Field Recordings FIELD RECORDINGS THE STORY Field Recordings is winemaker Andrew Jones’ personal catalog of the people and places he values most. Spending his days as a vine nurseryman, planning and planting vineyards for farmers all over California, Andrew is sometimes offered small lots of their best fruit on the side. Having stood in just about every vineyard on the Central Coast, he has a keen eye for diamonds in the rough: sites that are unknown or under-appreciated but hold enormous untapped potential. I had nothing but a crazy dog, a tiny camper and a few changes of clothes, and I couldn’t have been more delighted. I came following a light I’ve chased my whole life but never thought I’d see so close. I’ve chased that light across North and South America, always grasping, nearly catching hold and watching it dart past. I don’t know what it is, I hope I never do, I would hate to get old and boring, but I am certain that it’s something in wine and I just have to get a closer look. In my wild chase, I’ve been everything I could for wine: importer, broker, retailer, cellar rat, harvester, vintner. California's coastal regions are cool enough for this grape variety. In 2003, I packed my bags and moved to Austria to try to get a better grip on the growing and making of Riesling. I was able to find work with Weingut Knoll who, more importantly, have become a second family to me. What initially was planned to be a ten-week trip; turned into a year and two additional harvests. In 2008 I founded Tatomer with two Riesling vineyards. The goal has always been to make Cabernet that over delivers for the price point from choice vineyards mostly from the Happy Canyon AVA. THE WINES Ground Effect 2017 Santa Ynez Valley CABERNET SAUVIGNON UNION SACRE THE STORY Union Sacre exists at the meeting of worlds. Made by two long time friends, Xavier Arnaudin and Philip Muzzy, who arrived at the Central Coast from opposite ends of the Earth. Xavier is a WSET certified, oenology degree holding ex-boxer from France, Philip is a self-taught designer from Michigan who kind of misses living in a van. Between the two of them, Xavier and Philip have 25+ years of experience working in Central Coast wineries. The wines of Union Sacre are focused on elegant expressions of single vineyard and some times single varietal wines that are table friendly and drink well above their price point. The idea that one cannot improve on Mother Nature’s gift, they can merely guide it towards what is a pure expression of place, vintage, and terroir; and less an expression of one’s personal desires.     2019 Signature Chenin Blanc Napa Valley Winemaker Phillip Corallo-Titus The Wine Our Chenin Blanc has a long and storied history on Pritchard Hill®. The original vines were already producing when Donn and Molly purchased the property in the late 1960s. Following a replanting in 2004, we reintroduced our Chenin Blanc as a “Signature” designation – with a twist. While our Signature Cabernet bear Donn Chappellet’s name, Molly Chappellet’s signature graces our Chenin Blanc label. To add depth and complexity, the 2019 Chenin Blanc was fermented in a combination of neutral French oak barrels and stainless steel tanks. Growing Season & Harvest The 2019 growing season began with cool, rainy weather throughout winter and spring, which delayed budbreak slightly and resulted in a robust crop and vigorous canopies. To create the desired vine balance, we thinned leaves and clusters extensively, doing as many as three fruit-dropping passes depending on the needs of each vine. The weather remained temperate throughout summer, followed by perfectly timed warm weather in October. As a result, early ripening grapes like Chenin Blanc and Chardonnay yielded wines with dazzling aromatics, lovely energy and pure, fresh flavors, while our later-ripening varieties provided gorgeous color and concentration, with supple tannins and rich, soaring flavors. Tasting Notes This sophisticated expression of mountain-grown Chenin Blanc offers enticing aromas of citrus blossom, orange zest, subtle tropical fruit, fresh-cut hay and delicate minerality. On the palate it is pure and focused, with lively energy and vibrant flavors of Meyer Lemon and guava that resonate on the bright, fresh Wine Statistics finish.

    Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

With the aim to contribute to that debate, a study of the influence of the varieties Tannat, Merlot and Cabernet Sauvignon on berry weight, on berry components (flesh, seeds and skin) and on the varieties’ oenological potential under different water supply conditions was carried out in Uruguay between 2001 and 2004. Replicated samples of 250 berries per vineyard were gathered at technological maturity at harvest. Berry weight and volume, weight ratio among each of the components and anthocyanin potential (ApH1 ) were measured and a basic analysis of the must was carried out. The vine water status was established through the measurement of pre-dawn leaf water potential. The tests showed that berry weight and sugar content were positively correlated and depended on variety, as was evident from the proportions of the berry components. Flesh weight was the most important determinant of berry weight, and flesh weight changed with the weight of the seeds. Larger values of these two components explained the heavier berries of the Tannat variety.
