Sémillon, Kalin Cellars, Livermore Valley 2001 8.50 16.00 Made from 100 year old vines, the wine was fermented in French for ten months and bottled without filtration, and just released after 14 years in bottle. It boasts lots of vigor and youthfulness with a light gold color; aromas of gravel and honeysuckle; flavors of figs, orange marmalade, melons and Umami! “Most wines evoke the taste sensations of sweet, salty, bitter and sour. The wines are not unlike a white Burgundy in terms of its flintiness, spices and texture. This one, medium bodied, from high altitude vineyards, boasts aromas of flowers, apple and white peach; and fresh and savory flavors of citrus rind, nectarine and white fruit. 25. Sauvignon Blanc “Le Grand Senais”, Dominique Crochet, , 2015 6.50 12.00 “Shiny yellow color. White flowers, citrus and pear powerful aromas. Also mineral. 30. Aligoté, Domaine Marc Colin, Côte-d’Or, France 2016 6.50 12.00 This famous producer in Burgundy works some of greatest plots and vineyards including Le Montrachet & Bâtard-Montrachet. His Aligoté vines are from Puligny-Montrachet which are over 70 years old. This one boasts green apple, peach pit and creamy aromas; flavors of hazelnuts, white mushrooms, spices, and mineral qualities. 33. Chardonnay, Uncle Yu's by Navarro Vineyards, Mendocino 2016 6.50 12.00 Medium-bodied and flavored, not oaky, fresh with pear, apple and slight fig flavors. Good value. Chardonnay, Puligny-Montrachet, Paul Chapelle, Côte-d'Or 2009 12.00 23.00 Without a doubt, Puligny-Montrachet of Burgundy is one of few most glorious villages in producing world class Chardonnay. It makes Chardonnay that is powerful yet broad and graceful. Chapelle, a former mayor and an enologist, has been a consultant for some of the top producers in the Côte de region (Ramonet, Jobard, Lafarge, Pousse d'Or, Simon Bize, Paul Pernot and de Montille, to name a few). This one is buttery boasting blossom, stone fruit & bread dough aromas; baked apple, pear, citrus, cool stone flavors with a rich mineral finish. ◙36. Chardonnay, Kalin Cellars “Cuvée D, Dutton Ranch”, Sonoma Coast 1995 11.50 22.00 “Dutton Ranch produces Chardonnay that exhibits exceptional breed and refined fruit complexities. Dry Riesling, Empire Estate, Finger Lake, New York 2017 6.00 11.00 “Dazzling silver-gold in color, on the nose there are intense mineral aromas of shale, gravel & limestone, combined with notes of white flower, golden apple, peach & lemon oil. A focused burst of acidity hits the palate, followed by flavors of fresh apricot, lime & grapefruit pith, all leading to a weighty, savory mineral finish”. _ From the Wimery 40. Riesling-Kabinett, Andreas Schmitges “Red Slate”, Mosel-Saar-Ruwer 2015 6.25 12.00 Most people hesitate to give German Riesling a try: “I don’t like sweet wines”. But they would fall in love with it after the first sip. It is charming & intriguing rather than cloying because of its intrinsic acidity balance! Grown in red slate, this is a youthful, vibrant, light-bodied, luscious wine with lovely flavors of ripe pear, peach, citrus & lime. 42. Riesling Hallgartener Jungfer-Spätlese Goldkapsel, Prinz, Rheingau, Germany 375ml 2007 8.00 15.00 This one comes from the original part of the Hallgartner Jungfer vineyard. It boasts super intensity with clear yellow-green color, grapefruit and slate aromas, and deep ripe peach, apricot, golden delicious apples and honey flavors. It offers power, high viscosity and great acidity balance! 44. Riesling Bernkasteler Doctor-Spätlese, Weingüter Wegeler, Mosel, Germany 375ml 2005 12.75 25.00 The legendary "Bernkasteler Doctor" is the most famous vineyard in Germany! It’s small, about 8.1 acres, south facing & with an extremely steep slope, about 45-60 percent & dark, weathered slate. The story began in 14th- Century prince-bishop Boemund II of Trier drank two bottles of wine from the vineyard and was cured of a terminal illness overnight, hence the name of the plot. This one is powerful yet pure with the nose of almond, coconut, petro & saffron-wax botrytis. On the palate it’s luscious,ripe & creamy with flavors of lemon pie, stone, marmalade.

