THE STORY ”I arrived at a vineyard in Paso Robles on something of a lark after fleeing Toronto’s hustle and sleet. I had nothing but a crazy dog, a tiny camper and a few changes of clothes, and I couldn’t have been more delighted. I came following a light I’ve chased my whole life but never thought I’d see so close. I’ve chased that light across North and , always grasping, nearly catching hold and watching it dart past. I don’t know what it is, I hope I never do, I would hate to get old and boring, but I am certain that it’s something in wine and I just have to get a closer look. In my wild chase, I’ve been everything I could for wine: importer, broker, retailer, cellar rat, harvester, vintner. The moment I set foot in that Paso vineyard, I knew I was closer than I had ever been, I just had to stay and explore.” - Vailia From, winemaker

THE STORY “No other conveys its region's character and flavor with the power, focus, and beauty the way Riesling does. California's coastal regions are cool enough for this grape variety. In 2003, I packed my bags and moved to Austria to try to get a better grip on the growing and making of Riesling. I was able to find work with Weingut Knoll who, more importantly, have become a second family to me. What initially was planned to be a ten-week trip; turned into a year and two additional harvests. In 2008 I founded Tatomer with two Riesling vineyards. My intention was to use my knowledge to make bone-dry Riesling in California unlike many of the off-dry examples in the marketplace today.” -Graham Tatomer , winemaker

THE STORY Clos Cazals may be one of Champagne’s best-kept secrets. Clos Cazals began in the mid-1990s when Delphine Cazals, the no-nonsense daughter of Claude Cazals, convinced her father to let her produce a new wine from the Chardonnay fruit grown on more than 60-year-old vines in their family’s walled vineyard. Having tasted the incredible still wines made from the grapes, Delphine believed they’d make equally incredible Champagne. Ignoring her father’s skepticism, she pushed forward and with the 1997 vintage gave the world a new cuvée: Clos Cazals.

The family’s vines are located in the Grand Cru village of Le Mesnil-sur-Oger, in the Côte des Blancs just south of Épernay. Here, a higher-than-normal chalk concentration can make the soil almost blindingly white. A prized substrata of Kimmeridgian soils are at their strongest concentration between the neighboring towns of Le Mesnil-sur-Oger and Avize, and the Blanc de Blancs produced here are among the world’s top sparkling wines.

Delphine prunes the vineyard rigorously and uses only best fruit grown on her oldest vines. This is super-serious juice made from Grand Cru fruit grown in one of the best Chardonnay regions on the planet. Clos Cazals is just a five-minute walk from the famous Clos du Mesnil. Like her well-known neighbors, Delphine is making world- class wine — but she’s selling them for us to enjoy at a fraction of the price.

Braucol 2017 Gaillac BRAUCOL CLOS SIGUIER

THE STORY Gilles Bley knows the history of Cahors and can trace his wine-growing roots in the AOC back many generations. His intimate understanding of the Malbec (Côt) and Tannat vines on his 15-hectare estate led to a desire to create wine that highlights this storied region’s unheard potential for delicacy. Cahors is divided into two distinct — this appellation is traditionally known for it’s heavy and brooding black wines that take years to reveal any fruit. These dark tannic wines come from the heavy soil down by the Lot River. Gilles Bley’s vines, by contrast, are on the lesser- known, better-drained terroir, up on the flat terraces above. His wines express the lighter and brighter side of Cahors. He produces wines that are surprisingly bright and fruit-driven with depth of red and black fruit, subtle terroir and silken . Clos Siguier produces wines that are at once readily accessible, but also age-worthy.

THE WINES

Clos Siguier 2015 Cahors CÔT / TANNAT

Les Camilles 2014 Cahors CÔT DOM. ROMANEAUX-DESTEZET

THE STORY Hervé Souhaut created Domaine Romaneaux-Destezet in 1993. Hervé works 5- hectares of old and ancient vines—between 50 to 100 years old. He is very fortunate to own two vineyards in the Rhône Valley just opposite the storied hills of Hermitage in Saint Joseph. This region is widely recognized as being one of the finest areas for wine production on the planet; thanks in part to its elevation, ancient vineyard sites and the southeastern and southern exposures. Hervé works entirely on whole grape bunches and semi-. His philosophy is to extract a delicate balance of tannins from the grapes, to make a wine with subtlety and finesse. This stands in contrast to many of the storied wines of the Northern Rhone that are made with much more extraction of . Hervé prefers to make a wine that is drinkable right away with a fantastic level of purity and acidity.

THE WINES

THE STORY Maria and Sepp Muster took over his parent’s 10-hectare winery in Styria in 2000 and began to work the vines biodynamically. They had an easy transition, as no herbicides or pesticides had ever been used there before. Rocky clay and silt soils dominate the steep hills of their vineyards. This clay silt is known locally as “Opok” after which two of their wines are named. The Graf wines also feature the opok soil but have steeper south facing slopes that reduce yields and produce wines of more structure and pronounced mineral character.

THE STORY Gut Oggau is a project in the small town of Oggau in Burgenland, Austria, started by Eduard and Stephanie Tscheppe in 2007. They painstakingly restored a 17th century winery that had been abandoned for 20 years, including its 200-year-old screw press. The 20-year period of neglect was fortunate, as all pesticide and chemical treatments in the soil were washed away. They immediately began working the vines biodynamically and are now fully Demeter certified. In the cellar, Eduard and Stephanie noticed that each wine seemed so alive with its own personality that they decided to craft labels centered around the personality inside each bottle. Thus they created a family of wines: each one given a name and an incredible backstory to match the wine in the bottle. The artist Jung von Matt draws a face for each label, new each year showing how the family member is aging.
