots and in 2007 officially launched his winery. While his scientific background provides François with a literal understanding of the transformation from grape to wine, he’s most influenced by keen intuition, and winemaking lore passed down from his great grandfather, also a winemaker. François's raison d'être is to better know and understand the incredible terroirs in which he is invested.

    White Côtes du Jura Savagnin TERROIR From the Val de Vallière gorge, on a slope facing the village of Montaigu, with southerly exposure. Clayey limestone, blue-black, laminated marls with some lias slate. A terraced vineyard. OUR WINEMAKING KNOW-HOW • Work in the Vines Vineyard tended biodynamically, inspected and certified by Demeter: applications of horn manure, silica and herbal teas. These farming methods preserve the grapes' wild yeasts which enhance the authenticity and purity of the wines. Exclusively manual grape harvest with selective-sorting in the vines. The grapes are rapidly transported to the cellars in small boxes to avoid squashing the bunches, thereby minimising the amount of SO2 needed during vinification. • Variety and Yield Savagnin, with yield limited to 1.4 TPA (22Hl/Ha) in order to preserve the natural balance of the wine. • In the Cellars This wine ferments in oak barrels, where it remains to age under a veil of yeast for 36 months, in our cool, 13th-century cellars. No addition of yeast, sugar, or any other oenological products. The wine is lightly filtered then bottled with the addition of very little SO2, following the lunar calendar on a "root" day. The bottles are stoppered with natural, fire-branded corks. TASTING NOTES Straw-gold in colour, with a refined yet powerful citrus nose. Candied citrus fruits and walnuts in the mouth, with fabulous length, smoothness and remarkable precision. FOOD PAIRING SUGGESTIONS Delicious served at 16°C as an aperitif, or to accompany fish, white meats in creamy sauces, spicy dishes and curries, or mushrooms and local cheeses.