47. Chasselas, Epesses “La Crosse”, Luc Massy, Epesses, Switzerland 2012 6.50 12.00 “It is a collection of reminiscent flavors: it’s got the whiff of sweet-green Alpine air like “Maje” from Bruna, it’s got a bit of licorice like Colin’s Aligoté and that soft, round texture like Marsanne from Les Oliviers vineyard. There’s a cream and a tang similar to the great wines of Gadais, a fleck of waxy gold like Dezi’s Verdicchio. Pinot Auxerrois “Vieilles Vignes”, Domaine Albert Mann, Alsace 2016 6.50 12.00 “A very pretty and charming dry white with moderate acidity, but some really interesting spicy and nutty notes as well as beautiful balance at the silky finish”. _ James Suckling 49. Pinot Gris “Winzenberg”- Grand Cru, Hubert Meyer, Blienschwiller, Alsace 2015 8.00 15.00 "This elegant Pinot Gris delivers the smoothness of a granitic soil with a flexible, round and medium-bodied flavor. The nose is filled with mineral, pear and stone fruit. On the palate, the wine envelops the mouth and caresses the palate with a touch of residual sugar and its fresh acidity and finishes dry. Although it certainly asserts itself now, this great wine will affirm its designation as a Grand Cru with age..." _ From the winery 52. 58. Pinot Gris Rosé “Aurosa”, Antiquum Farm, Willamette Valley, Oregon 2017 8.50 16.00 “This unique wine, labeled rosé, is a lovely rose-toned copper. But is it really a rosé, or just a rich, phenolic white? However you label it, call it delicious; its rose petal, bee pollen and strawberry scents and flavors are concentrated and creamy. It spent six months on the lees—half in stainless steel and half in neutral oak”. _ Wine Enthusiast 59. Pinot Noir Rosé, Marsannay, Charles Audoin, Côte-d’Or 2017 7.50 14.00 Burgundy Rosé is considered a “poor man’s Mercedes” because the is expensive. Often, Burgundians keep it for them-selves. This one is full of fruit and personality without being boisterous. It’s crisp, fresh with delicate

berry, cherry, wild strawberry, raspberry, a hint of flower & mineral flavors. 61. Fleur de Cinsault Rosé, Domaine de la Barthassade, IGP Pays d'Herault, Languedoc 2017 6.00 11.00 100% Cinsault. Golden, light salmon color. Dry, fresh and delicate on the palate with intense flavors of slight spice and fresh berry fruit. In 2013, with training and education in some of the most prestige domaines in Burgundy & Provence, Hélène & Guillaume Baron settled in Aniane, in the newly granted AOC Terrasses du Larzac in Languedoc. Within a few years their wines are among the best in the appellation. 62. Gamay Rosé, Vin du Bugey-Cerdon “La Cueille”, Patrick Bottex, , France NV 6.75 12.75 Slightly sparkling, totally original with flavors of strawberries & raspberries, from Savoie high in the French Alps.

64. Gamay, Moulin a Vent “Domaine Les Gryphées”, Pierre Durdilly, Beaujolais 2016 6.00 11.00 It’s a great deal for a cru classified Beaujolais! Moulin-à-Vent combines the floral elegance of cru Fleurie and the muscle of cru Morgon for a supple, balanced and beautiful Gamay wine that is fruity and expressive in its youth yet can age gracefully over a number of years. This is a charming and refine yet powerful Moulin. It is complex and savory with floral and white pepper aromas; flavors of red berry, dark cherry fruit and violets. 65. Pinot Noir, Hilliard Bruce “Earth”, Santa Rita Hills 2014 8.00 15.00 “The 2014 Pinot Noir Earth is an attractive, mid-weight wine. Crushed flowers, sweet red cherries, mint, and tobacco are laced together in a pretty and expressive Pinot that is likely to offer its best drinking sooner rather than later. Rose petal, dried cherries, mint and licorice add the closing shades of nuance...” _ Vinous ◙66. Pinot Noir, Kalin Cellars “Cuvee DD”, Sonoma County 2000 14.50 28.00 Kalin’s wines are as unique as you can get from California. They have just released their 2000 Cuvee DD and we are so lucky to be maybe one of, if not the first who carries it, not to mention pours it! The fruit comes from the David Demostene Ranch in the Alexander Valley, the oldest Pinot Noir planting in the region, and it’s dry-farmed. Bricked cherry and tawny color; violets, brown sugar, Chinese five spice, umami, barnyard aromas; and cherry, red fruit, licorice, mushroom notes. It competes with a great Burgundy but at a fraction of the price!

Burgundy, the 54 mile slope located in mid-east of France, is undisputedly the Pinot Noir holy land of the world! It produces charming wines that are elegant, sophisticated, restrained, silky when it’s well aged, and engaging to the palate and food! “By making this wine vine (Pinot Noir) known to the public, I have rendered my country as great a service as if I had enabled it to pay back the national debt.” _ Thomas Jefferson 68. Bourgogne Pinot Noir, Domaine Amiot Servelle, Côte-d'Or 2015 7.50 14.00 Domaine Amiot-Servelle which its main holdings, organically farmed, are in Chambolle Musigny and Clos . This one is from the plots in Chambolle Musigny, with deep ruby color, ripe, toasted aromas of cherry,blackcurrant and violets. On the palate it’s intense and rich with pleasant dark berry fruit & earth flavors, and silky tannins. OVER, PLEASE, WINES BY THE GLASS CONTINUED… 4

RED WINES BY THE GLASS – PINOT NOIR – BURGUNDY CONTINUED… TASTE GLASS 3oz 6oz 69. Bourgogne Rouge “Oka”, Domaine Arlaud, Côte-d'Or 2016 8.00 15.00 This top estate is based in Morey-Saint-Denis and makes Burgundies that are as clean, natural and traditional as you can get. The wines are done biodynamically with minimal intervention possible. Everything is handmade and the wines are not fined and filtered. This basic Bourgogne level red is sourced from averagely 40 years old vines; ½ from Morey St Denis, Chambolle-Musigny, Vougeot; ½ from Hautes Côtes de Nuits and Côtes de Nuits. It boasts bright ruby and berry color with a bit of a purple tinge; aromas of cherry, pomegranate, raspberry and earth. On the palate, it is energetic and a bit tart with berry, cranberry, cherry, plum and slight earth notes. 71. Dolcetto d’Alba, Oddero, 2017 6.00 11.00 The Oddero estate dates back to the end of the 18th Century and it owns a great collection of legendary sites as one of oldest Barolo producers. This charming and clean Dolcetto comes from two great sites that are higher in altitude and they bear 30-50 years old vines. It looks in dark ruby red with a purple tinge color and it smells fresh, with a bit fragrant and red fruit aroma. On the palate it is full bodied, silky and pure with intense and solid blackberry and cherry fruit flavors. 72. Prats & Symington “Post Scriptum de Chryseia” Red, Douro Valley, Portugal 2015 5.50 10.00 Touriga Nacional, Touriga Franca, Tinta Barroca, Tinta Roriz. “Deep garnet centre with vivid velvet-red rim. Aromas of plums and attractive resinous notes. Lush and mouth-filling with satisfying pure and compact black fruits, displaying undertones of mineral and spice, underscored by fine acidity”. _ Revista de Vinhos 74. Cabernet Franc, Bourgueil “La Coudraye”, Yannick Amirault, Loire 2017 6.50 12.00 One of the most remarkable meals I have ever had was in the train station, a lunch, with a fresh and juicy Franc from this village paired with a simple and baked salmon dish. It was the end of the world! “Ripe, fleshy and driven, with a delicious core of crushed plum, cassis and blackberry fruit lined with dark tobacco leaf, singed chestnut, violet, olive and rosemary. The long finish features a deeply embedded chalky spine, giving this definition while remaining supple”. _ Wine Spectator 76. ”, Altos Ias Hormigas, Uco Valley, Mendoza, 2016 5.75 10.50 “The juicy and unoaked…Malbec Clásico represents the variety in the Mendoza province, with bright red fruit, approachable and easy to understand through sourcing grapes from different zones, but looking for cooler soils rich in sand and with some clay and lime. 2015 represents a big change for this bottling, which has a higher percentage of grapes from the Valle de Uco. The destemmed grapes fermented with indigenous yeasts in stainless steel and the wine was kept in concrete vats for one year before bottling. The fruit is ripe, fruit-driven, with a juicy palate, with fine tannins and subdued minerality. The wine is subtle and balanced, easy to drink...This has to be one of the best values in Mendoza…” _ Robert Parker's Wine Advocate 78. Château Castera - Cru Bourgeois, Médoc, Bordeaux 2010 7.50 14.00 Bordeaux red blend: 65 % Merlot, 25 % Cabernet Sauvignon, 5 % Cabernet Franc, 5 % Petit Verdot. “…has a well-defined bouquet with blackberry, raspberry, rose petals a just a faint touch of juniper berries. The palate is medium-bodied with sappy red fruit on the entry: redcurrant, raspberry & a touch of balsamic. It builds in the mouth towards the structured, dense finish that demonstrates fine persistency. Impressive…”. _ Robert Parker 79. Red Blend, Madroña "Quintet, Signature Colletion, Estate Grown”, El Dorado 2013 9.50 18.00 Our favorite winery from the Central Valley. 39% Cabernet, 23% Merlot, 20% Petit Verdot, 11% Malbec, 7% Franc. “The aromas are an earthy expression of the Bordeaux varieties with a dark brooding berry character leaning towards black currant and ripe blackberry. With hints of vanilla spice and an intriguing milk chocolate note, the nose just continues to develop. The entry on the palate, however, is focused with bold bing cherry fruit enveloping everything. The second sip showcases the complexity of Cabernet throughout the mid-palate with that dash of…, spice and currants”. _ From the Winery 82. Côtes du Rhône “Le Poutet”, Domaine Charvin, Rhône, France 2016 7.50 14.00 “The 2015 Côtes du Rhône is classic Charvin and offers lots of kirsch and blackberry fruits, garrigue, white pepper and sappy herbs in its medium-bodied, polished, elegant, yet tight and firm personality. Syrah, Crozes-Hermitage “Les Jalets”, Paul Jaboulet Aîné, Rhône, France 2015 8.00 15.00 “Deep bright-rimmed ruby. Ripe black & blue fruits, licorice & violet on the nose, lifted by a spicy peppery element. Chewy cassis & bitter cherry flavors open up slowly, becoming sweeter & picking up a hint of mocha. Rhône-Like Red Wines of the World - Petite Sirah (Durif) Durif is a variety of red wine grape primarily grown in California, Australia, France, and . It was cultivated in the early 20th century in areas like Isère and Ardèche in the region of Rhône-Alpes. The grape is named after François Durif, a botanist at the University of . It was in a vineyard near the university that he discovered the unique vine that he named for himself in 1880. As a conclusion of DNA fingerprinting at the University of California, Davis in 1997, Syrah was identified as the source of the pollen that originally crossed with Peloursin flowers.

GROWER FIZZ

Have you ever seen a Champagne label baring the name of a village where the juice is from and then the status name such as “Grand Cru” or “Premier Cru”? Probably rarely, for blending (juice from different areas) has been the way in the past and village names would not be allowed to be mentioned. Big and famous houses have, and still continue to practice the “art” of blending for volume and consistency. They buy juice from growers who have great vineyard holdings in different areas. Now growers are selling wines under their own label. They possess the best juice & value but not the financial power. A good grower’s fizz contains entirely or almost all Grand Cru or Premier Cru juice, even in its N.V. bottling. Yet they are priced at the level of a regular cuvée, not the $200 luxury cuvée of a house. And even such a luxury cuvee sometimes may not even carry 100% Grand Cru juice in it. Then, will “blending” still be the future, or will grower champagne have it its way? You will be the judge, eventually!
